Sample to production - How our head roaster brings the Banko Gotiti to life: “We first got pre-shipment samples of the Banko Gotiti alongside several other Ethiopian samples back in February. It stood out on the table with its fruity aroma, round juicy body and black tea finish. We welcomed it alongside a couple others on to our list for the year - however there are a few things to be done before throwing it in the roaster, and turning up the heat. Now I ask myself - What do I want to highlight in this coffee, and how am I going to achieve that? Seeing as this coffee is naturally processed I want to highlight its big round sweet berry flavours, while keeping it balanced by maintaining its lovely mild acidity. Taking moisture, density and screen size measurements help us better understand the coffee in preparation for its first roast. These give us an understanding of what the bean will need, such as how much heat to use, how much green coffee to put into the roaster and what temperature to start the roast at. These decisions then affect the turning point, colour change, first crack, end time and end temperature. When we think its ready, after a fair number of cuppings and @V60s, we bag it up and send it out to you lot. Fasting = ingesting no food (I’m amazed at what some people try to include under the name of ‘fasting’ when what they’re doing is clearly some kind of food intake & therefore not fasting) . . Does fasting increase growth hormone? Yes. GH is increased while fasting for the purpose of mobilizing fat stores (breaking down fat to supply the body with energy since it’s not getting it from food) . . Is GH anabolic? Yes, particularly in fed state (at energy balance) . . In the fed state), GH exerts most of its anabolic effects by stimulating the production of insulin-like growth factor-1 (IGF-1) (PMID = 23392098) . . IGF-1 is a very anabolic hormone . . So, if GH is anabolic (& it primarily manifests this through IGF-1), & fasting (not eating food) increases GH production, we can assume that Fasting = Muscle Growth? . . No! . . Caloric restriction disrupts the GH:IGF-1 axis, such that increasing GH secretion doesn’t stimulate IGF-1 production (PMID = 24363451) . . These alterations occur in a dose-dependent fashion, such that higher levels of caloric restriction produce greater increases in GH & reductions in IGF-1 compared to a small caloric deficit (doi.org/10.1210/jc.2002-020369) . . Even in resistance trained individuals a severe calorie deficit caused anabolic resistance (high GH but suppressed IGF-1 levels) (PMID = 32236752) . . People who think that fasting can increase muscle mass need to use a little bit of logic . . If no nutrients are being ingested, where are the substrates going to come from to build this new muscle? Are the calories ingested during these 2 hours significantly below energy balance such that the GH:IGF-1 axis will be disrupted? . . The body has 3 main fuel sources available to get energy from when exercising: carbohydrates, protein, and fat . . Protein is not used much at all as an energy source — it’s simply not efficiently mobilized to provide energy to the body . . That leaves carbohydrates and fats for the body’s preferred energy stores. During low intensity exercise sessions (walking, light jogging, playing Candy Crush, etc.) the body uses primarily fat for the energy needed . . When the intensity of the exercise increases, like sprinting (or doing a set of heavy squats for 10 reps), the body gets most of the energy from stored carbohydrates in the body (referred to as glycogen) . . In summary, when you are doing light exercise, the body is fueling that activity with predominantly fat stores (but it is also important to know that when you do light exercise you are not burning very many TOTAL CALORIES) . . When you’re doing intense exercise, the body is fueling that activity with predominantly carbohydrate stores (and it is important to know that when you do heavier exercise you are burning more TOTAL CALORIES, but you may not be able to do this for very long without getting extremely tired and out of breath) . . What type of exercise is best for fat loss? My answer to this question is to start with what you like to do. Do you HATE running? Then don’t run. Do you enjoy riding bike? Then do that.
