HEALTHY KATSU RECIPE 💥 Want something new this #meatfreemonday? 🤩 How about our healthy spin on Katsu curry, with sticky sesame aubergine, edamame brown rice & a side of tenderstem for essential greens 😋 Let us do the hard work & deliver everything you need, to your door. WE DELIVER 100g fresh edamame beans 180g Tenderstem broccoli 1 aubergine 1 tbsp tamari 200ml coconut milk 2 garlic cloves 2 spring onions 2 tsp curry powder 2 tsp maple syrup 2 tsp oil 2 tsp white sesame seeds 4cm fresh ginger 80g brown rice YOU COOK 1. Preheat the oven to 200C / fan 180C / gas mark 7 and boil a kettle. Rinse the brown rice and place in a saucepan with 400ml boiling water and a pinch of sea salt. Simmer for 20-25 mins, then add the edamame beans for the last 2 mins. Drain. 2. Heat a dry medium-sized frying pan on a medium heat and add the white sesame seeds. Cook for 1-2 mins then transfer to a small bowl and reserve for later. 3. Slice the aubergine into 1cm-thick rounds (you should have 10 slices). Place in a large bowl with the tamari, maple syrup and 1 tsp oil, then mix well to cover the aubergine in the marinade. Place the aubergine on a baking tray lined with parchment paper and cook in the oven for 15 mins, until softened. 4. Make the katsu curry sauce; finely slice the spring onions, and peel and grate the ginger and garlic. Heat the same frying pan used for the sesame seeds with 1 tsp oil on a medium heat and add the garlic, ginger and just half the spring onions. Cook for 3 mins until softening. Add the curry powder and cook for a further minute then pour in the coconut milk and simmer for 10 mins, or until thickened to a desired consistency. 5. After the aubergine has been in the oven for 15 mins, add the Tenderstem to the same tray and cook together for 10 mins. 6. Add the remaining spring onion to the drained rice and edamame beans. Mix. 7. Spoon the edamame rice into two warm bowls. Place the sliced aubergine over the rice and the Tenderstem broccoli alongside. Sprinkle the aubergine with the sesame seeds and pour the katsu curry sauce over the aubergine. - @mindfulchefuk on Instagram

Thai Noodle Bowl by @terianncarty 💚 🌱Follow us @vegandiet_tips for Daily vegan recipes 2 servings soba noodles 1 block tofu (pressed for 2 hours) 1/2 red pepper julienned 1 carrot julienned 1/4 red cabbage thinly sliced 2 fistfuls spinach 1/2 mango sliced 1 green onion Handful peanuts 1/2 cup cilantro Pinch of salt Pinch chilli flakes PEANUT SAUCE 1/2 cup Pb 1 tsp mango hot sauce 1 tbsp tamari 1/2 tsp vegan “fish” sauce 2 tbsp coconut sugar 3 tbsp water 1 tsp rice wine vinegar Pinch chilli flakes 1 clove garlic 1 tbsp finely minced ginger 1 tbsp sesame oil 1 lime juiced place all ingredients into a bowl and whisk to combine. Add an extra tbsp of water if too thick. Taste for seasoning and add more hot sauce if needed. Preheat oven to 400F. Cut tofu into cubes and season with a healthy pinch of salt and cracked pepper. Drizzle with 2 tbsp olive oil. Place of baking sheet and bake for 20 minutes, turn and bake for 10 more. Set aside. Cook noodles, rinse with cold water and place back into pot. Add in the rest of the veggies and tofu and add in enough peanut sauce to generously coat. Gently toss everything together. Ingredients 1/4 cup red onion, thinly sliced 2–3 large handfuls arugula (or other salad greens, or add some shredded cabbage) 1/2 large ripe papaya, cubed (about 3–4 cups) 1–2 small Turkish cucumbers, sliced 1/4 cup cilantro 1/4 cup toasted coconut, optional 1 tablespoon thinly sliced jalapeno (optional) Cilantro Lime Dressing: 3 tablespoons olive or avocado oil 1 tablespoon lime zest 4 tablespoons lime juice 2 tablespoons chopped cilantro 1 tablespoon chopped scallion (optional) 2 teaspoons honey, agave, or sugar 1/2 teaspoon coriander 1/4 teaspoon salt 1/4 teaspoon pepper pinch chili flakes or Aleppo (optional) . Instructions If sensitive to onions, or to remove their “bite”, soak thinly sliced onions in salted water while you make the salad. ( 1/2 teaspoon salt, 1 cup water) Halve, seed, peel and cube one half of the papaya, saving the other half for another use. You should have 3-4 cups of 3/4 inch cubes. Place the greens in a large, wide, serving bowl or on a large platter. Toss with 1/2 of the onions. Place the papaya on top of the greens. Slice the cucumber and scatter over the papaya along with remaining onions. (At this point, you could refrigerate and serve later that evening.) Make the Cilantro Lime Dressing mixing all ingredients together in a small bowl or jar. (Spoon it over the salad right before serving, gently tossing.) Sprinkle with cilantro leaves, optional jalapeno and toasted coconut. Taste, add more lime if you like. - @foodie_and_recipes on Instagram

Mein Trainer sagte immer „Im Schlaf wachsen die Muskeln“ und damit hat er recht. Weniger Schlaf resultiert in weniger Muskelmasse und einer höheren Fettzunahme (im Überschuss).⠀⁣ ⠀⁣ Trainiere progressiv!✍️⠀⁣ Wer nicht stärker wird und/oder sein Volumen zeitweise erhöht, wird auch keine Muskeln aufbauen. Alles was du zunimmst, wird also möglicherweise Fett sein. Tipp: Protokolliere dein Training. ⠀⁣ ⠀⁣ Periodisiere dein Training!📆⠀⁣ Optimalerweise solltest du dein Training zyklisch verändern, um alle Kraftbereiche zu trainieren und mehr Muskelfasern zu rekrutieren, damit du das volle Potenzial ausschöpfst. Får vi fresta med en lyxig kvarngrynspilaff – inspiration från mellanöstern! 🍽✨👌 4 portioner 🌾 Rostad pumpa • 1 hokkaido pumpa • 4 msk olivolja • 4 msk citronjuice • 2 msk lönnsirap • 1/2 tsk riven ingefära • 1 tsk salt & pepper 🌾 Kvarngrynspilaff • 2 msk smör • 3 dl okokt kvarngryn • 1/2 tsk kardemumma kärnor • 4 dl grönsaksbuljong • 1/2 tsk salt • 2 stjälkar svartkål, hackad • 2 msk citronsaft • 10 blad mynta, hackad • 100 g rostade hasselnötter, hackade 🌾 Tahiniyoghurt • 2 dl naturell yogurt • 2 msk tahini • 2 msk citronjuice • 1 msk lönnsirap 🌾 Gör såhär; Sätt ugnen på 200°C. Halvera pumpan (skalet kan ätas), skrapa ur kärnorna, skär i skivor och lägg på en bakplåt. Blanda ihop olja, citronjuice, lönnsirap, ingefära och salt till en marinad och häll hälften över pumpaskivorna. Vänd så alla bitar är täckta av dressing. Rosta i ugnen i ca 25 minuter eller tills de är gyllene. Häll över resten av marinaden och låt dra. Smält smöret i en stekpanna. Häll i kvarngryn och kardemumma och bryn två minuter på medelvärme under omrörning. Tillsätt grönsaksbuljong och låt koka på svag värme i 12 minuter. Häll av överflödig vätska och låt svalna. Massera in citronsaften i svartkålen och rör sedan ner den i grynen tillsammans med myntan. Rör ihop tahiniyoghurten. Bang Bang Roasted Cauliflower & Chickpeas: A sheet pan meal that satisfies all your sweet & spicy cravings. Serve it up on a bed of greens or mix it with your favorite noodle. If you never ever tried bang bang sauce, now is your chance! Happy Thursday 💕 What you need: The Bang Bang Sauce: 6 tbl vegan mayo, 4 tbl sweet chili sauce, 2 tbl sriracha, juice of 1/2 lime For Roasting: 1 lb of cauliflower florets (approx 1 small head) , 1 15oz can of chickpeas drained & rinsed, 2 tbl olive oil, kosher salt & pepper 1️⃣ In a small bowl whisk together all of the sauce ingredients. Adjust to taste. Place in fridge 2️⃣ Cut large florets into quarters, making sure pieces are equally sized. Dry chickpeas with a kitchen towel, then combine with florets in a large mixing bowl Add oil to coat, & salt/pepper. 3️⃣ Spread florets & chickpeas on a large parchment lined tray (do not crowd). Roast at 400 F till golden & caramelized in some spots, 25-30 min (flip halfway through cook time) 4️⃣ While veggies are roasting, warm sauce on stovetop. Bring to a boil, then simmer till sauce thickens & changes color. Turn off heat. 5️⃣After veggies are finished roasting, return veggies back into large mixing bowl. Add half of the warmed sauce, while reserving the other half for serving. Mix until coated. 6️⃣ Add cauli & chickpeas back to parchment lined tray. Broil on high for 2-3 min with rack at highest position. 7️⃣ Serve with extra sauce & enjoy! Best eaten right out of the oven. Serves 2 -4 people. Enjoy 💚 - @thevegansara on Instagram

Die Zubereitung: 👉Den Ofen auf 200 Grad Umluft vorheizen. 👉Die Süßkartoffeln schälen und würfeln. Mit Olivenöl, Meersalz und Pfeffer in einer Schüssel vermischen. Happy fall with delicious bowl of wild mushroom soup! I am obsessed with mushrooms! Try this decadently & flavourful soup & let me know how you do! Tomorrow is #worldgratitudeday. While I don’t think you need a specific day to be grateful - similar to how you don’t need a “New Year” to start a health and fitness routine, I think it’s important to pause & use this day to increase your gratitude! Thank you! 🤗 grateful to @halfbakedharvest who inspires me to photograph savoury food 🥰 Mushroom soup with wild rice: 2 T of olive oil 3 shallot, diced. 1 medium carrot, peeled & chopped. 1 celery stick, chopped. 1 Tblspn of garlic paste 1 tsp of onion powder 2 cubes of veg bouillon 1 tsp of tomato paste 1 T of lemon juice 1/2 tsp of salt 2 bay leaves 1 tsp of dried parsley. 1 tsp of white miso paste. A pinch of pepper 1 cup of wild rice. 1/4 tsp of paprika. 4 cups of vegetable stock or water. 3 Tbspn of coconut cream. 10 shiitake mushrooms, either sautéed sep or in the pan. Method: 1. In a medium pan, drizzle olive oil over medium low heat. 2. Place your shallots, carrot & celery in pan. Let it cook until soft. 3. Add your other ingredients, including mushrooms, but not coconut cream and rice & bring to a boil. Stir often. Cover, reduce to low for a few minutes. Add rice. 4. Take off heat & let it sit for an additional 30 mins to allow the rice to cook. Remove bay leaves, stir in your coconut cream & serve immediately. Sprinkle some dairy free Parmesan. Taste & add salt etc. Enjoy! Приготовить постный салат можно меньше, чем за полчаса: ✅ Киноа заливают кипятком, накрывают крышкой и дают настояться 15–20 минут. ✅ Овощи промываются и нарезаются кусочками среднего размера. К ним добавляется мелко рубленная зелень, соль и молотый перец. ✅ Все ингредиенты для заправки необходимо смешать и добавить в салат. ✅ Блюдо подаётся посыпанным рубленным миндалём. Oh-lala, vegan Shakshuka! Een heerlijk Oosters eenpansgerecht, met héél veel kruiden en boterbonen. Super romig en voedzaam. Hoe maak je het?↓ Ingrediënten (2 personen) . 1 ui, fijn gesneden . 2 tenen knoflook, geperst . 1 blik gepelde tomaten . 1 blik boterbonen . 1 blik artisjok . 200 gram spinazie . C.a. 10 zongedroogde tomaten . 1 tl korianderpoeder  . 1 tl gemalen komijnzaad . Om te serveren: (glutenvrij)stokbrood of een graansoort naar keuze Bereidingswijze (20 minuten) . Snijd de ui en pel de knoflook. Zet een koekenpan op het vuur en bak hierin de ui aan. Pers de knoflook uit en bak even mee. . Laat de bonen en artisjok ondertussen uitlekken in een vergiet en voeg deze vervolgens samen met het korianderpoeder en komijnzaad toe aan de ui en knoflook. . Bak ongeveer 3 minuten en voeg vervolgens de zongedroogde tomaten en het blik gepelde tomaten toe. . Tot slot voeg je de spinazie in delen toe totdat alle spinazie is geslonken. Schep regelmatig door en laat c.a. 5 minuten zachtjes pruttelen.  . Breng op smaak met peper & zout en serveer met stokbrood of een graansoort naar keuze. .
