- A local miller has sourced heritage wheat grains called Marquis from a Sask. farmer who has revived the strain. It was at one point the most widely grown wheat in Canada. This is a loaf I made using 70% Marquis/ 30% local white - 80% hydration - Tartine method.

- A few days ago I experimented with a heritage wheat flour called Marquis in sourdough loaves using 70% whole wheat/80% H2o. This is the same flour, using 90% ww/85% H2o.
