I have to say one of my favourite moments from this season of @foodnetworkca #TopChefCanada was restaurant wars. We were able to create cohesion through food whilst displaying our own personal culinary identity, culture and heritage. In hospitality women (especially of colour) and black & indigenous males are constantly marginalized and this particular moment always serves me as a constant reminder to what allyship should look like in our industry. Everyone had a voice in the decision making, there were no egos, biases or preconceived notions of what “Canadian food” should look like. Im just lost for words as I thought this day would never be. In the last 10 years Ive been cooking no one as made a greater impact then Chef. I was fresh out of culinary school had more ego then any skill. Then Chef came and humbled me down. He thought me how to hold a knife, sear a piece of fish, create a spreadsheet, how to lead a kitchen, how to lead myself, how to push yourself to limits that you thought was impossible. Not all times were blue skies and sunshine. He thought me as well to overcome the rainy days and the icy nights. Some might say I do well in icy weather. As much as he thought me he made sure that I made the decision he gave advice never demands. He lead the way never walked behind. That hard. Work beats the popular vote. Now as I go on to the next phase Im nervous, scared, apprehensive of the unknown. But through the years with him I learned how to look scared right in the face and bitch slap it...Thank you for everything chef. The time we spent over the stove and over a board is time well spent and I will take with me forever. Im fortunate I got to start with you when you were all young and angry. Devastating news for Chinas chef community, for diners, for many many many friends and for his family: Austin Hu, chef, has passed away. No words, really. He was hustling and helping others until his very last days, at last weekends Heritage Eats food festival. That was what the guy was about: a love of food to his core, and wanting to share that with everyone else. He was a big force in Shanghais restaurant industry, and not just for Western restaurants, as the hundreds of cooks who worked with him over the years can attest. He was a close friend — we bonded almost immediately after he arrived in Shanghai, and it was clear this guy was going to be something in Shanghai. And he was. He never lost that drive, that curiosity, that ability to overcome setbacks and shitty landlords, and just keep smiling. I dont need to write more. One of the biggest pillars in my life when it comes to hospitality, came from working for Danney Meyer. There I was, in Times Square. I had to duck to a corner and get out of the massive foot traffic to look at my phone peacefully. My small hands, and cautious brain is always worried that some asshole in his bubble jacket is going to make me drop my phone. It was a message from Allison, and there was an interview for a pop-up in the Whitney museum on the Upper East Side. At the time I was at Kashkaval a small joint in Hell’s Kitchen working as a busboy. Added to which, I had stopped the cocaine, and was now only drinking Natty Ice. Fast forward to me circling the block 75th around the Black sculpture like building, and trying to find the entrance. Like me, confused, were other industry people (people in the food service industry), who look like they were also peering down to the glass window below. I’, not a leader in these situations, I like to think of myself as an experimentuer…That is, I wait to see if it’s safe, watching the first person go in first. I learned that from my days in animal husbandry. They explained it in the analogy of: “If you’re sledding on a big hill, you should let the first person eager to go, and make sure it’s safe,” Walking through a museum can be either, I’m here to look at stuff I’d liked to understand, or I’m here because I work here. For industry people, walking in a museum is like, “I don’t belong here.” And “What the fuck! Are these godamn lights on for!” Finally downstairs orientation begins, and everyone crops in their circle they know, meaning BOH (Back of the House) goes with a chef named Lulu, and FOH (Front of the House) goes with anyone in a collar light colored shirt. Evan was a portly guy, big bulbous eyes balls, and small hook nose. He was my new supervisor. Allison and Mark were the operational managers and didn’t put up with shit other than making whatever this was, going to work according to the powers that be. Its National R U OK day in Australia today. Are U OK? A reminder to check in with your colleagues, your friends and your family. I consider myself a positive person, always looking for solutions. Looking at the big picture, not focusing on the small. But positive people also have bad days. Bad weeks. Bad months. This picture was taken before Covid. I was not OK. After several months of immense stress and an unhealthy work environment, last week marked the end of my journey with Manhattan. Hotel management made the decision to part ways and gave me my notice. I accepted it and immediately began to focus on my mental health and get back to enjoying my life. Not living in misery. One week on, Im positive again. Im healthier, Im happier. I feel like myself again. I AM OK! I will be looking to continue my journey in Singapore whilst I look for the next chapter in my career. A big thank you to the amazing Singapore industry for all the support in the past week. You all know who you are, so thank you for listening. So R U OK? Today is the last day of service for @108cph before they permanently close doors. THANK YOU! Wine Lovers in Hong Kong have responded to our call for solidarity! We would like to thank all the bidders who have helped to raise money for the Hospitality Industry in Hong Kong! We were able to raise a total amount of around 268,000 $HKD! The bids were very tight for some of the wines auctioned: the incredibly unique Magnum of G-Max donated by @kellerdalsheim made a very happy owner for a bid of 51,000$HKD. The Jeroboam of Chambolle-Musigny 1er Cru Feusselottes 2015 donated by @cecile_tremblay_officiel was bidded for 21,000$HKD. Another very tight bid was for the Magnum of Ruchottes-Chambertin 2016 from the Mugneret sisters @emctm @m.a_nauleau_mugneret which was taken for a bid of 13,500$HKD. Just to name a few! All proceeds will be donated towards the most affected team members of some of our most beloved restaurants in the city. O Top Chef Brasil continua, mas para mim foi a última vez naquela cozinha. Um sentimento estranho porque a vontade era ficar até o final 🙃 Como disse, saí feliz pela trajetória, por ter sido eu mesmo o tempo todo. Conseguir aprender e trocar experiências com ética e alegria, apesar das dificuldades do confinamento, foi a maior vitória. Nesse último (meu) episódio, encaramos uma prova difícil e inédita que, apesar de ter perdido, adorei fazer. Mandioquinha é algo bem brasileiro e não faz parte das minhas raízes, um desafio a mais além da comunicação à distância. Na prova final, me senti muito bem comigo. Estava confiante porque fiz receitas de família, adaptadas para que tivessem esse toque #topchefbrasil. Usei referências aprendidas no Brasil e apliquei um pouco da minha admiração pela culinária oriental. Entre tantos ingredientes, o missô não brilhou, algo que faz parte do dia a dia da cozinha. Mas no programa não há segunda chance para ajustar. As palavras dos jurados, que não cabiam no programa editado, me confortaram e mostraram que o caminho que escolhi, quando deixei a Química (após o doutorado) para seguir entre as panelas, é mesmo sem volta. The last year and a half has been one of the best learning experiences of my life. I learned, grew up and moved closer to my goals. I had the privilege to work alongside 4 different chefs who brought their own styles and personalities to the plate. Water library will always be the first place I had the opportunity to truly live my dream through culinary arts. I joined as a trainee, worked my way up which taught me to be humble and that no job is small. This journey has made me the chef I am today. The future has a bright light, as I step back to embark on the great times I had in the Hotel industry, the pandemic has changed a whole new spectrum in life with the tourism industry. Gone are the days of large gatherings, legacy fundraisers, mass banquet events, & hundreds of thousands of people congregating into Waikiki. Instead we shed a new light and change a whole new outlook in life, I thank Kyoya hotels and all the fabulous managers & executives I’ve shared my experiences with learning the craft of a hotelier. 出發去紐約的前一天,和我同行的助理Yi陪我一起打包要帶去比賽的工具,包括模具、噴槍、空壓機、材料和巧克力等。沒整理完的,我就回家繼續整理,由於太多東西要整理,還有壓力和緊張,那晚只有兩個小時可以睡。早上竟然不小心睡過頭,差點趕不上飛機。從家裡坐Uber去舊金山機場需要20分鐘,我拜託司機開快一點,那20分鐘是我這輩子最緊張的時刻。 助理Yi一早就到達機場,他先跟航空公司地勤人員報到。我一下車就快跑到航空公司櫃臺,感謝正在排隊的旅客讓我先過。美國機場安檢措施很嚴謹,所以很慢,那個時候我的心臟都快跳出來了。安檢完畢之後,我們是用跑的去登機,直到進到機艙,才鬆了一口氣。 這個故事教訓我就是,比賽前一天不要睡覺!!
