The pomegranate molasses caramelises the roasted beets so well, creating pink pearls with the couscous and all of it is complimented by the tang of the preserved lemons creating the most beautiful flavours...hope you try it! Serves 2 Ingredients: 💚 300g beetroot, peeled and cubed 💚2 garlic cloves 💚1 tbsp pomegranate molasses @odysea_ltd 💚2 tbsp olive oil 💚3 lemon thyme sprigs 💚Salt and pepper to taste 💚1/4 red onion, finely sliced 💚150g Couscous 💚vegetable stock Garnish: 🌱 1 tbsp capers 🌱 1 tbsp feta cheese/vegan alternative 🌱 Salad leaves ( I used watercress) 𝐓𝐚𝐡𝐢𝐧𝐢 & 𝐏𝐫𝐞𝐬𝐞𝐫𝐯𝐞𝐝 𝐋𝐞𝐦𝐨𝐧 𝐃𝐫𝐞𝐬𝐬𝐢𝐧𝐠 🍋1 preserved lemon, finely chopped @belazu_co 🍋2 tbsp olive oil @colive.oil 🍋1/2 tbsp tahini 🍋1 tbsp parsley, finely chopped 🍋Salt and pepper to taste Method: 1️⃣ Preheat the oven to 220c and line a baking tray with foil 2️⃣ Peel the beetroot and cube into equal sized pieces and place in the baking tray along with the garlic cloves, thyme, onions, pomegranate molasses, olive oil and season to taste then cover with foil and roast for 40 mins until tender 3️⃣ Make the couscous according to the instructions using vegetable stock to cook it. Once done fluff up the couscous and incorporate it with the cooked beetroot mix until well combined. Remove the garlic cloves and keep aside. 4️⃣ Make the dressing by whisking all the ingredients together, smash the roasted garlic into the dressing as well and mix well 5️⃣ Place the the beetroot couscous on a plate, surround with salad leaves of your choice, garnish with capers and feta and finish with a drizzle of the dressing Save if you like, Tag if you try! - @sonalicooks on Instagram

Comment below⁣⁠ ⁠ Follow @davidclearyveganpt for daily vegan posts!⁠ ⁣⁠ 💪I get asked alot about different protein sources and what to include, especially when trying to hit certain macronutrients targets, well this simple chart can help when putting your meals together. ⁣⁠ ⁣⁠ 🌯On the left there are leaner protein sources with lower or very little amounts of carbs or fats. These can be added in at times you need an extra protein boost like adding protein to your morning oats or seitan to a sandwich.⁣⁠ ⁣⁠ 🥜In the middle are most legumes, these have good amounts of protein while also containing slow digesting carbs & fiber. I would recommend include at least 2-3 servings each day of these. Add them to curries, chillis, burritos etc⁣⁠ ⁣⁠ 🌰Lastly we have plant protein sources with higher amounts of fat. Soy actually has a higher protein & fat content than many legumes, edamame, tofu & tempeh are all soy based, while nuts & seeds are also higher in fats. ⁣⁠ ⁣⁠ So how to apply this to your diet? Vegan Turmeric Crepes 🌈 – this is such a versatile recipe! It can work well with sweet OR savoury toppings, just leave out the cumin if doing them sweet! I used @califiafarmsau Unsweetened Vanilla Almond Milk because it adds a lovely depth of flavour combined with the turmeric 🌿I have been loving experimenting with the unsweetened Califia almond milks because they have no added sugar and are thick and creamy so the perfect milk substitute in my books! I hope you guys give these a go! 1 cup chickpea (besan) flour 1.5 tsp turmeric powder ¼ tsp cumin (optional) Pinch of salt and pepper 1 cup & 1-2 tbsp @califiafarmsau unsweetened vanilla almond milk Combine all dry ingredients in a bowl whisking to combine, add 1 cup of Califia vanilla almond milk and whisk until a smooth batter forms, if it is too thick add the additional milk to thin Heat a non-stick pan over a medium heat and add a little oil or butter Pour ¼ of the mixture into the pan swirling the pan to coat and spread the batter Allow to cook for a few minutes until the edges are cooked, use a spatula to flip and cook for a further 30 second, continue until you’ve cooked all the batter Top with your favourite savoury or sweet toppings! #califiafarmsau #sp Savoury topping ideas – beetroot hummus, mixed salad, smashed avocado, dahl, sauteed mushrooms (yum!) - @pheebsfoods on Instagram

Hi all! I know I’ve definitely been sharing more sparingly on here lately..I think I underestimated how much being full time school wise impacts my time, and needless to say I’ve just needed a few days to catch my breath and get back up to speed. However, I’m very excited to be sharing the recipe for these cute lil stuffed kabocha squashes, straight from @rodgersgreensandroots at the @ptreefarmersmkt. I think it could definitely be a great vegetarian alternative for a thanksgiving-y type meal or honestly just a fun excuse to make a very cute meal. Recipe’s down below 💛 . . Stuffed Kabocha Squash~ Ingredients: -3 small kabocha squashes -2 carrots, chopped finely -1 piece of celery, chopped finely -1 shallot, chopped finely -1 cup of finely cubed bread -1/4 cup grated hard cheese of choice (optional) -2 cups of vegetable stock -1 cup quick cooking barley -1/4 cup parsley -2 tbsp rosemary -1 tbsp + 2 tsp olive oil -1/2 tsp salt (+ more to taste) -black pepper to taste Method: Preheat the oven to 375°F. Carefully cut off the tops of the kabocha squash, and place cut side down on a sheet tray. Place in oven and let cook until tender, about 50-60 minutes. Set aside. Reduce oven temperature to 350°F. Place bread on a sheet tray and let toast just for 5 minutes, to dry out. Add to a bowl with the grated cheese, parsley, the 2 tsp of olive oil and a pinch of salt and black pepper. Toss to coat and set aside. Heat a medium sauce pan over medium high heat on the stovetop and add the remaining olive oil. Add the shallot, carrot, rosemary and celery and sauté until soft, about 4 minutes. Add the barley and let toast about 2 minutes. Pour in the vegetable stock and let cook, stirring often, about 10-20 minutes. Stir in the additional 1/2 tsp of salt. Remove the pan from the heat. Returning to your squash, scoop out the seeds from the center. Place a couple spoonfuls of the barley mixture into the cavity, top with bread crumb mixture, and place in oven to bake for an additional 5 minutes. These easy vibrant plant-based burgers are packed with flavour, protein and are extremely versatile! 🍔💗🥬 I absolutely love using @flexiblefoodsau as a plant-based meat alternative as it still gives a boost of protein and iron, without the added nasties! ✨ Recipe: Serves 3 Ingredients: 1 Packet (100g) Flexible Foods Plant Based Patties 120 ml water 1 ripe avocado - smashed 3 tablespoons beetroot hummus 3 cob lettuce leaves 3 wholemeal seeded burger buns (or other preferred buns) 3⁄4 cup shredded veggie mix (carrot, slaw, beetroot) Method: 1. Begin by preparing your plant-based patties, simply add the mix to a mixing bowl and add water. Mix well together with a wooden spoon, and once a patty dough-like consistency is formed, divide the mixture into three equal parts. Roll into balls and lightly press down with the palm of your hand to form into patties. 2. Cook patties in a non-stick fry pan for 2-3 minutes per side, or place in an air-fryer for 5-6 minutes on 190 degrees C until hot and lightly golden brown. 3. Meanwhile, toast your burger buns. 4. Begin assembling your burgers, add a lettuce leave to the base, top with a tablespoon of beetroot hummus, then add your cooked patty, 1⁄4 cup shredded veggie mix, 1/3 smashed avocado and top with the other halve of your burger bun. Creamy Spinach Curry with Crispy BBQ Chickpeas (Vegan & GF)  Even thought it’s getting warmer and it feels like spring is just around the corner in Melbourne, we still need warm comfort food like this creamy spinach curry for chilly nights.  I used mild curry powder, garlic powder, smoked paprika, cumin powder, ginger powder, chickpeas, and raw cashews(all organic!) from @nakedfoods   Spinach curry: Ingredients: 400g spinach 400g tomato tin or ripe tomatoes  1 big onion, minced  60g roasted or raw cashews (optional but highly recommended) soak in hot water for 20-30 minutes and rinse  1 cup vegetable stock (or 1 cup water + 1/2-1 vegetable bouillon) 1 cup choice of milk (I used soy milk) 3 cloves garlic, sliced  1 bay leaf  2-3 Tbsp. curry powder  2-3 Tbsp. maple syrup  1 tsp garlic powder  1 tsp cumin powder  1 tsp garam masala 1 tsp natural salt  1/4 tsp ginger powder  Chill powder if you need *1 Tbsp. =15ml  Method: 1. Put spinach in boiling water and cook for a few minutes. Drain water and set aside. 2. In a large pot, sauté onion and garlic with 1 Tbsp. olive oil until tender.  3. Add garam masala, cumin powder, curry powder, ginger powder, garlic powder, and 1 Tbsp. olive oil and continue to cook and stir for 1-2 minutes. 4. Add tomatoes, bay leaf, vegetable stock, and salt, and bring it to a boil. Reduce heat and cover with a lid. Simmer for 30 minutes over a small flame.  5. In a blender, place everything from the pot, cashew nuts, maple syrup, milk, and spinach and blend well. Place it back into the pot. Simmer it for 5 minutes over a small to medium flame. It‘s easy to burn so be careful. 6. Add chilli powder and/or more milk if you wish. Add salt and pepper to taste. Turmeric Cauliflower with Garlic Tuscan Kale is one of our favourite recipes.  Try it as a midweek dinner, its just delicious and nutritious and really quick & easy. Ingredients:                                                                             1 pack of Green Almond Foods frozen Turmeric Cauliflower Gnocchi 4 cloves garlic sliced 1/4 cup olive oil 1/2 - 1 bunch of tuscan kale (depends how much greens you like, I love a whole bunch) washed & chopped into quarters 1 chilli to garnish (again I love a hot chilli) Salt & pepper to taste Method: 1.Bring 3 litres of water in a large pot to the boil. 2.While waiting for water to boil, add garlic to olive oil and heat up for a minute then add chopped kale and cook to your liking. Add frozen gnocchi to boiling water and cook 3-5 minutes or until starting to float. Scoop or drain gnocchi and add into kale mixture, mix gnocchi in. Top with chilli and enjoy. This recipe is another fast food meal. Cooked in 5-10 minutes. Why go out for takeaway when you can get a nutritional meal without leaving home. - @greenalmondfoods on Instagram

Torrejitas de salmon con camote 4 raciones 2 camote pelados 🍠 1/2 tz de quinua cocida 300g de salmón en trozos pequeños (al horno o plancha) 2 huevos grandes 🥚 🥚 Cebolla picadita 2 Cdas de harina de quinua (o la de tu preferencia ) Sal, pimienta y paprika 🧂. Aceite de 🥥 o 🌻(una nadita) Instrucciones: Cortar el camote en cubos y sancochar. Dejar que se enfríe un poco l, y luego pasar a un bol para mezclar y mezclar con una cuchara de madera hasta que todo esté combinado y se forme una masa. The one thing the probiotic industry isn’t telling you: there is no strong evidence to support using their products . The global probiotic industry is worth billions of dollars. I have seen probiotics advertised as effective treatments for IBS, fatigue, obesity, bloating, inflammatory bowel disease and as an essential daily supplement for gut healing & overall health . This year the American Gastroenterology Association (AGA) published their recommendations on use of probiotics for gut health. As well as rigorously reviewing the evidence, they considered submissions from patients and interested parties. Their evidence-based recommendations show that probiotics are not yet ready for prime time . For symptoms of irritable bowel syndrome, for active C difficile infection, ulcerative colitis and Crohn’s disease, there is no evidence to support probiotic use. Clinicians should only prescribe them in the context of a clinical trial designed to find out if they actually work! . There are two scenarios where probiotic treatment may be considered: for the prevention of antibiotic associated diarrhoea due to C difficile and the treatment of acute pouchitis (a condition that affects certain post-op IBD patients). Swipe on the photo above to see which strains may be considered, but note that this advice is based on “low quality evidence” and that probiotic use may even have the potential to worsen severe infections. Not to mention the added cost to patients with a low expectation of benefit . Ongoing probiotic trials are fascinating and valued. I hope that one day we have specific probiotics with proven benefits for our gut health and overall well-being. We are not there yet . My advice: ditch the probiotic supplements and spend your money on the whole foods that naturally promote a healthier microbiome: fruits, vegetables, whole grains, legumes, nuts and seeds . Don’t worry, your spice cabinet can come to the rescue!⁠ ⁠ Dried herbs can be folded into a herb butter, used to flavour a salad dressing, or liven up a ceviche. Dried herbs are often more potent and concentrated than fresh herbs, so you’ll need less. Try to stick to a ratio of one tablespoon of fresh herbs to one teaspoon of dried herbs. ⁠ ⁠ Rehydrating your dried herbs can really boost their flavour. Generally, fresh herbs are added at or towards the end of cooking, whereas dried herbs are best added earlier in cooking, allowing their flavour to develop. When I first started studying nutrition, one of the biggest comments I would get from other Latinos is great so you can teach us how to make our food healthier.⁠ .⁠ .⁠ But the truth is, Ive always seen Latin food as nourishing. I rarely make substantial changes to the WAY a food is prepared (full disclosure I occasionally bake foods that are traditionally fried because frying food is messier and less convenient IMO). Making low-carb tacos or something usually rubs me the wrong way because it sends the message that the original food NEEDS to be changed.⁠ .⁠ .⁠ A Latin meal pattern (speaking very broadly here) consists of a whole lot of beans, complex carbs, fresh fruits, and vegetables. Im not seeing a whole lot there that NEEDS to be changed, when you look at the individual foods themselves.⁠ .⁠ .⁠ The thing is that theres no food that is or isnt healthy or unhealthy. So its very rarely the food itself that needs to be changed. More so than changing the food to be healthier (and also not taste quite the same) I like to focus on how to fit that food, exactly as it is, into your unique healthiest eating pattern. I went from a lean, defined and chiseled body on a meat-based diet .. . To a body that looked like I never lifted a dumbbell before .. . The left picture was taken during that time. . And I wasn’t even eating Vegan Junk food! . I was eating all the „right things“ - beans, lentils, broccoli, nuts, seeds, freaking turmeric .. . I believed that once you go plant-based, since you’re eating all those healthy foods you can eat endless amounts of them. . No limit, since the more you eat of them, the healthier right? . No, thats not how it works. . And thankfully I realized that after another 6+ months of struggling I finally got my s*** together and took action. . Got a Coach, did my Certification, researched for hours on end and started experimenting … . and found success. I found an approach that works brilliantly on a vegan diet. . An approach that combines optimal body & performance results with fun and sustainability. . The right picture was taken just a few weeks ago at our team event. . And let me tell you there is WORLDS between these two. . Not just physical, but mental shifts that took place, that all were caused by me going through this struggle. . I could have given up, gone back to eating meat - but instead I decided for growth & learning. . And thats why I’m here now. . Not even close to perfect - trust me I still struggle from time to time and I am my biggest critique, but looking back I’d never want to miss that growth I experienced. . 1 YEAR TODAY SINCE I MOVED BACK TO AUSTRALIA 😱 honestly hard to believe it myself. my parents weren’t lying when they said time only moves faster as you get older! for those of you who don’t know or are maybe new around here, I was born and raised in Boston, Massachusetts 🦞 I moved to Melbourne originally 5 years ago as a lost 25 year old who had no idea where the heck her life was headed. all that girl knew was that she needed a massive sea change and to move forward in alignment with her passions and values ✨ in that first year I met the love of my life 👩‍❤️‍👨 but due to visa reasons, eventually I had to move back to mum and dad’s in MA... Ben and I did long distance for a couple of years, which sucked but we made it work! in that time I applied for a partnership visa, which took 18 months to get approved ‼️ I moved back to Melbourne September 1, 2019 and have been living in our lil beachside apartment ever since 🌊 in this year (which didn’t go as intended like I’m sure most of us are feeling) I worked a job for 9 months that got my life started here, quit that job, started my own business, catered 2 retreats (with more on the horizon post covid!) and Ben and I rescued our doggo, Charlie 🐶 I think it all unfolded exactly how it was meant to... it’s been an absolute roller coaster this year but I’m truly grateful to have the opportunity to live with Ben finally after years apart and to be in a place that I feel fully supports my chosen lifestyle 🌿 thank you Melb for being you 💜 can’t wait til you reopen again! - @shaktifresh on Instagram

⁣Gyros mit Tsatsiki 🧄 Geschmacklich einmal nach Griechenland und wieder zurück? Veganes Gyros mit Tsatsiki ist wirklich einfach zu machen und mega lecker! Das Gyros-Gewürz kannst du entweder selber machen oder ganz einfach eine Gewürzmischung im Supermarkt kaufen ☺⠀ ⠀ Welche Beilage gibt es bei dir dazu? Bei uns gab es selbstgemachte Pommes aus Kartoffeln und Süßkartoffeln dazu 😍⠀ ⠀ ✍🏼 Zutaten:⠀ 150g Soja Schnetzel⠀ 3 EL Gyrosgewürz⠀ 1 Zwiebel⠀ 2 EL Olivenöl⠀ 500g Sojajoghurt (Natur, ungesüßt)⠀ 1/2 Gurke⠀ Saft von 1/2 Zitrone⠀ 2 Knoblauchzehen⠀ 10g Dill⠀ Salz, Pfeffer, Kreuzkümmel⠀ ⠀ Zubereitung:⠀ 1. Soja Schnetzel mit einem EL Gyrosgewürz vermengen und die 3-fache Menge kochendes Wasser dazu geben. Für ca. 30 Minuten einweichen lassen und ab und zu umrühren. ⠀ 2. Währenddessen Zwiebel schneiden, die Beilage und das Tsatsiki zubereiten.⠀ 3. Für das Tsatsiki: Die Gurke klein hobeln und den Knoblauch klein hacken. Gurke, Knoblauch, Sojajoghurt, Dill und Zitronensaft in einer Schale verrühren. Mit Salz, Pfeffer und Kreuzkümmel abschmecken und im Kühlschrank ziehen lassen (umso länger es ziehen kann, desto intensiver schmeckt es). Optional kannst du noch etwas Olivenöl in das Tsatsiki rühren.⠀ 4. Wenn die Soja Schnetzel eingeweicht sind, 2 EL Olivenöl und 2-3 EL Gyrosgewürz dazu geben und gut vermengen. ⠀ 5. Etwas Olivenöl in einer Pfanne erhitzen und die Zwiebel kurz glasig andünsten. Hey my friends, today were taking a little break from the Oktoberfest party and enjoy together a delicious and healthy #claudibowl, which includes 🌱Spinach 🌱Oven roasted sweet potato chunks (recipe below) 🌱Sprouts 🌱Avocado 🌱Pan fried chili mint corn 🌱Cucumber 🌱Sriracha mayo For the sweet potato chunks, peel 1 big sweet potato and cut into chunks. Mix a marinade of 2 tbsp oil, 1 tbsp smoked paprika, 2 tbsp nutritional yeast and salt and pepper. Massage the marinade into the sweet potato, then put in a baking tray lined with parchment paper. Bake for about 30 minutes at 180 ° / 350 F. 🍔🍋CAULIFLOWER SCHNITZEL SALAD BUNS WITH LEMON PEPPER TAHINI SAUCE🍋🍔⁠ .⁠ Makes 4⁠ .⁠ •4 @thecoolgardenernz Cauliflower Schnitzels, defrosted⁠ •2 tbsp Greek yoghurt⁠ •2 tbsp hulled tahini⁠ •1 tbsp water⁠ •1/2 tsp lemon pepper seasoning (can also use sumac)⁠ 4 buns of choice (I used focaccia)⁠ •a few handfuls salad greens⁠ •1/2 cucumber, thinly sliced⁠ •1 avocado, sliced⁠ .⁠ 1. Heat 1 tbsp olive oil in a frying pan over medium-high heat. Add cauliflower schnitzels and cook for 3-5 minutes, until browned and crisp on one side. Flip and continue to cook until evenly browned.⁠ 2. Meanwhile, whisk yoghurt, tahini, water and lemon pepper in a small bowl until creamy. Adjust water to your desired consistency.⁠ 3. Go try them at @oportobarleeds @donersummer - these guys have quickly developed a bit of a cult following, and I can see why! As well as tasting AMAZING they have such colourful food 😍 @eatyourgreensleeds - not a vegan restaurant as there is plenty of meat and fish too, but loads of amazing vegan dishes on the menu. Vegan Protein Sources 💪 Follow @plantfitrecipes for more healthy vegan info One of our most asked questions is regarding vegan protein sources and what foods to eat, above we outlined some great sources of vegan protein, all values are for the cooked values. Protein is made up of 20 different amino acids (the building blocks of protein) and you need those 20 different amino acids for protein to function properly in the body. 11 of those amino acids can the body already produce, so there are 9 amino acids which you need to consume everyday through your diet. As long as you eat enough calories and eat a balanced diet which includes a variety of food & adequate calories then protein intake should not be a problem, but for athletes who want to optimize their muscle building potential it might be optimal to ensure you are getting a full range of amino acids across each meal. For example grains and cereals such as bread, oats, pasta, rice, couscous, bulgur etc are low in lysine, while legumes such as, beans, lentils, peas and peanuts are high in the amino acid lysine but low in the amino acids tryptophan, methionine and cystine which are found in grains and cereals. By combining these in a meal we can ensure we get the full range of amino acids in optimal amounts. Fortunately most people will do this naturally, think of all the rice & beans dishes common throughout the world. Other examples include: Soups or stews that include legumes and grains. Salads made with beans and nuts or seeds. Peanut butter sandwich on whole-grain bread. Hummus with whole-wheat pita bread. Soy is one plant protein that contains all the essential amino acids.1 Its usually served as tempeh or tofu, and soy milk is a popular replacement for milk. Amaranth, quinoa, hemp seed, and chia are also complete proteins, so adding any of these foods, along with combining your other protein sources, will help you get all your essential amino acids met every day. The wet weather in Sydney is making us crave this gorgeous Spinach Curry made by Minako (@365cleaneats)! 😍 ​ CREAMY SPINACH CURRY WITH BBQ CHICKPEAS RECIPE below 👇 ​(Vegan & GF) ​ ​Spinach curry: Ingredients: 400g spinach 400g tomato tin or ripe tomatoes  1 big onion, minced  60g roasted or *raw cashews (optional but highly recommended) soak in hot water for 20-30 minutes and rinse  1 cup vegetable stock (or 1 cup water + 1/2-1 vegetable bouillon) 1 cup choice of milk (I used soy milk) 3 cloves garlic, sliced  1 bay leaf  2-3 Tbsp. *curry powder  2-3 Tbsp. *maple syrup  1 tsp *garlic powder  1 tsp *cumin powder  1 tsp *garam masala 1 tsp natural salt  1/4 tsp ginger powder  Chill powder if you need Method: 1. Put spinach in boiling water and cook for a few minutes. Drain water and set aside. 2. In a large pot, sauté onion and garlic with 1 Tbsp. olive oil until tender.  3. Add garam masala, cumin powder, curry powder, ginger powder, garlic powder, and 1 Tbsp. olive oil and continue to cook and stir for 1-2 minutes. 4. Add tomatoes, bay leaf, vegetable stock, and salt, and bring it to a boil. Reduce heat and cover with a lid. Simmer for 30 minutes over a small flame.  5. In a blender, place everything from the pot, cashew nuts, maple syrup, milk, and spinach and blend well. Place it back into the pot. Simmer it for 5 minutes over a small to medium flame. It‘s easy to burn so be careful. 6. Add chilli powder and/or more milk if you wish. Add salt and pepper to taste.  BBQ crispy chickpeas: Ingredients: Cooked *chickpeas 250-300g 1-2 Tbsp. *oil 2 tsp *smoked paprika 1/2 tsp *salt 1-2 cloves grated garlic or 1 tsp *garlic powder ​ ​*Ingredients available at Naked Foods Method: 1. Preheat oven to 200⁰C. Toss chickpeas with other ingredients in a bowl. 2. Transfer to a baking dish and spread evenly. Bake them for about 20-30 minutes or until crispy.
