Saturday Cool. Angel’s Envy and Devil’s Cut.......the concepts behind each of these bottles is my definition of “Saturday Cool” and the contrasting flavor profiles make these bottles super fun to learn about and taste together. First Devil’s Cut. As bourbon ages a portion of the liquid evaporates through the barrel and up “toward the heavens”, this is known as the “angel’s share”. Jim Beam Devil’s Cut is not that portion. Instead, it’s made from the liquid that gets trapped deep inside the wood of the barrel—the “devil’s share”. Beam extracts that liquid from their barrels and blends it with extra-aged Kentucky straight bourbon whiskey and bottles it at 90 proof. The result is a unique flavor profile with a deep color and robust aroma and character. Now Angel’s Envy has a completely different flavor profile and idea on how best to finish their whiskey. Each batch of Angel’s Envy goes through an intense cycle of conditioning and blending in small batches of 8 to 10 barrels at a time and is aged for up to 6 years. When it’s ready, it’s finished in 60 gallon French oak port wine casks for between three to six months. The result is an easy sipping 86.6 proof whiskey full of smoothness and sweetness. And although about 5% of the liquid evaporates during the process and goes to the “angel’s share,” what’s left for all of us in the bottle is the “envy of the angels” hence the name Angel’s Envy! First, I’ve got a phenomenal & creative team and they are much better at recipe generation than I am. In recent years, I’ve come to learn I am a far better editor than I am creator. Second, my business requires my attention in too many other areas. Third, I’ve been in a real creative rut because ::gestures broadly at everything:: I mean...cocktail recipes. Now? Woof. Easy to fall down the “who gives a shit?” rabbit hole. I did, however, have my interest piqued by the proliferation of non—alcoholic cocktails. That, combined with my own diminishing consumption means that sometime around mid-Summer, I got hell-bent on creating a spirit-forward tasting drink that was, in fact, spirit free. Cold Brew Coffee How to recreate my cold brew at home. . WHAT YOU’LL NEED • 200g of filter roast coffee • 2lts water • or adjust to 10:1 (brew water:coffee) . TOOLS • Toddy Cold Brew System (A French Press and filter paper will do the job) • Scales . METHOD 1. Insert felt filter into the brewers and rubber plug. 2. Grind 200g of coffee on a coarse setting slightly coarser than French press 3. Measure 2litres of water 4. Add coffee grounds and water to Toddy brew system (if you’re using a French press start here) 5. Set aside in a controlled temperature, I use a fridge, for 14hrs. 6. Release the plug to drain and filter into a carafe. (French press, filter brew through paper filter into a carafe) 7. Enjoy over ice. In all actuality old fashioned refers to a style of drink from a period in cocktail history when some of the expressions of spirits available for consumption needed a little dressing up so to speak. . Its a straight forward, spirit-driven cocktail and when made properly, the base spirit should shine bright and true with subtle accents of flavour and complexity being layered in to the drink from the additional ingredients. . GLENGOYNE 1998/2018 19 YEAR OLD SINGLE CASK #1921, 56.6% and 594 bottles . Feel very lucky to have pulled this bottle at RRP, a rarely seen Glengoyne single cask - my first one. 100% European Oak sherry cask goodness. 🤤 Thanks to @royalmilewhiskies for the safe delivery. . Now with any hot bottle released these days, what’s one of the first things that happens? Some end up on auction! And sure enough, and I saw several listed on the two major auction sites the previous weekend, selling for £290-£300 before commissions/VAT. . If you were the seller, you paid £190 for the bottle, let’s say £10 for delivery, and £5 to list it. That’s an easy £85-£95 profit for basically doing nothing. . So it was interesting to see RMW send an email last Thursday about their new “Drammer’s Reward,” a pro-bottle opening/anti-flipping program. . In an effort to thwart flipping and encourage customers to open their bottles, RMW is doing something interesting. They price certain hot bottles at £5-£10 above RRP. £5 for those under £100, £10 for those over. For online orders, if the customer agrees to have his name and order number written on the bottle, he/she will receive a £10 or £20 voucher to use on the next order. This is optional. For store purchases, if the customer comes back later with the bottle open, he/she gets that same £10 or £20 “reward.” . For store purchases, the voucher entices you to open your bottle. You pay more upfront but you get it back and then some when you crack the bottle. And once one’s open, obviously it can’t be resold or sent to auction. Now I didn’t see any “fine print” about the rules and stipulations... can I come back 5 years later after I finally crack a bottle to receive a voucher? 🤪 . For online orders, the name and order number on the bottle is a deterrent to flipping. I guess you *still* could flip a bottle even if it had your name on it, but then I assume you’d be banned on RMW. If the other shops also cared (I’m not sure they do), they could potentially have a shared blacklist of people not to sell to. . Double strain and serve “up” in a coupe glass. Garnish with a grapefruit or lemon peel. Coffee + Brown Sugar Syrup* Ingredients: ½ cup of brown sugar ½ cup of hot fresh brewed coffee Add sugar to a mixing glass or vessel. Replace the whiskey with rum, the campari with sfumato rabarbaro, and the sweet vermouth with Banana liqueur. Then tweak the ratios a bit and add chocolate bitters. ‼️Exciting News ‼️ Tomorrow we are releasing our next installment of experimental whiskeys: a Rum Barrel Finished Whiskey using a barrel from our good friends @maggiesfarmrum. The whiskey is a 50/50 blend of our Rye and Bourbon and has rested in their used rum barrel for an additional 4 months to soak up all of the rum sweetness. We wanted to create a unique whiskey blend that married nicely with the flavors from the rum barrel - after several trials, we found that rye and bourbon at 50% each worked best. We bottled it at 100 proof as that is where the whiskey and rum flavors were perfectly balanced. It is one of our favorite bottling and will be sure to go fast! Bottles ($15 for each 200mL bottle) will be available tomorrow both online (shipping and pickup, link in bio) and in store. When @yungsleepyhead was searching for inspiration for a cocktail, she looked to Appleton Estate’s Master Blender Joy Spence, and the simple pleasures that inspired her day to day. I miss making cocktails. I took a wine key and a church key out of my back pocket today and placed them on the counter and got immediate hot eyes. Day 30 of Bourbon Heritage Month. Im going to bring it back to the Father of Bourbon himself, Elijah Craig and the Barrel Select Grenade bottle. This bottle is 125 proof and has a lot of the qualities of the seasonal barrel pick bottles that they release 3 times a year. It seems to be batched for consistency and I dont mind that. I just wish I could get it in larger bottles. Its hot at first taste so it will warm you up. I picked this up at the Bourbon Heritage Center at Heaven Hill and will always remember it as the weird Covid trip when I picked up William Heavenhill BiB and almost didnt get an EC Toasted with Tommy @bailey_bourbon_stl . When this bottle becomes empty it will become my Elijah Craig only infinity bottle! Ive said it before, Bourbon is more enjoyable with friends and the stories we make while hunting and drinking it are priceless. I cant wait for the time when we can share it together again. The secret door in Soho, the stygian gloom, the candles, the tinkly jazz, the bartenders who crouched down by your table to take your order, the impeccable service and flawless cocktails - it was a total thrill. An adventure. It’s where I took my future husband on our first date. I remember I drank a Sazerac because I wanted to impress him. It was a bar that spawned imitators around the world and launched so many bartending careers. I tried to get one last table this weekend but not surprisingly they were booked out. First aged in bourbon barrels for three years it was transferred to spend 7 months maturing in oak barrels initially used to age Voyage Estate 2014 MJW Cabernet Sauvignon from Margaret River in Western Australia. . As I pour Mainbrace in my glass the rums amber colour is beautiful, it reminds me of golden hour.
