INGREDIENTS ½ onion 1 Tbsp extra virgin olive oil ½ cup frozen mixed vegetables freshly ground black pepper 1½ cups cooked Rice 1 tbsp Soy Sauce 1 Tbsp ketchup Salt for taste For omelette: 2 tbsp Milk 2 large egg 1 Cube butter Directions : * Sauté onion , veggies , grounded pepper for 5 mins * Now add tomato sauce and soy sauce salt and sauté for 2 mins * Now add the cooked rice and sauté for 1 min * Keep aside and now whisk the egg and milk together until u get frothy texture * Grease the pan with butter and pour the egg mixture and cover it for 2 mins * Once its half cooked add the rice mixture and fold the egg and cover it for a minute. This was a special meal tonight. ❤️ It was based around SELF LOVE. I’ve been working through some stuff over the past few months do to with belonging. Where do I belong? When do I come from? Do I belong within my family? Was I always the odd one out? Did I belong within a group of friends? It’s a continuous journey... is this where my vitiligo stems from? 🤷🏾♀️ It’s been really wonderful to witness these thoughts and work through them! Exploring different options. Coincidentally it came up in my book club this past week too! We’re reading The Women Who Run With The Wolves and read the story of the Ugly Duckling. If you’re in a journey of inner peace, self development and growth then this is a fantastic book to help propel you through that. Be warned. It can be triggering as FUCK! So today I took a day off. A day off from life and figuring this shit out. I enjoyed a really wonderful lunch cooked by my magical husband @chris_soltara and then this evening made this meal. Binda nu dhaku in Gujarati is #Okra in a sauce/gravy. It was one of my favourite dishes growing up and I’ve not had in quite some time. The magic moment is that I made it vegan and it tasted just as wonderful! It’s traditionally made with yogurt. My mother told me she was proud. As was I. I feel fulfilled and accomplished. My inner child was jumping around inside as she ate this meal. Self love is a real thing. If you need help discovering the live within yourself. 🌺HEJ UND GUTEN MORGEN!🌺 Zwar kommt jetzt noch etwas Text aber du kannst jetzt schon mal **SPEICHERN** es lohnt sich! Oft werde ich gefragt, wofür man Seidentofu eigentlich verwenden kann. Dann nenne ich immer Rührtofu, Süßspeisen wie mousse au Chocolat und veganen Käsekuchen als erstes. Wie nehmen ihn tatsächlich fast immer nur für Rührtofu. Und das gab es letztes auch wieder. Und während ich das so zubereitet habe, habe ich mich gefragt, ob man nicht genauso gut ein Omelette daraus machen kann. Mir haben, ehrlich gesagt, die Rezepte für veganes Omelette nur aus Kichererbsenmehl nicht so zugesagt. GEDACHT - GETAN Am nächsten Tag gabs Omelette und glücklicherweise habe ich das Rezept aufgeschrieben, damit ihr es nachmachen könnt. ❤️ ZUTATEN für 6-8 Stück: 400 g Seidentofu 70 g Kichererbsenmehl 50 g Buchweizenmehl 2 TL Backpulver 1 Knoblauchzehenl 1 TL Kurkuma 1/2 TL Kala Namak 70 - 80 ml Eiskaltes Wasser Prise Salz ZUBEREITUNG Zuerst den Seidentofu in einen Schüssel geben und mit einem Schneebesen fein schlagen. Dann die Knoblauchzehe hacken und zusammen mit dem Kichererbsen- und Buchweizenmehl in den Seidentofu einrühren. Salz, Kurkuma, Backpulver und Kala Namak dazu geben und langsam das Wasser unter ständigem Rühren in den Teig einarbeiten. Es sollte ein flüssiger Teig entstehen. In einer Pfanne mit Kokosöl auf mittlerer Hitze zu Omlette-Pfannkuchen ausbacken. Füllen und genießen. . HAST DU SCHON MAL OMLETTE GEMACHT? .
