These are one of my favorite sweet treats to make. They are super easy and a great way to use up some old bananas 🍌 . . All you have to do to make these muffins is throw all the ingredients minus the chocolate chips in a blender and pour it in a muffin tin. Top with a few chocolate chips. Bake at 400F for 8 minutes. Each muffin has around 100 calories if you make 24 of them. A lot of these calories come from the peanut butter. You could certainly get creative and come up with some ways to reduce the amount of peanut butter if you are interested in being more calorie conscious. There are other nut/seed butters that are lower calorie but more expensive. . . Give these a try next time you have some bananas that are about to go bad. Make sure you understand that while these use healthier ingredients they are still very easy to overeat. You need to be cautious you stay within your goals. Because they are mini muffins, it is super easy to just pop them in your mouth mindlessly. Just because they use bananas and peanut butter as the main ingredients doesn’t make them “healthy”. What do you think about Calorie Counting? . I’m all for it, and that’s why I recommend that you weigh your food as long as it DOESN’T develop into an obsession. . Accuracy is of paramount importance and if it’s worth doing then you may as well do it right. Right!?. . ☝️However, I have to point out some issues with calorie counting because some people are so involved in the details and accuracy that it does almost become an obsession. . When you check a million databases for 1 item of food to make sure that the calories and macros are correct or if you have to make sure that you hit your macros to the gram to get a good nights sleep then you probably need to hear this more than most. . Calorie tracking isn’t accurate. There, I said it. That’s the truth. I’ll give you 2 examples. . . Nutrition labels can be 20-30% off - or more! . Now let’s take a look at the bananas. Let’s assume they’re the same banana at each size. Depending on the size and ripeness, the calories can be completely different. I didn’t write the calorie differences because I really don’t know and I don’t care. . The take home message is that calorie tracking isn’t 100% accurate, but as long as you’re consistent with the way you track then you’re good. Don’t let the minute details get to you or ruin your day. Ultimately, It’s all an estimate. So chill out🤙 . bananas make my child constipated.⁠ ⁠ This is what so many of you tell me, and my answer is...perhaps. Remember, constipation can be due to many factors, including overall diet, illness, lack of movement. But since bananas seem to be such a hot topic, here ya go!⁠ ⁠ 🍌= a great source of many nutrients, particularly potassium, magnesium, and B6. But really, we eat them bc they’re sooo delicious, convenient, and cheap! ❤️. We eat them almost every single day⁠ ⁠ Heres what happens as they change in color.⁠ ⁠ GREEN — YELLOW— BROWN⁠ as the 🍌ripens:⁠ ✅resistant starch content decreases⁠ ✅tastes sweeter - resistant starch turns into sugar⁠ ✅gets digested easier and quicker (causing a spike in the blood sugar)⁠ ✅some of the micronutrient levels decrease - happens with all produce to some degree once harvested⁠ ✅antioxidant levels increase⁠ ⁠ For babies and toddlers, really green bananas may be too hard on their little tummies and can cause or make pre-existing constipation worse. However, they are a great source of prebiotics. I purchase unripe banana and start offering it to C when it is predominately yellow with a slight hint of green (as pictured). Yellow ones disappear ever so quickly around here, and the brown ones get used for baking 👍⁠ ⁠ ⏰if you want to speed up the ripening process, place in a brown paper bag. if you want to slow it down then place in the refrigerator.
