- Dont let anyone, inculding yourself, tell you that you cant make bread. This was done in a toaster oven with a cheap dull kitchen knife on top of a counter being held up by boxes in a shack.
- Finally gave in to the dutch oven method after many less pretty loaves. My oven cannot hold steam to save its life.
- 40% einkorn flour. Never used it before, and it was really challenging to form. Flattened out after going into parchment. Had low expectations.

- A few days ago I experimented with a heritage wheat flour called Marquis in sourdough loaves using 70% whole wheat/80% H2o. This is the same flour, using 90% ww/85% H2o.
