【糖漬製作「#檸檬糖片」簡單上手！還能搭出超夯檸檬西西里咖啡、風味料理】 . 酸溜溜的檸檬可以用於調味、製作飲品，香氣豐富又能促進食慾，檸檬汁在料理中好運用，然而常被捨棄的檸檬皮也含多種抗氧化物質，不妨連皮帶肉把檸檬糖漬做成「檸檬糖片」，保留營養，從酸轉成酸甜滋味更加分。檸檬糖片還能延伸用於其他料理，涼拌小菜、檸檬咖啡、飲料，還有甜點都超好變化！ . 檸檬糖片酸中帶甜的風味，有解膩、使口氣芳香的好處，而甜味減緩了酸味更好入口，在家製作檸檬糖片保存，不僅可以作為簡易的順口點心，料理上還能變化，而製作檸檬糖片還保留了檸檬外皮上的抗氧化物質，如維生素 C、類黃酮素，以及有機酸成分，促進食慾提升，準備好檸檬、砂糖或蜂蜜、密封罐，就可以開始了。 . 📌糖漬檸檬糖片試著做 將檸檬切片後以糖漬保存，藉由糖分緩和酸味並達到風味融合，可說是保存檸檬的巧妙運用法。擔心酸味過於強烈者，可以選用已成熟的黃檸檬，酸度會稍微少一些。而檸檬內白色皮分佈較少的，苦味也會少些。 ✔️處理檸檬：將檸檬表面洗淨，並以廚房紙巾完全擦乾無水分，切成薄片狀。 ✔️糖漬製作：準備乾淨無水分的玻璃密封罐，以一層砂糖、一層檸檬片的堆疊方式交疊放入瓶罐中，最後在最上方以砂糖覆蓋。若不使用砂糖，可用蜂蜜進行同樣步驟操作。特別留意避免水分或濕氣進入瓶中。 ✔️密封並等待：密封後放入冰箱冷藏，約 3 ～ 5 天後等待糖滲透入味。若為蜂蜜糖漬，時間則可少一點。糖漬的過程檸檬會出水為正常現象，後續則可將罐內檸檬釋出的汁與糖分相混合，如妥善存放，可保存 1 週以上，甚至更久。 . 製作完成的檸檬糖片，酸甜兼具，相當適合作為蜜餞點心淺嚐。檸檬糖片不只可以單吃，將薄片切塊或小丁後，可用於醃漬涼拌、水果料理，涼拌如小黃瓜或白蘿蔔片，適量的鹽巴先抓醃出水後，加入檸檬糖片小丁與醋拌勻，並適度調整甜度至喜好的風味，運用檸檬的酸香氣味，比醋更帶有果香。而在無糖優格裡加入檸檬糖片小丁與罐內的檸檬糖漿，讓優格自帶檸檬香氣，淋在水果上很好搭配喔！ . 📌熱門的西西里咖啡變化版 近年熱門的「西西里咖啡」，正是檸檬與咖啡結合的代表飲品，一般製作西西里咖啡會使用黃檸檬原汁加糖熬煮成檸檬糖漿後，與濃縮咖啡相添加融合。而使用糖漬檸檬片來發揮，正好代替檸檬糖漿，製作時更省力，只要沖泡約 150 ml 的咖啡，經過放涼冷卻並加入冰塊，接著在咖啡上放上 1 ～ 2 片糖漬檸檬片（可再加入適量罐頭內的檸檬糖水），等待酸甜味釋出，簡易的西西里檸檬咖啡超快速就能完成！若是擔心酸味不夠，可自行額外滴入新鮮檸檬汁。 . 📌檸檬氣泡咖啡 另外有一種「檸檬氣泡咖啡」，適合非咖啡成癮者，咖啡與汽水居然也非常對味！沖泡 100 ～ 120 ml 的咖啡液後放涼，倒入杯中約 3 分滿汽水、放上 1 ～ 2 片糖漬檸檬片與適量冰塊，這杯檸檬氣泡咖啡適合喜歡微甜口味者，喝得到咖啡香與檸檬、汽水氣泡的口感，順口不苦澀。 . 製作檸檬咖啡，適合以整片檸檬糖片為主，攪拌時才不易散開，最後還能直接吃掉，感受檸檬醃漬後的香。至於咖啡如何挑選才能和檸檬更對味？選擇烘焙程度較低的淺焙豆，而酸味較少、具果香味的咖啡豆，更能彼此映襯。檸檬糖片除了搭咖啡，用於其他茶類飲品也沒問題！ . 喜歡點心烘焙的人，再把檸檬糖片放入蛋糕中應用，例如混合入蛋糕、麵團中烘烤或鋪在頂部，讓檸檬糖片轉變成果乾，而檸檬香氣藏於其中提供驚喜，讓甜點更增味。保留檸檬皮的糖漬檸檬片，好製作又好搭配。趁著檸檬在夏秋之際尚有盛產，動手試試吧！ . 圖一：freepik 圖二：sandra宅在家的幸福料理 https://icook.tw/recipes/343093 圖三：KOKO好食光 https://icook.tw/recipes/344402 . #icook #愛料理 #生活誌 #料理 #生活小知識 #食譜 #recipes #cookbyme #家常便飯 #晚餐 #家常菜 #檸檬 #咖啡 - @icooktw on Instagram
