Today I said goodbye to the chefs and my team members at the Venetian and Palazzo after 5 years. I came in July of 2015 as a cook 3 wanting to learn the mass production side of the culinary industry. I came in wide eyed and willing to learn for the largest banquet operation in the nation. Boy did I learn a lot. After a two years I moved into the position of saucier, where I made all of the sauces for the entire banquet department. This position gave me my first taste of managing myself. I was then offered to join the culinary training program to work to become a chef. 1 month into the program a position became available and I became a chef. I worked in the Garde Manger Department for the years. I worked with a great group of people that did some amazing things! I learned so much and had the opportunity to create new items for the menus. I got to experiment and learn how to lead a group of people. I created some great items that I am super proud to call my own. The past 5 years have been an amazing experience. I’ve grown so much. Everything I have learned has prepared me for my new role. I will describe it in my next post. I have to say one of my favourite moments from this season of @foodnetworkca #TopChefCanada was restaurant wars. We were able to create cohesion through food whilst displaying our own personal culinary identity, culture and heritage. In hospitality women (especially of colour) and black & indigenous males are constantly marginalized and this particular moment always serves me as a constant reminder to what allyship should look like in our industry. Everyone had a voice in the decision making, there were no egos, biases or preconceived notions of what “Canadian food” should look like. FOOD MEMORY - Being in Sweden with my wife Emma, Tom and Beth Kerridge, at what used to be Frantzen Lindeberg. I remember sitting down and seeing bread proving in the middle of the table; then it was taken away during the meal and cooked in a wood-fired oven and brought back with three different butters. Tom and I couldn’t get enough of it, but it was a 24-course menu and by the time it got to course 20 we were just stuffed on bread! It blew me away . COCKTAIL - Tom Collins - but I like it with lime rather than lemon. At CiCi’s Bar we make it with lime, soda, gin, and a little bit of sugar syrup - delicious . WORLD CUISINE - We go to Greece most years and I love Greek cooking, especially the taramasalata and lamb kleftico. Greek cuisine is Greek cuisine so colourful and fresh . We were thrilled to work with the team from SAHMRI last week to help host their ‘The Cook and Chief’ event, streamed live from our Main Kitchen. Focused on The Maggie Beer Foundation’s mission to educate people on nutrition for the aged, this special event saw renowned SA chef @maggie_beer (The Cook) and South Australia’s Chief Scientist, Professor Caroline McMillen (The Chief) team up to lead a ‘virtual’ cooking demonstration on how to prepare soft polenta with mushrooms. O Top Chef Brasil continua, mas para mim foi a última vez naquela cozinha. Um sentimento estranho porque a vontade era ficar até o final 🙃 Como disse, saí feliz pela trajetória, por ter sido eu mesmo o tempo todo. Conseguir aprender e trocar experiências com ética e alegria, apesar das dificuldades do confinamento, foi a maior vitória. Nesse último (meu) episódio, encaramos uma prova difícil e inédita que, apesar de ter perdido, adorei fazer. Mandioquinha é algo bem brasileiro e não faz parte das minhas raízes, um desafio a mais além da comunicação à distância. Na prova final, me senti muito bem comigo. Estava confiante porque fiz receitas de família, adaptadas para que tivessem esse toque #topchefbrasil. Usei referências aprendidas no Brasil e apliquei um pouco da minha admiração pela culinária oriental. Entre tantos ingredientes, o missô não brilhou, algo que faz parte do dia a dia da cozinha. Mas no programa não há segunda chance para ajustar. As palavras dos jurados, que não cabiam no programa editado, me confortaram e mostraram que o caminho que escolhi, quando deixei a Química (após o doutorado) para seguir entre as panelas, é mesmo sem volta. Feeling extremely grateful as I reflect on the last couple of days. As I said last night, I am so lucky to apart of the community @dementedfermenter and @whitneykate_ have created at @tmchugos . I really cannot thank them enough. Going though @appetiteforexcellence has shown me this sense of community can go beyond my work place and hometown. Entering a competition of this sort was outside my comfort zone and so different to everyday kitchen life. But the nervousness surrounding it was definitely outweighed by the huge amount I learnt, fun times and amazing new mates. En el Momento @aysaborati Gabriel Oggero nos anticipó cómo será #ConexiónMasticar la Feria gastronómica más importante de la Argentina que, por primera, vez no será presencial sino virtual. El cocinero, dueño de @crizia_restaurant -un abanderado de los productos frescos y de estación- es uno de los encargados del Mercado de Productos, que reunirá a más de doscientos productores de nuestro país: El sábado 3 y el domingo 4, la Feria propone conectarse a través de las redes. En el Mercado van a estar en contacto con todos los productores, porque lo que hicimos fue juntarlos y armamos cajas colectivas para que puedan comprarlas de a tres personas, con un familiar o con amigos y repartirla, así se hace más fácil la logística del productor, ya que los productores vienen de todas partes del país, y hay que tener en cuenta que una gran mayoría son artesanos y se fueron agrupando para armar las cajas. Además, en @mesadeestacion -una acción que hacemos con ACELGA hace muchos años- van a participar más de cien restaurantes de toda la Argentina. Y también vamos a tener en nuestro canal de YouTube y de Instagram charlas en vivo, clases de cocina y vamos a contar recetas, vamos a hablar de productos, entre otras cosas. #ConexionMasticar es un trabajo que hacemos sin fines de lucro, la feria es abierta y es digital. Y estamos con mucha expectativa de seguir conectados, ya que en esta Pandemia una de las cosas que más hicimos todos en casa fue cocinar. Veo la cocina como mecanismo de contribución en la consolidación de nuestra identidad; por lo que en mi caso, documentar técnicas, generar bases, definir denominaciones de origen o relacionarme con colegas para establecer movimientos, siempre será un viaje tras esa búsqueda. Todo cocinero es responsable de la salud de quienes alimenta. Ello me ha llevado a hacer una cocina que como mínimo no haga daño. Creo que cocina y ecología son una misma cosa, lo que me ha llevado a priorizar la sustentabilidad. Por eso ataco a los monocultivos, a los transgénicos y jamás compraré un animal prohibido por la ley. En cocina el robo se llama engañar, por eso no creo en la cocina mentirosa. Róbalo es róbalo, lo compré hoy y está fresquito es santa palabra y carpaccio de pulpa negra no es de lomito. No creo en una cocina que produzca hambre. Creo que la cocina debe ser uno de los vehículos para lograr una vida digna a los agricultores atrapados por los embudos de las cadenas de comercialización. Creo en un reparto justo de las ganancias asociadas a la restauración sin empobrecer el entorno. Botar comida es una afrenta. During this time of an unprecedented global health emergency and the subsequent business uncertainty, our Italian clients have made the decision to put the safety and wellness of their staff and guests above any other concerns. As an international agency, we cannot express enough our pride in representing them and we will continue to work throughout this period to ensure our full support. In the initial weeks of the COVID 19 contagion, Giuliano Baldessari from 1* Michelin Aqua Crua in Vicenza was the first chef in the country to offer his guests a “Comfort the Souls” - a bespoke 4 course menu for €30 that could be collected from the restaurant and enjoyed at home. Aqua Crua has since closed and will reopen in April. Lux Lucis in the Hotel Principe Forte dei Marmi in Tuscany, home to the Michelin starred cuisine of Valentino Cassanelli, has postponed its seasonal reopening from March until May this year. Anthony Genovese and the team of 2* Michelin Il Pagliaccio in Rome have also joined the movement for a stronger and safer future, by closing the restaurant until the 4th April. And a ‘see you soon’ has been sent from Sicily from Ciccio Sultano, as he closes I Banchi and 2*Michelin Duomo in Ragusa until the 6th April. Can’t believe it’s been a week already since that incredible day at @belmondlemanoir all in aid of the inspiring @the100schoolsproject founded by the Wissenbach family in memory of their son, Oli. One lunch, 7 Michelin starred chefs, to fund the build of 7 schools in poverty stricken nations. Not only did it do that, it’s raised enough money to build 13. So blown away by the whole experience. The family’s drive to create a lasting memory for their son and use it to impact the futures of so many.. to meet and work so closely with so many amazingly passionate chefs creating such beautiful food! Thanks @paulainsw6rth for taking me with you, so lucky, and @johnwalton and @mousehollis for making it all happen, @benoitblinmca and your amazing pastry team for all the support and space.. Sala+Cucina+Ricerca e sviluppo= Madonnina del Pescatore ❤️ LA MATURITÀ DI UN ETERNO RAGAZZO, A SENIGALLIA È quasi impossibile credere che Moreno Cedroni e Mariella Organi abbiano festeggiato il compleanno della Madonnina del Pescatore soffiando, assieme sin dall’inizio di questa straordinaria avventura, ben 36 candeline. Impossibile perché vedendo l’energia, la vitalità, la freschezza con cui entrambi conducono questo splendido luogo non si può credere che la loro storia sia cosi lunga. Ebbene, sì, il trucco nella vita è proprio questo e loro ce lo insegnano, mettendo sempre una straordinaria passione in ciò che fanno tutti i giorni coadiuvati da un sous chef, Luca Abbadir, che ha sposato in pieno la filosofia della casa e si è integrato splendidamente. Però, c’è un però. Spesso parliamo della incredibile cucina di Moreno e Luca, Luca e Moreno, che anche quest’anno ha superato se stessa. Ma ci dimentichiamo di raccontare quanto la sala di questo magico luogo, condotta amabilmente dalla sua padrona di casa, sia in un crescendo continuo. Attenzioni discrete, passo svelto ma mai evidente, una macchina perfetta che gira come un orologio svizzero. E che soprattutto vi inonderà di calore e attenzioni, sempre discrete. Ci si sente a casa alla Madonnina, una casa elegante, sobria, d’altri tempi. Un caldo tepore che allieta l’anima. Ma anche la cucina, dicevamo, non si è affatto fermata anzi ha continuato la sua progressione e il suo miglioramento continuo sebbene con la storia e il blasone che questo ristorante ha alle spalle, forse, non ce ne sarebbe nemmeno stato bisogno. Eppure è così, crescita continua, mai fermi sulle posizioni. Tant’è che quest’anno a fianco di qualche nuova entrata, derivata direttamente dallo studio portato avanti nel tunnel – il laboratorio di ricerca della Madonnina – sono comparsi molti piatti storici abilmente rivisitati e attualizzati. As inscrições e os processos de seleção com etapas criteriosas, como entrevista, análise de currículo, provas e dinâmicas para avaliar as características procuradas pela empresa, como oratória, capacidade de liderança e engajamento, experiência profissional, fazem parte do processo de captação de profissionais com potencial desenvolvimento procurado pela empresa... Quando fui convidada para a montagem do curso online de CULINÁRIA FIT, passei por todo o processo de seleção, e o diferencial de propor receitas caseiras, práticas e saborosas nos meus protocolos nutricionais, foi o primeiro destaque. Claro que eu levei para a equipe de seleção uma dessas receitas e acho que conquistei pelo paladar! Rs 🤭 Mas não foi só isso... Quando aceitei o convite eu pensei: “Agora é a minha oportunidade de compartilhar todo o sabor que eu sinto ao fazer uma receita “fit de verdade” com um alcance numeroso de pessoas que realmente se preocupam com a alimentação, e querem seguir um estilo de vida com o prazer de escolher e preparar os alimentos sem o “peso” ou a “obrigação” de estar em dieta”... Sim, esta era uma missão, uma realização pessoal como Nutricionista que eu sempre tive, e agora posso ver concretizando! 🙏🏻 Minha intenção sempre foi promover a reeducação alimentar através do preparo caseiro, mas pensando na praticidade e rotina de cada um... e fazer esse curso me proporcionou essa missão como NUTRICIONISTA que vai muito além dos protocolos nutricionais do consultório!
