Happy TACO Tuesssssday! Today features my favorite TACO combination of all time - The Al Pastor TACO!! This combination features savory pork, topped with some pineapple, onion, and cilantro. Heres how you make them: Pulled Pork, crockpot style: ¤ cut of pork butt ¤ 4 TBSP paprika ¤ 2 TBSP celery salt ¤ 2 TBSP salt ¤ 2 TBSP black pepper ¤ 2 TBSP cumin powder ¤ 2 TBSP brown sugar ¤ 1 TBSP oregano ¤ 1 TBSP cayenne pepper ¤ 2 TBSP dried sage ¤ 2 Bay leaves ¤ 1 TBSP mustard Crush the bay leaves, combine all ingredients and cover the entire butt. Cook in crockpot on low heat for 8 hours. When done, shread the meat, add chopped fresh pineapple, cilantro, and purple onion. i made a version of birria tacos the other day. my second time making them. first time i used short ribs only, and i was tempted to drive to my mama house and slap her (but i didn’t cuz she got hands)...this time i used both short ribs AND chuck — and i honestly prefer the two combined. it was easier on my pockets and gave me a meatier texture as well as being luscious af. for this second time, i used my pressure cooker instead of my oven, and it’s *hands down* my favorite way to do it now. the meat is falling apart like all of 2020, and the monterey jack cheese is just 🤤 i’m gonna make these one more time before i give y’all the recipe because i wanna add a little more heat. they’re utterly delicious and melt in your mouth, but i found the heat level to be weaker than i wanted. so, lemme play around with adding more arbol chilies and chipotles...then you’ll get it. but in the meantime, i’m gonna slurp tf outta these incredibly juicy ooey gooey tacos for the 99 and the 2000 #birriatacos #tacos #birria #shortribtacos #birriaderes #carnaldish - @chefresha on Instagram

🇲🇽Viernes de Sazón Mexicano..... Delicia Cultural🇲🇽🇲🇽😋😋 La palabra taco proviene de la palabra náhuatl ‘tlahco’ que significa “mitad o en el medio”, refiriéndose a la forma en que está conformado. El verdadero origen del taco no se conoce pero se cree que fue creado en el México prehispánico. Se tienen dos referencias de esta época: la primera es de Moctezuma, quien utilizaba de cuchara las tortillas hechas en piedras calientes, formando algo parecido al taco que conocemos hoy en día; la segunda es la forma como enviaban la comida a los hombres que trabajaban todo el día en el campo, envuelta en tortillas. La mesa de nixtamal más antigua proviene del año 1,500 antes de Cristo y se encontró en Soconusco, Chiapas. La primera taquiza que se documentó fue en los tiempos de la conquista española, hecha por Hernán Cortés en Coyoacán para sus capitanes. Según Bernal Díaz del Castillo en su crónica: “Historia verdadera de la conquista de la Nueva España”, se servía carne de cerdo con tortillas. Los tacos pueden ser de carnitas, longaniza, carne asada, cochinita, árabe, barbacoa, birria, de cabeza, de pollo, mariscos, entre otros. Por tipo de preparación existen los siguientes: Dorados: originario de Sinaloa, se elabora con tortilla recién hecha y rellenos de camarón, res, pollo, frijol o papa. La tortilla se enrolla o dobla por la mitad y se fríe en aceite. Suadero: dos tortillas fritas y encima se pone el suadero (carne de res). Se sirve con cilantro y cebolla. Canasta: se calientan al vapor y son conocidos por ser muy económicos. Placero: este es el taco normal de tortilla caliente y cualquier relleno de carne o marisco. Guisado: hechos con platillos típicos mexicanos como chicharrón, mole, cochinita, etc. Ahogados: en salsa de tomate, sin picante. Doblados: una tortilla doblada y frita en aceite, rellena de papa, carne, frijoles, etc. Comer tacos es un arte, “el arte de comer con tortilla”. Cualquier día es bueno para disfrutarlos y como dice ese famoso refrán mexicano: “un taco no se le niega a nadie”. Best-Ever Mexican Tostadas⠀ INGREDIENTS⠀ 1/2 small red onion, sliced⠀ Juice of 1 lime⠀ 2 tbsp. butter⠀ 2 tbsp. vegetable oil, plus more for frying⠀ 1/2 small yellow onion, minced⠀ 1/2 tsp. dried oregano⠀ 1/2 tsp. chili powder⠀ Kosher salt⠀ Freshly ground black pepper⠀ 2 (15.5-oz.) cans pinto beans, drained and rinsed⠀ 6 corn tortillas⠀ FOR TOPPING⠀ 1 1/2 c. cotija, crumbled⠀ 1 avocado, sliced⠀ 4 radishes, thinly sliced into rounds⠀ 1 jalapeño, thinly sliced⠀ 1/4 c. cilantro leaves⠀ 1 lime, sliced for serving⠀ ⠀ DIRECTIONS⠀ 1. In a medium bowl, combine red onions and lime juice. Set aside to quick pickle while preparing the rest of your ingredients.⠀ 2. In a large skillet over medium heat, melt butter and heat oil. When oil is hot and butter is foaming, add yellow onion and cook, stirring occasionally, until onions are soft and translucent, 5 minutes. Add oregano and chili powder and season with salt and pepper and cook until fragrant, 1 minute more.⠀ 3. Add beans and 1/2 cup water. Cook, mashing beans with a wooden spoon or potato masher, until desired consistency is reached. When beans are thick and almost all water has evaporated, remove from heat.⠀ In a medium, high-sided skillet, add vegetable oil until it is 1/2 deep. Heat oil until a drop of water sizzles when added to the pan. Using tongs, fry 1 tortilla at a time until golden and crisp, about 20 to 30 seconds per side. Transfer to a paper-towel lined plate and salt immediately. ⠀ 4.
