Ny faglig leder og nytt styre i Akademiet. Bocusekokkene i Årets kokk Akademiet, valgte i går Tom Victor Gausdal som ny faglig leder etter Gunnar Hvarnes. Å være faglig leder betyr å kvalitetssikre det faglige i konkurransearbeidet, fra invitasjoner til deltakelse, utvelgelse, definisjon av konkurranseregler, godt innhold i kandidat- og teamutviklingsarbeidet og selvsagt overse og sikre solid gjennomføring av konkurransene Årets kokk og Årets unge kokk. Gunnar Hvarnes har hatt dette vervet siden 2015, og gjort en formidabel innsats i forbindelse med Årets kokk 2015, 2017 og 2019, samt i det generelle utviklingsarbeidet i stiftelsen de siste årene. – Det har vært en sann glede å jobbe med Gunnar i aktivitetene som har tatt oss hit vi står i dag. Han har også selv vært pådriver for rullering av verv i foreningen, og det er derfor ekstra kjekt at Tom Victor i dag har akseptert å ta opp stafettpinnen og føre arbeidet videre. Jetzt steht die kalte Jahreszeit vor der Tür und damit auch neue Herausforderungen. Wir überlegen gerade wie wir die „Outdoor“ Saison für Euch möglichst angenehm verlängern können. Decken, Windschutz, Infrarotstrahler… Wir werden auf jeden Fall viele Tische draußen behalten. Im Innenraum sind wir mit unserer „Quelllüftung“ im Erdgeschoss besonders gut aufgestellt. „Quelllüftung“ bedeutet, das Frischluft aus unserem Innenhof bodennah ausströmt und an der Decke abgesaugt wird. Dabei wird die Raumluft nicht wie bei herkömmlichen Anlagen verwirbelt und durchmischt, sondern direkt ausgetauscht. Was die Chance von Aerosolen in der Luft erheblich verringert. Mit den großen Abständen zwischen den Tischen, unserer besonders guten Lüftung sowie dem strengen Hygienekonzept können wir Euch einen sicheren und entspannten Aufenthalt auch in den Innenräumen bieten.. We are very excited to announce that Chris Johnson, former Chef at Lazy Bear, has joined our team at Water2Table. Chris will serve as Director of Culinary Operations, a newly created position for our company as we incorporate Direct to Consumer with our Wholesale Operations. This position will be very unique for a Wholesale Fish Receiving operation. As our operation changed during COVID, and we began selling more to home chefs, we found ourselves with an abundance of parts from the nose to the tail that werent being utilized. We are thrilled that we will be focusing on whole fish utilization and creating products from head to tail. Chris will be receiving fish at our dock in SF and doing a small selection of prepared food items daily that will be at the top of our product list. These items will be fully or partially prepared and can be finished off in the home in a short period of time. In these challenging times as we incorporate home delivery into our wholesale program, we are thrilled to be able to have a Chef on board that can forge the connection between our fishermen and the home chef. Chris and his small team will be the only ones who touch your local fish from the boat to your home. Please take a look at the list for Saturday. We will have a few items prepared by Chris for you to enjoy over the long weekend. If you dont see them they have probably already sold out. In the coming weeks the list will grow with the addition of smoked items, pates, conservas, sauces, marinades and many more items. The man in this picture made sure I had kosher food for my dad while we were traveling through Germany and Poland this past September. He was the chabad rabbi in Hanover. It was pre-new year, when the rams horn is blown every day and every chabad rabbi asks every Jew any day of the year if he put on tfillin that day and if not they gently insist. As soon as we landed in Hanover, I dropped my brother and dad at the hotel and went to meet him to pick up some dinners and sandwiches. I had spent several weeks emailing with his wife to make sure I got everything we needed. We had a delicious dinner that night, in the hotel dining room, graciously heated up by the hotel staff. It was all cooked by the Russian immigrant chef at the chabad house who seemed so happy to be helping us. I also ordered 12 bagel sandwiches, 4 tuna, 4 egg salad and 4 cheese and tomato, and my father, my brother and I ate those bagels after Bergen Belsen, after Trobitz, and after Auschwitz. Rabbi Benny died yesterday, taken by the virus, leaving behind his wife and 8 children. His wife took this photo of us, at his request. BDE. - @chefyankel on Instagram

We were thrilled to work with the team from SAHMRI last week to help host their ‘The Cook and Chief’ event, streamed live from our Main Kitchen. Focused on The Maggie Beer Foundation’s mission to educate people on nutrition for the aged, this special event saw renowned SA chef @maggie_beer (The Cook) and South Australia’s Chief Scientist, Professor Caroline McMillen (The Chief) team up to lead a ‘virtual’ cooking demonstration on how to prepare soft polenta with mushrooms. Our own Executive Chef Gavin Robertson and Chef de Partie Nicholas Finn were on hand to assist and act as the official taste testers! Today I said goodbye to the chefs and my team members at the Venetian and Palazzo after 5 years. I came in July of 2015 as a cook 3 wanting to learn the mass production side of the culinary industry. I came in wide eyed and willing to learn for the largest banquet operation in the nation. Boy did I learn a lot. After a two years I moved into the position of saucier, where I made all of the sauces for the entire banquet department. This position gave me my first taste of managing myself. I was then offered to join the culinary training program to work to become a chef. 1 month into the program a position became available and I became a chef. I worked in the Garde Manger Department for the years. I worked with a great group of people that did some amazing things! I learned so much and had the opportunity to create new items for the menus. I got to experiment and learn how to lead a group of people. I created some great items that I am super proud to call my own. The past 5 years have been an amazing experience. I’ve grown so much. Everything I have learned has prepared me for my new role. I will describe it in my next post. Many years ago, I had the honor of cooking with @ckostow and his team at @therestaurantmw for the 12 days of Xmas event they held annually. Despite our crude offerings, Chris and his team made us feel welcome and helped transform Northern Thai country cooking into an experience worthy of the venue. That venue is now in ashes but my memory and appreciation for that amazing hospitality feels very immediate and clear. My heart goes out and I hope for a Phoenix like rise from the ashes. The last year and a half has been one of the best learning experiences of my life. I learned, grew up and moved closer to my goals.
