Last week I was forced to make a pan pizza because the dough was too hydrated and fragile to slide from a peel. However, I really enjoyed it. And so surprised by the overall flavor, structure, and appearance, I purposely decided to do it this week. For the dough, I made the @pizzacamp recipe, but I added an 18hr poolish. I also used 45g more water than the recipe called for. Then let the dough bulk ferment for 2 days. On the day of baking, I removed the dough, floured up the counter, and folded it into one big ball. Then I separated it into two dough balls. I covered them and let them sit for 8hours. After that, I floured up the counter and stretched the ball into a 14inch pie to fit into my 14x1.5in @lloydpans I have. I oiled up the pan and placed the dough inside. I ladled the @pizzacamp sauce on top. Spread whole milk mozz, sprinkled sea salt, pepper, and drizzled evoo. With the oven at 500, and a baking steel inside, I placed the pan and cooked for 8min. Then I rotated it, cooking for 5 more min and finally broiled for 2 min to get the nice charred crust top. I removed it from the oven. Grated locatelli. Drizzled evoo and some garlic oil. Overall, I was really happy with this one. Not buttering the pan made for a less greasy bite, and better structure. It was interesting to skip the pan rise step and treat this as a pizza youd normally slide from peel, but instead cook in a pan. I was also surprised by how well the crust cooked and light tasting the dough turned out. Next I want to try this no rise process, but with a sicilian to see the results. 🤔👍🍕 - @homemade_pizza_adventure on Instagram

Vegan & Cruelty Free Pizza. #NoDairy #NoMeat 😍😍 . Ingredients: 375g strong bread flour 7g instant yeast 2 tbsp brown sugar 1 tsp sea salt 2 tbsp olive oil 150ml room temperature water 100ml boiling water . Toppings: 2-3 tbsp peri peri sauce 1 portobello mushroom 6-8 marinated artichoke hearts 8-10 green olives 2 yellow tomatoes Salt and pepper (to taste) Grated vegan cheese (optional) . Method: 1. Place yeast, flour, sugar, salt and oil into a mixing bowl in that order. Mix room temperature and boiling water together. Pour the water over the dry ingredients, then use your hands to combine the dry and the wet as quickly and efficiently as you can. Knead for a couple of minutes, thencover the bowl with a damp tea towel and set it aside for about 30 minutes. The dough should become active and increase in size. 2. After half an hour, uncover the bowl and knock the dough down a few times with your fists. Recover the bowl and leave it to rise for about 30 minutes. 3. In the meantime, get the toppings ready - slice tomatoes into half circles, thinly slice the portobello mushroom and cut artichoke hearts into chunks. 4. Preheat the oven. 5. Once the dough is ready, dust a clean kitchen surface with flour and transfer the dough onto the surface. Set approximate a quarter aside, and shape the rest into a large fish (an oval and a tail). 6. Smear the peri peri sauce across the oval part of the “fish”. Top it with mushroom slices and artichokes. 7. Roll out the remaining dough and cut it into strips. Stretch the strips across the width of the “fish”. Take the middle of each strip and twist it once to form a loop. Thread each loop through the previous one. Pop the olives into every loop and roll up the ends of the strips that are sticking out. 8. Crack some salt and pepper on top. 9. Cook in the middle of the oven for 25 minutes.
