Cinnamon Raisin Bagels by @klaraslife 🧡 Ingredients: 500 g wheat flour 1 packet of dry yeast (7 g) pinch of salt 1 tbsp of sugar 1 tbsp soft vegan butter 300 ml lukewarm oat milk or other mylk of your choice 100 g raisins 1 tbsp cinnamon METHOD First put the flour, yeast, salt and sugar in a mixing bowl and mix. Then add the milk and the butter and knead with the dough hook, a good 10 minutes on a medium level. Then knead the raisins under the dough. Sprinkle cinnamon on the dough and work it roughly into the dough. It should not be uniform, streaks are desired. That gives a nice look. The dough is perfect if it sticks only lightly. So let the dough covered for at least 1 hour. Briefly knead the dough and then form into 8 equal sized balls. Use a cooking spoon to prick a hole in the center of the dough pieces and gently shape into a ring with circular motions. Enlarge the hole with your fingers. If it is too small, that’s when baking. Preheat the oven to 220 °C/428F. Bring the water to a boil and insert 2 Bagels each after about 30 seconds turn and then take out. Place on a wire rack and drain. Put the Bagels on a baking sheet add oat milk on the top and sprinkle with a little sugar. Bake in the oven for 20 minutes until golden brown. Remove and allow to cool. I just spent two of the most soul-stirring and refreshing weeks of my life—focusing on writing with plenty of quiet time, reading, and journaling thrown in. For the first week, I was at a cabin on a goat farm and oh my goodness, I loved every second! The cabin was modern and beautiful, the rural scenery was gorgeous, and the goats were adorbs! Plus I didn’t have any wi-fi and cell service was super spotty...and that alone was worth the money I paid. It was just all things peaceful and perfect and I’m still feeling the effects! It’s strange for us to think about how we won’t be packing up and heading just down the road to Clearwater, MB for our annual weekend of camping, music, selling at the farmers market, and reuniting with friends. The Harvest Moon Festival is looking different this year, with a smaller event based in Winnipeg at @thebeercanwpg on Sept 19. We won’t be able to attend, but we will be delivering food to Wpg this Thursday and look forward to seeing some Mooner buddies, then. (deadline to order is today- Tuesday) . Those of us who want to enjoy the entertainment remotely can still tune in via free livestream - See @harvestmoonfestival2020 for more details. Some of the major fallout from this change will be the economic impact on the Town of Clearwater, and the Harvest Moon Society itself. If you are in a position to donate, towards the Festival and/or the Society, then some of these $$ will also help the small community with big hearts that normally host this incredible thing. . This Festival is special to us as it’s where Troy and I first met and have celebrated the end(ish) of a busy farming season each year. 🏠Have you seen our Loft Apartment? One of my favorite parts of the appetizer hour at the @ediblenash Creek Dinner was giving tours of the upstairs loft apartment to guests. Many had no idea we had a rental space for vacations or that we were an Air BnB Super Host. Honestly, the space is amazing. Lori and Jim custom designed every detail—from the farmhouse sink to the secret door coffee closet—every inch was lovingly planned. Plus the views are 💯. I mean STUNNING. The balcony overlooks the prayer garden and new fountain. The window nook overlooks the flower garden and pastures. Everything is just GORGEOUS and so serene. One of the great things about living in Russia today, as opposed to my student days many moons ago, is the foodie movement. And one of the highs of being a reporter here means I get to taste it. After spending the day sampling locally-produced cheeses, samogon (moonshine) made with birch leaf fungus, plates of barbecued pork, mushroom pies and mounds of green garlic, locals took a dip in the nearby pond, near the Golden Ring town of Pereslavl-Zalessky. An amazing family business we work with who helps farmers get their fruit to market (like JIMBO’s!). The family showed us incredible hospitality and local ranch workers (& brothers!), Rusty & Tobin gave us the run down on the beautiful, sustainable and 100% organic Orchard.
