Warm up with Executive Chef Jitins French onion soup recipe Ingredients Butter - 125 grams Onions (sliced) - 5 medium Garlic (chopped) - 3 cloves Sugar - 5 grams Red Wine - ½ cup Beef Stock - 1,250 ml Thyme - 2 sprigs Bay Leaves - 2 pieces Beef (diced, no fat) - 500 g Salt & Pepper - As per taste Crostini - 1 piece per serving Gruyere Cheese - 30 grams per portion Method 1. Melt butter in a large pot over medium heat. 2. Add onions and sugar and cook until soft, without browning. 3. Turn down heat to low, and cook for 30-45 mins until onions are brown. 4. Bring heat to medium. Add the garlic, thyme and bay leaves. 5. Cook until garlic is soft. Add the red wine and reduce liquid to half. 6. Add the beef stock, beef and bring to a boil. Reduce heat and simmer for another 20 mins. 7. Ladle onion soup into an oven safe bowl with crostini on top. Cover with Gruyere cheese. 8. Bake it in oven at 375°F degrees until cheese has melted. 9. Most of the chefs get inspired from someone but my story is a little very simple and not too cliched. Being an introvert deciding and making choices has always been like a challenge. I always desired getting into Merchant Navy, pursuing Hotel Management or being a professional chef was never in plan. I watched a lot of YouTube videos, and thats when I came across this famous show, Ukraines got Talent in 2012, where Alexander Shtifanov came in picture, a famous bartender showcasing his skills. Amazed watching him flare and make drinks on the beat I happened to speak to my relative whos a bartender himself, on cruise, I decided to give it a shot. Post high school, I joined Rizvi College. My first industrial exposure was in JW, Marriot Mumbai. *Game Changing Exposure* Luckily I got to work in the banquet bar for 2.5 months, exactly what I wanted to do. But I believe God had his own plan, soon I joined the lounge kitchen. During pick ups from the bakery, I watched the chefs working. It drived me into a different world, my interest instantly changed. I was curious and I started spending time with the bakery chefs, learning and asking questions. I was lucky enough to have amazing faculties in college too, Chef Alvarez papa and Chef Colette, whom I can give credits for nurturing me in the right direction and help my love for baking grow. Post college, I had plans to move abroad but it didnt work out. Never the less Ive stepped into amazing properties and got an hands on experience as a professional. The journey has been a roller coaster ride, Working in a Hotel, Restaurant and Cruise, I learnt the variations in working styles & handling pressure and how to cope up with it. Throughout the years, its been a pleasure to come across so many people.This industry helps you build a family of your own, learning together, joking around,late nightouts post a hectic day, its all worth it. Off course you also sign up for tough working schedules, working without breaks, dealing with last minute orders and the list is endless. But trust me working as a team is the key to success. INGREDIENT - Parmesan - I love it on its own, or to jazz up a simple salad. Parmesan can make such a difference. It’s like a seasoning, like soya sauce . COOK AT HOME DISH - Definitely a roast, with potatoes, gravy, and all the trimmings. I even love doing a roast dinner with a nice meaty fish like monkfish, turbot or cod. . MIDNIGHT SNACK - Marmite on toast . PIZZA TOPPING - Quattro formaggi, because I love cheese. You can have it with a white base or a tomato base, but I prefer tomato because of the acidity. At Caffè Rojano I’ll always have it with some pancetta on top . COOKBOOK - ‘White Heat’, by Marco Pierre White. It’s a book that totally changed things for me. I love the way he talks about the industry. It’s not just about the food, it’s a cookbook that was so far ahead of its time. . ICE REAM FLAVOUR - Vanilla and Brown Butter Ice Cream from Caffè Rojano. I’m a bit biased here, but we worked a long time on the Whoopsy Splunker, based on my favourite flavour - vanilla. We whip some brown butter through it so you’ve got a lovely nuttiness . FOOD MEMORY - Being in Sweden with my wife Emma, Tom and Beth Kerridge, at what used to be Frantzen Lindeberg. I remember sitting down and seeing bread proving in the middle of the table; then it was taken away during the meal and cooked in a wood-fired oven and brought back with three different butters. Tom and I couldn’t get enough of it, but it was a 24-course menu and by the time it got to course 20 we were just stuffed on bread! It blew me away . COCKTAIL - Tom Collins - but I like it with lime rather than lemon. At CiCi’s Bar we make it with lime, soda, gin, and a little bit of sugar syrup - delicious . WORLD CUISINE - We go to Greece most years and I love Greek cooking, especially the taramasalata and lamb kleftico. Greek cuisine is Greek cuisine so colourful and fresh . Quando fui convidada para a montagem do curso online de CULINÁRIA FIT, passei por todo o processo de seleção, e o diferencial de propor receitas caseiras, práticas e saborosas nos meus protocolos nutricionais, foi o primeiro destaque. Quando aceitei o convite eu pensei: “Agora é a minha oportunidade de compartilhar todo o sabor que eu sinto ao fazer uma receita “fit de verdade” com um alcance numeroso de pessoas que realmente se preocupam com a alimentação, e querem seguir um estilo de vida com o prazer de escolher e preparar os alimentos sem o “peso” ou a “obrigação” de estar em dieta”... @faleiroalisha - My journey as a Pastry Chef! The board exams had just wound up. With nothing to do, I took a stroll to the kitchen. It was my favourite place at home to unwind and de-stress. I remember during study leave, I would find myself there much too often. It was the time for making decisions; decisions about the future. Growing up I’d always wanted to be a media journalist. Journalism interested me from the time I was in the eighth grade. With my mum’s encouragement I’d take part in various debates and elocution competition, winning quiet a many. But it looks like life had different things in store. I am the eldest of three siblings. For my parents, I was much the guinea pig, coz my experience was their first experience. However, I am extremely grateful I could make my own choices. I was never forced into doing science in spite of my good grades and so at this time too, I had my own choices. I remember this day very vividly. All of us family friends had gone to spend the evening by the pool and since I loved cooking I’d made the snacks for after the swim. One of my mum’s friends casually mentioned to me why I didn’t take up hotel management as a career choice. I mulched over the idea and it sat in quiet well. In the days to come Id told my parents that thats want to do . Being the supporting parents that they are, never once did they disapprove. They helped me figure of how to go about it and apply for the all India entrance exam for the institute of hotel management not sure about what I was getting into. This was a time much before cooking was a glorified profession and Sanjeev Kapoor was probably the only known chef that time. I did some coaching, cleared the exam and got enrolled into IHM Goa. The twist happened then. Three years whisked by in what seems now like the snap of a finger. Decisions again. Where to next! I had a few job offers and I chose to work with the Oberoi Hotels and resorts in maximum city, Mumbai. I joined Trident Bandra Kurla and it was probably the best thing that happened to me. My first time being away from Goa, the place I called Home! There was no looking back after this, it was a long way to go...... - @chefs.memoir on Instagram

Your destiny lies in your Hands. No not in me trying to kill someone, that was just me having fun with the Photographer ( @mr.itchyfeet ). 😄 When I stepped out of school ( convent) and joined college I was not like most of the girls. I dint know how to look pretty. Or be timid. I hated photographs. I stood out amongst them. Not in the best of ways. When I had to get an internship at a hotel ( I was doing Hotel Management), the first hotel after clearing all rounds, told me come back after a month, loose 10kgs and then we can take you. Another one categorically told that I can remain only back of the house. No Front office for me. No house keeping. Even restaurant service- only back of the house. No going in front of the guests. But yes the Kitchens accepted me. Accepted me well. I took it that am not worth being front of the house. I am not presentable enough. No it did not motivate me to loose weight or anything, I just believed I am meant for the Kitchens. And in those days Chefs never met Guests. So I was safe. But things changed. A few years later, I was asked to be the Judge on a TV Show. Me. Imagine. Not one episode or two but about 50 episodes. Then I was asked to advertise for a Kitchenware brand. Today I am being asked to brand ambassadors for Brands. I am doing Photo shoots. Times have changed. Today I wish I could speak to those HR guys who told me I wasnt worth being in front of the House. Meet Rashika Kulshrestha, 23 year old chef her journey started with the sentences like kya re tu babarchi banegi ab. Rashika, a 23 year old chef works for a restaurant and recently started a food delivery chain Shubh Rasoi. Her mother is the true inspiration behind her job. Two year back she got his back injured. Doctors clearly advised for bed rest and change the profession because she can not do heavy works anymore. Without creating any single negative thought in her mind, she recovered herself and started working again for Indian cuisine as its her favourite department. She believes everyday is a new journey. Everyday has its new challenge and from which I will grow internally. From Growth and Money you can get success but from Internal Learning and building knowledge your mind will grow. According to her one is happy from heart then all is well. Do not run behind Growth or money- you will only be happy and satisfied at a certain point. But, from learning and knowledge and practicing your skills you will achieve great heights (in terms of self satisfaction). According to Rashika, she will only achieve success when no one in this world will go empty stomach to bed. Her purpose is to feed everyone and that can only happen if no one sleeps hungry. Spread the word of love and care to everyone. We all need it. Do not fight for the sake of anything. We are children of God and even his senders. Do not waste food. In case you have extra food, feed someone. Instead of giving money to anyone- give them food. Instead of Donations, donate food. After all, we all work for food and shelter- Let’s Start doing it with others too. Shubh Rasoi, currently delivering in Noida and prepares food at home with full hygiene & Sanitation.
