Baked Garlic Chili Tofu by @plantbasedrd ♥️ Such a delicious bowl of tofu served with some noodles! Check out the tofu recipe below!⠀ ⠀ Baked Garlic Chili Tofu⠀ 1 block extra firm tofu drained and pressed for at least 30 minutes⠀ 2 tbsp tamari⠀ 1 tbsp nutritional yeast⠀ 2 tsp chili garlic sauce⠀ ⠀ Set oven to 400F. After pressing tofu, cut tofu into even cubes and place in a bowl or Tupperware container. Add remaining ingredients, and if using a bowl just gently toss together. If using a tupperware container, seal container and gently shake contents to evenly coat tofu. Remove tofu and place on a lined baking sheet making sure tofu cubes aren’t touching. Place in oven for at least 25 minutes or until edges have browned. Balsamic Glaze Stir Fry 1 can chickpeas, rinsed and drained 1 small head of broccoli cut into florets 1/2 cup sliced mushrooms 1/2 small red onion, diced 3 tbsp water 2 tbsp balsamic vinegar 1 tbsp coconut aminos or soy sauce 2 tsp maple syrup 3 cloves garlic, minced 1/2 inch fresh ginger, minced 1/2 tsp dry thyme Pinch of cornstarch In a small bowl combine balsamic vinegar, maple syrup, coconut aminos and corn starch. In a pan start by sautéing onions and mushrooms until onions are softened. Add in chickpeas, broccoli and water, then cover pan and allow to steam for about 4 minutes or until broccoli is bright green. Remove lid then add garlic, ginger and thyme and sauté until fragrant, about 2 minutes. Add sauce and sauté until sauce thickens and coats veggies and chickpeas. Was craving a stir fry for dinner last night, which eventually turned into a variation of vegetarian tofu fried rice with a homemade sesame ginger sauce !! It was SO GOOD!! (Recipe below) Tofu Fried Rice (Makes 4 servings) Ingredients: 1 zucchini 2 cups broccoli 2 medium sized carrots 1 summer squash 1 red bell pepper 2 stalks celery 1/2 cup bean sprouts 1 block tofu 2 cups cooked jasmine rice 2 1/2 tbsp olive oil 4 organic cage free eggs Sesame Ginger sauce (recipe below) Preparation: Heat 1 tbsp olive oil in a large skillet. Add veggies and sauté till soft. Meanwhile cut tofu into small cubes and coat with 1/2 tbsp olive oil. Bake tofu in oven or in an air fryer till crispy (about 20 minutes at 400 degrees) In a separate skillet add 1 tbsp olive oil and jasmine rice. Scramble eggs into the rice. Once the eggs are cooked add stir fried veggies , bean sprouts, and sesame ginger sauce. Add 1/4 of fried rice to a plate and top with baked tofu. Får vi fresta med en lyxig kvarngrynspilaff – inspiration från mellanöstern! 🍽✨👌 4 portioner 🌾 Rostad pumpa • 1 hokkaido pumpa • 4 msk olivolja • 4 msk citronjuice • 2 msk lönnsirap • 1/2 tsk riven ingefära • 1 tsk salt & pepper 🌾 Kvarngrynspilaff • 2 msk smör • 3 dl okokt kvarngryn • 1/2 tsk kardemumma kärnor • 4 dl grönsaksbuljong • 1/2 tsk salt • 2 stjälkar svartkål, hackad • 2 msk citronsaft • 10 blad mynta, hackad • 100 g rostade hasselnötter, hackade 🌾 Tahiniyoghurt • 2 dl naturell yogurt • 2 msk tahini • 2 msk citronjuice • 1 msk lönnsirap 🌾 Gör såhär; Sätt ugnen på 200°C. Halvera pumpan (skalet kan ätas), skrapa ur kärnorna, skär i skivor och lägg på en bakplåt. Blanda ihop olja, citronjuice, lönnsirap, ingefära och salt till en marinad och häll hälften över pumpaskivorna. Vänd så alla bitar är täckta av dressing. Rosta i ugnen i ca 25 minuter eller tills de är gyllene. Häll över resten av marinaden och låt dra. Smält smöret i en stekpanna. Häll i kvarngryn och kardemumma och bryn två minuter på medelvärme under omrörning. Tillsätt grönsaksbuljong och låt koka på svag värme i 12 minuter. Häll av överflödig vätska och låt svalna. Massera in citronsaften i svartkålen och rör sedan ner den i grynen tillsammans med myntan. Rör ihop tahiniyoghurten.
