‼️Exciting News ‼️ Tomorrow we are releasing our next installment of experimental whiskeys: a Rum Barrel Finished Whiskey using a barrel from our good friends @maggiesfarmrum. The whiskey is a 50/50 blend of our Rye and Bourbon and has rested in their used rum barrel for an additional 4 months to soak up all of the rum sweetness. We wanted to create a unique whiskey blend that married nicely with the flavors from the rum barrel - after several trials, we found that rye and bourbon at 50% each worked best. We bottled it at 100 proof as that is where the whiskey and rum flavors were perfectly balanced. It is one of our favorite bottling and will be sure to go fast! Bottles ($15 for each 200mL bottle) will be available tomorrow both online (shipping and pickup, link in bio) and in store. We are going to start this month by highlighting some of the Bourbons that help define our portfolio. Though this endeavor is new, their company’s other business, Ferm Solutions, has spent the past three decades making distilleries around the world better. Recognized as the top fermentation experts in the world. They have seen what works and what doesn’t and then perfected on that. Their initial launch was in 2018 and it was this “wheated” bourbon BIB. It takes a great deal of confidence to launch a BIB as your foray into the whiskey category, and once you taste the whiskey, that confidence is warranted. To make such a fine whiskey, they exclusively employ a sweet mash fermentation, low barrel entry proof along with exhaustive barrel maintenance. Uncle Nearest Whiskey from Tennessee. My daughter bought me this bottle as a Father’s Day gift. She had her own motives for buying it, and that’s fine. I believe that good whiskey is good whiskey. If it weren’t I would say so. This is excellent whiskey. it is 100 proof, when you first pour a glass it is very hot, there is a lot of alcohol, and if you don’t let it breathe you’ll get a nose full of rubbing alcohol. Once it has a minute or two to open up the aromas of vanilla and a slight smokiness come through. On the first taste, I found it to have a extraordinarily interesting bitter cherry finish with a bite in the middle of the tongue almost like rye. At first you might think that it is a strange combination, but let me tell you, it’s pretty damn good. The spices come through on subsequent sips but that background of what I can best describe as a bitter cherry note lingers. Some tasting notes have said that there is vanilla and clove, I didn’t notice the clove per se, but it did have some nuances of baking spices. It is not as hot in the mouth as you would think it would be by the nose. I paired the whiskey with the venerable Casa Cuevas Connecticut Gordo. #casacuevascigars does not make a bland or mild Connecticut cigar. It’s stood up exceptionally well to the bite of whiskey. It was an excellent pair. @reservoirdistillery Rye is a modern classic expression of rye whiskey in my opinion. So much depth and richness, without an overpowering hit of spice. Born out of a distillery that has pushed Virginia and craft distilling forward. Reservoir was set up in 2008 as a passion project between childhood friends @reservoirdave (definitely one of the best guys in the industry) and @reservoirjay09. It has pushed the boundaries of what is possible using a variety of sized barrels and championing single grain mash bills. They produce a unique core range which is Wheat, Corn and Rye. All are 100% single grain (so the wheat is literally that, 100% wheat grains, fermented and distilled). My favourite in the core range is definitely the rye, which is strange because I love wheated bourbons (their 100% Wheat and Corn aren’t bad either!). It’s made from 100% Virginia grown rye and double pot distilled. After that it’s aged in barrels that have been alligator charged (which is high enough to make the wood to look like alligator scales!) If you ever get the chance try a blend of 2 parts Reservoir Rye with 1 part Reservoir Wheat do it. Winner, Winner!! On the nose you get burnt sugar, cardamom, dark coffee and menthol. It’s pretty powerful on the palate (bottled at 50% ABV) with a vicious and fat mouthfeel. I get the same as the nose but with added dark chocolate, caramel, more baking spices and a hint of fruity molasses. The finish is long. Delicious drop!
