Partnering with family-owned sake brewery Masuda Shuzo, IWA 5 Sake was born 🍶 . True to his Champagne roots and instincts, IWA is not a single brew but the result of blending, referring to the five elements involved in creating the sake . The rice is from three varieties: Yamada Nishiki, Omachi, and Gohyakumangoku and five strains of yeast are brought together . JR Brewery Journey Day 10 #katsuyama #sake #brewery in #sendai city #miyagi #japan Not to sound biased but it was an honor to visit the brewery of one of the best sake brand in Japan. A brand that once was a designated brewer for #datemasamune #samurai and his lords the brewery despite winning many #competitions and having #highdemands actually recently moved to a smaller brewery to improve efficiency and quality but not quantity. #respect I felt lucky to be alive and got to personally see their operations in detail and got to try some of their brews straight outta tank including a completely new strain of #sakerice that they’re testing out. The #tanuki (raccoon) is apparently a thief in disguise that tried to purchase sake with fake money and got killed. True story from the owner himself. Also got to see the #centrifuge machine for pressing sake which I learned that the benefit of it is that it draws out #nakadori from the whole batch. Brewery is not open to public but if you’re around the area for some reason, stop by #hinodegura #sakeshop and the owner promised to tell visitors all about Katsuyama sake. He was selling something I’ve never seen before called #tamagosake #eggnogsake at 10% abv and apparently good for when you catch cold. I love these Junmai Ginjo cup sakes, not only because they pay tribute to my favorite characters of “Gegege no Kitaro” ( an manga series from the 60s, whose creator shares the same hometown as @chiyomusubi ), but also because how delicious and well made they are! Chiyomusubi Shuzo is among very few breweries in Japan who emphasizes on the use of Goriki rice, an ancient varietal that was extinct at some point, but revitalized in the 1980s. Heiwa Shuzo Yuzushu⁠ +⁠ +⁠ Heiwa Shuzō was founded in 1928. The brewery is located in a valley surrounded by mountains, blessed with high precipitation, resulting in a boundless supply of good quality soft spring water. This Yuzushu is made with a one-year-old Junmai Sake and Yuzu juice, at a 1 : 1 ratio. This is higher than most Yuzushu produced elsewhere. The yuzu fruit is grown in Wakayama and is juiced with its peel, giving all the qualities of the fruit, sweet, sour & bitter. We have two new smaller formats products from Kagoshima, Japan! Despite their cute size, both spirits pack a punch! Kanosuke New Born 2019 - our newest Japanese whisky distillery recently won Best Japanese New Make (World Whiskies Awards 2020) for this anticipates New Born whisky. Aged for 16 months in ex-bourbon casks that previously held shochu, this higher proof whisky has gentle maritime influence from its coastal Kagoshima location. Komasa Gin - from the same family as Kanosuke, this bright, citrus-y gin is made with tiny Komikans, Japanese Mandarins. Each fruit doesnt get much bigger than a few centimeters but these citrus bombs are delightfully juicy and rich with flavor. The Komasa Distillery recommends this rice-based gin with orange juice. Why are standard sake bottles 720ml when wine bottles all around the world are all 750 ml?? To understand why, we need to understand the “GO”… This is a measurement equal to 180ml and in Japan, it’s the starting point for the standard measurement of sake volume. Often in Japanese restaurants, sake is ordered by the Go. Ordering 2 Go for example, would be equivalent to half a standard sake bottle. A “Koku” is equal to 1000 Go or 180 Liters. This unit is very important as sake breweries measure their production volume in Koku. Furōsen Junmai Ginjo Fusanomai Milky, silky, and ricey. Elegant but powerful. I like the spreading acidity and the crisp finish. Lingering bitterness along with the milky umami-rich taste is pleasant. I imagine that this sake tastes great when warmed. I want to mature a little bit and taste again. Here are two Rosé inspired sakes. Asamurasaki (朝紫) on the left by @kiuchibrewery (木内酒造)is made with an ancient rice variety that’s naturally red in color. “Ozé x Rosé” by Ryujin Shuzo (龍神酒造), however, is made with difficult-to-use red yeast. Both are exceptionally vibrant and fruity, filled with fresh red fruits that is balanced by a good amount of acidity, and a slightly funky finish. Visited Nanbu Bijin Brewery in Iwate, Japan last week and also had a tour of their new 2nd Brewery only minutes away from their original brewery. The 2nd brewery has a brand new automated bottling facility and large temperature controlled warehouse. They have also incorporated an automated Koji nurturing system.
