Blackened Cod Fish Tacos on Green Plantain Tortillas with Peach Salsa . . It’s been awhile since I’ve made tacos I think. I posted the steps here in case you are new to the page and haven’t seen me post about the tortillas before. They are easy to make, taste similar to corn, and are very durable (they hold up well to filling). You must make them in to tortillas right after cooking and blending the plantain, but then you can wrap the tortillas and they will keep sealed in the fridge for several days. . To make: chop green plantains into chunks. Add to salted boiling water. Boil for 10 minutes. Drain and rinse with cool water. Peel skin off. (Be careful as they will be hot!) Put plantain in a food processor and blend until it forms a ball (see video). (If you keep blending, it will re-distribute the dough and make it difficult to remove from the food processor) Coat hands with coconut oil and knead dough in your hands briefly before dividing it into balls. I generally get 4-6 tortillas per plantain. Use tapioca flour and roll each ball until thin. Flip the dough with each roll to prevent sticking. Use a bowl to cut into circles. Save scraps and re-roll. Continue until all tortillas are rolled. Cook on medium heat for 2-3 minutes per side. Use non stick pan or a lightly oiled pan. Use immediately. Keep uncooked tortillas in sealed bag separated with tapioca flour or parchment between each piece. Bees wax bags work great to store them! . . My cod came from @meridianfarmmarket. Woah, look at all the color on these! These are from Nicos Taco and Tequila Bar. From left to right its a shrimp taco, carne asada, and scallop on the end. The flavors were bright and the ingredients were prepared with care, and it shows in the overall taste. The staff at Nicos is very attentive and friendly, which is important for overall experience. These tacos dont come cheap, at 4.75 a piece I may have been looking for something a little more unique. Happy TACO Tuesssssday! Today features my favorite TACO combination of all time - The Al Pastor TACO!! This combination features savory pork, topped with some pineapple, onion, and cilantro. Heres how you make them: Pulled Pork, crockpot style: ¤ cut of pork butt ¤ 4 TBSP paprika ¤ 2 TBSP celery salt ¤ 2 TBSP salt ¤ 2 TBSP black pepper ¤ 2 TBSP cumin powder ¤ 2 TBSP brown sugar ¤ 1 TBSP oregano ¤ 1 TBSP cayenne pepper ¤ 2 TBSP dried sage ¤ 2 Bay leaves ¤ 1 TBSP mustard Crush the bay leaves, combine all ingredients and cover the entire butt. Cook in crockpot on low heat for 8 hours. When done, shread the meat, add chopped fresh pineapple, cilantro, and purple onion. Best-Ever Mexican Tostadas⠀ INGREDIENTS⠀ 1/2 small red onion, sliced⠀ Juice of 1 lime⠀ 2 tbsp. butter⠀ 2 tbsp. vegetable oil, plus more for frying⠀ 1/2 small yellow onion, minced⠀ 1/2 tsp. dried oregano⠀ 1/2 tsp. chili powder⠀ Kosher salt⠀ Freshly ground black pepper⠀ 2 (15.5-oz.) cans pinto beans, drained and rinsed⠀ 6 corn tortillas⠀ FOR TOPPING⠀ 1 1/2 c. cotija, crumbled⠀ 1 avocado, sliced⠀ 4 radishes, thinly sliced into rounds⠀ 1 jalapeño, thinly sliced⠀ 1/4 c. cilantro leaves⠀ 1 lime, sliced for serving⠀ ⠀ DIRECTIONS⠀ 1. In a medium bowl, combine red onions and lime juice. Set aside to quick pickle while preparing the rest of your ingredients.⠀ 2. In a large skillet over medium heat, melt butter and heat oil. When oil is hot and butter is foaming, add yellow onion and cook, stirring occasionally, until onions are soft and translucent, 5 minutes.
