The original inspiration for this wine was to have a way to pair #Nyetimber with pudding, but turns out its also a brilliant match for lightly spiced savoury dishes. Our Demi-Sec is 100% chardonnay but a totally distinct blend from the Blanc de Blancs. We start thinking about the (eventual) dosage all the way back at base wine stage, and prepare the blend accordingly. * originally launched simply as Demi-Sec. MILK Cereal Milk - popularised by @christinatosi and the epic @milkbarstore - is an amazing trip down memory lane and a flavour concept that can now be found in ice creams, coffees and beers. For our second bottled cocktail we created a ‘cereal milk liqueur’ - made from milk washed blended Scotch, cereal milk hydrosol, vanilla, sugar and acid. To make the cereal milk hydrosol, we toast cornflakes in the oven until golden brown, then blend with whole milk and leave to rest. After the milk has been flavoured, we strain off all the liquid and distill to capture a highly aromatic, crystal clear form of that cereal milk. We use this hydrosol to dilute the milk washed whisky down to 24% abv. Once sweetened, the liqueur lands at 21.8% abv. The cereal milk liqueur is blended with a white chocolate distillate, pineau des charentes blanc, ‘cereal’ syrup and orange flower - diluted and bottled. 2019 Morgen Long Willamette Valley Chardonnays are all in barrel and topped up. The first pick was 9/7/19; the last pick was 10/7/19. All in, 15 tons of Chardonnay from 10 blocks at 6 vineyards arrived. I started almost every ferment in steel this year before transferring to barrel in an effort to encourage native yeasts and build momentum with less oxygen after browning juice. I am thrilled with the uniqueness of each ferment in a “challenging” growing season, where modest chaptalization was the rule rather than the exception in my program. A few ferments started fast and completed quickly, a couple were slow to start but steady until dry; one was fast then slow, as a precocious malolactic bacteria engaged. After topping up, about 42 barrels of various sizes are full - 114L, 228L, 283L, 350L and 500L. _____________________________________ There is an profound energy in these young wines. It reminds me of 2016, though a bit lower in alcohol. There is some reduction, but mostly it is clean, faceted, chalky with high acidity and vibrant flavors from appropriate yields in a somewhat wet, definitely fitful autumn. The pleasure is that the work is basically done, now time will work its magic, as a young liquid that is tensile, fresh, angular will evolve a richness and texture elaborated from the density of lees and oak integrating into the wine. _____________________________________ I am beyond grateful to work with such an array of growers and farmers who all deliver on quality. To understand why, we need to understand the “GO”… This is a measurement equal to 180ml and in Japan, it’s the starting point for the standard measurement of sake volume. Often in Japanese restaurants, sake is ordered by the Go. Ordering 2 Go for example, would be equivalent to half a standard sake bottle. A “Koku” is equal to 1000 Go or 180 Liters. This unit is very important as sake breweries measure their production volume in Koku. Vad sägs om Kaffe Vodka med Solerametoden från två lokala skånska producenter. Råkaffe och 2 olika rostprofiler rostade i Malmö som sedan använts i en destillation av förstaklass på Ven. Metoden enligt mästaren själv: ”Principen är att vi tillverkar en vodka med en specifik ”mashbill” som premierar kaffenoter. Denna destillerar vi sedan om i vår Coffey still med kaffe i vår ångkorg/botanikkorg. Detta kommer ge en Vodka med en fet smörighet, runda trätoner och en gräsig örtighet från sädesreceptet och upplyft av kaffet. Till detta räknar vi med en rund, tydlig arom av kaffe med lätta, fruktiga toner och en lätt pepprighet. Denna Vodka vill jag sedan solera-lagra med rostat kaffe på ekfat. Heiwa Shuzo Yuzushu + + Heiwa Shuzō was founded in 1928. The brewery is located in a valley surrounded by mountains, blessed with high precipitation, resulting in a boundless supply of good quality soft spring water. This Yuzushu is made with a one-year-old Junmai Sake and Yuzu juice, at a 1 : 1 ratio. This is higher than most Yuzushu produced elsewhere. The yuzu fruit is grown in Wakayama and is juiced with its peel, giving all the qualities of the fruit, sweet, sour & bitter. Here are two Rosé inspired sakes. Asamurasaki (朝紫) on the left by @kiuchibrewery (木内酒造)is made with an ancient rice variety that’s naturally red in color. “Ozé x Rosé” by Ryujin Shuzo (龍神酒造), however, is made with difficult-to-use red yeast. Both are exceptionally vibrant and fruity, filled with fresh red fruits that is balanced by a good amount of acidity, and a slightly funky finish. Visited Nanbu Bijin Brewery in Iwate, Japan last week and also had a tour of their new 2nd Brewery only minutes away from their original brewery. The 2nd brewery has a brand new automated bottling facility and large temperature controlled warehouse. They have also incorporated an automated Koji nurturing system.
