Ambon Kueh (安汶粿): Also known as Bika Ambon or honeycomb cake, a dish born in Indonesia and enjoyed in Singapore and Malaysia. Michael Fong, a buddy of mine, shared a recipe he’d come across in the book “The Way of Kueh: Savouring & Saving Singapore’s Heritage”. Aside from the gorgeous contouring tunnels in this yeasted dessert, I couldn’t help but feel a sense of proud nostalgia for what “kueh” actually is. I grew up in a Khmer-Viet-Chinese refugee household that happened to speak #Teochew (潮州话), an old diaglossic Chinese dialect of Minnan origin, and “kueh” was a word used broadly to describe dumplings and pastries, both savory and sweet. My grandma would make “kuehs” all the time, something I took for granted, and given how labor intensive kuehs can be, I never bothered to learn how to make them. So when she passed away several years ago, the word also disappeared from my family’s vernacular. I don’t know of any restaurants or bakeries that serve kuehs in the Bay Area, save for the few Teochew-Cambodian households where aunties sell chive kuehs through WeChat. I suppose what I’m trying to say is that by cooking the food of your heritage and by calling it by its proper dialectic name, you’re helping preserve the dialect itself. This was going to be a cute lil caption, but life has been throwing me some shit lately. Don’t get me wrong, I’ve kept a smile on my face through it all (clearly by the way I’m cheesing in this damn pic 😭), but I’ve been given test after test after test. Idk why, but I used to think I could beat this shitty system of ours. Yes, a lot of my people have fallen victim to this systematic racism, but I just knew it couldn’t happen to me. I do everything I need to do to stay afloat, and I do it right. Went to school, received my degree, had a job lined up months before I even walked across that stage. Bought a house, bought a car, hell even tried to start building a family. I’ve always kept a mindset of I can get whatever I want as long as I put in the necessary work to get it. But as time has progressed, the speed bumps and roadblocks have slowed me down, and I now realize no matter how hard you work, the odds can still not be in your favor; and it’s not your fault. It’s not your fault. . . I say all of this to remind you that we all go through some tough times, and it may seem like you’re stuck or can’t find your way out, but keep pushing. Keep striving. Nata con tutta probabilità per sfruttare il calore iniziale del forno a legna, la focaccia barese veniva preparata inizialmente per sfamare i panettieri durante le ore di lavoro; un prodotto povero, realizzato con semola rimacinata di grano duro e patate lesse, condito con abbondante olio, pomodori freschi, origano e qualche oliva nera baresana per conferire un gioioso spunto di sapore in più. La mia prima barese è datata 29 Giugno 2014, ed è entusiasmante confrontare i miglioramenti apportati fin dalla prima volta, soprattutto se si considera la principale difficoltà dellimpasto: a causa dellutilizzo delle patate, del grano duro e di unidratazione leggermente più elevata risulta più complesso da gestire, padroneggiare e manipolare. Eppure ve lo assicuro: una volta consolidato il metodo e perfezionata la tecnica, il risultato è da capogiro. La fragranza donata dalle patate e dal grano duro è impressionante al pari della shelf-life del prodotto, capace di durare per ore e ore senza perdere minimamente le sue strabilianti caratteristiche. La mia focaccia definitiva? Mix di farina di grano tenero di tipo 1 e unaltissima percentuale di Saragolla integrale @vivalafarina, patate lesse schiacciate e idratazione media. Estremamente croccante sia sulla base che sulla crosta superiore, bruna e friabile, linterno incredibilmente morbido e saporito.
