Wanna tell a fukn’ story about vision. We are not chefs & never claimed to be. Although some of our crew are, & are better than us in many ways. We just desired to eat this way, a plant-based diet. We came from egoic industries prior that were more based on looks that valued materialism & youth. We desired deep healing & thus our bond was formed, many moons ago, from the innate want to feel good within ourselves, & to do good for others, in a purely selfless way. Came across this pic from our first experience working in a professional kitchen setting. This was what once was Portobellos commissary kitchen, 12 years ago. We shared space with 5 other vegan businesses, including a restaurant. We had one table & one rack to work from. We were graciously offered unlimited access to the space at a very generous rate, which we paid for in trade with our famed raw cannolis that we sold through the restaurant. Anybody remember? Thank you Chef @aaronpatrickadams 🙏🏼 We took full advantage of that ability to work tirelessly. Having no experience beyond home cooking & straight fire energy to keep moving forward, we busted A nonstop. That drive & determination remains. Looking back over the years, moving with sheer blind free will, & with the support of our community here in Portland, it’s truly amazing to see how far we have come. Everything we have dreamed of, has come to pass. Of course we didn’t dream of sleepless nights, the 16+ hour work days, the financial struggles, the unending barriers to entry. & of course we didn’t dream of what has transpired with 2020. However, we have held steadfast to our vision, & to the broader scope of our dreams. To being a business of integrity, moving consciously, being some sort of light & pathway for others whom are on their healing journeys. It’s been a wild ride. Looking back at the photos, the emails, the trials & tribulations..now it’s more fondly. It’s smiles over tears. Even though, there were plenty of tears. And so, going forward, we’ll look back at the strides of this year as well with pride and strength. Just wanted to randomly shout out the process of the JOURNEY, of the VISION. Keep moving forward!
