Mais que vois-je ? La babka !!🤩 Une délicieuse et moelleuse brioche qui va vous donner beaucoup de plaisir!! Laissez vous tenter par cette douce brioche pour un bon petit déjeuner, goûter ou même apres tout les repas 😎 Pour cette fois ci , cest une babka chocolat noir et noisettes torréfiées 🌰🍫🤩 La recette est très simple , efficace, rapide et gourmande surtout !! Voici donc la recette ! -35 g de sucre -130 g de lait -15 g de crème liquide -2.5 g de sel fin -260 g de farine -14 g de levure chimique -60 g de beurre doux Pour la ganache : -150 g de chocolat -100 g de crème liquide -une pincée de fleur de sel -des noisettes torréfiées Dans un bol, mettre le sel, la farine , le lait, la levure chimique, le lait , la crème et le Sucre et laisser pétrir à moyenne vitesse pendant 8 minutes . Finir par rajouter le beurre couper en petit morceaux et pétrir encore pendant 8 minutes Mettre la pâte dans un bol couvert pendant 1h45 au frais. Faire torréfier les noisettes à 180 degrés pendant 10 minutes . Faire fondre le chocolat au bain marie et y verser la crème en 3 fois . Rajouter la fleur de sel Laisser refroidir et y rajouter les noisettes. Apres 1h45 au frais , étaler la pâte en un rectangle , et étaler la ganache. La faire rouler en boudin et la couper en deux sur la longueur. Réaliser une tresse . Ensuite mette dans un moule à cake , un moule à entremet ( libre à vous 😎), et laisser à température ambiante pendant 4 heures Et hop !! Cest parti pour une cuisson à 180 degrés pendant 25-30 minutes De la gourmandises, cest ce quon veut, cest ce quon recherche !! Ingredients 1 cup milk 2 tsp yeast 2 tbsp sugar 2 tbsp butter 1 tsp salt 21/4 cup all purpose flour Sesame seeds few 1 cup water 11/2 tsp baking soda Coarse salt 2 tbsp melted butter Preparation Heat milk till its luke warm add sugar and dry yeast . Let it rest for 10 minutes . Then add salt and butter . Now add flour bit by bit and start kneading. Knead it for 5 minutes till it is smooth and soft. Take a bowl and oil the dough and the bowl Let it rest for 1 hour Cover the bowl with the cling In the meanwhile boil water and add baking soda in it Stir the mixture so that it is dissolved Now take the dough and divide it into 5 equal parts Take one ball and roll it using your finger tips for about 30 inches long rope Try to make it even Now make a horse shape of this long rolled dough Then put one end over the other leaving 2 inches from end Now cross the two ends again Now holding the two ends fold it upward touching the upper side of the pretzel Now lift the pretzel and dip it in the baking soda solution for 10 seconds one by one Now place them on the baking tray after greasing it properly Sprinkle salt and sesame seeds to it Bake them in a pre heated 225 degree Celsius oven for 10-15 minutes till golden brown Take them out and brush them with melted butter Try them with mayonnaise/ Chipotle/honey mustard sauce - @foodbliss12 on Instagram

So I made them again - BUCHTELN ( yeast dumpling - I think there is no really better word for them in English or ???) Buchteln are a kind of addiction - you can make them filled with quark, poppy seed filling, jam, marzipan... or plain like I am doing as my children like to eat them sprinkled with powder sugar and cinnamon and to eat them with jam. Once you made buchteln, you always come back to make them again and again and again....that is a real love ❤️ For recipe you can scroll to my older feed ( from 12.5 ) , there is a recipe from my grandma’s cooking book from 1947 ( last picture here shows how the book looks today after 73 years 😂 and passing first to my mom and then to me... ) . Pizza swirls 🍕🌀. You guys saw it in my stories and wanted the recipe like CRAZY! I am so excited to share. Finally a handy handful of carbs for the lunchbox that is full of protein, fiber, and veggies too!! . Adapted from @superhealthykids . Ingredients: Crust🌀: 2 cups light spelt flour 2 1/4 teaspoon active dry yeast 1 1/2 teaspoon coconut sugar 3/4 teaspoon salt 1/2 tsp dried oregano 2/3 cup water 3 tablespoon avocado oil 1 1/2 cup mozzarella (or dairy free) cheese . SAUCE🍅: Any small- chopped veggies that you like (tomatoes, mushrooms, onions, peppers, zucchini...) 1 cup of your fave marinara sauce . All you do: Sauce: Roast finely chopped veggies in oven with drizzle of oil at 400F for about 15-20 mins or until soft and done Blitz veggies with marinara sauce in the blender. Set aside # Crust: -mix 1 cup of flour with the yeast, sugar, and salt. Add in the water and the oil and whisk until combined. -Add in remaining flour and oregano and combine (with hands!) until it forms a sticky ball. -Knead dough on a floured surface. Let the kids punch it hard! -place dough in a large greased bowl, rub a bit of oil on top of it, and cover bowl with a plate and leave it for 30 mins - Roll dough out into a floured surface. Make it into a large rectangle. - paint dough surface with prepared pizza sauce. - Add any small toppings if you want to - Roll up the rectangle -slice it -pop each slice into a greased muffin tin - Bake at 400F for about 10 mins. I can finally show you guys what Ive been working on for the last few weeks. Husband and I have been working on these for a while. Grandpa helped a ton as well, and together we took a $25 table and $10 side table and made them super cool. I used the #dutchpour technique, where you mix thinned #acrylic paints and then spread them out. I just thinned with water rather than a pouring medium, but Im still happy with the result. We also cut new legs for the table so it sits a little lower than a coffee table. This way we can comfortably kneel at it :) like the proper weird folks we are. Im really happy with the results! Ive never seen someone try this on furniture, just canvas, but it really creates some unique pieces, which I love. Plus its been a long time since Ive felt inspired to create art, but this project got my right brain working. That was a nice feeling ☺️ The final two photos are before pictures. But I tested to see if it was active. It was VERY active. Almost impatiently so. As excited as I was to be a part of the diversity committee of the Bread Baker’s Guild of America I have decided to step away from the organization all together. I believe they want to make changes but I do not think it will be proper, systematic change for a few years. I was told to tone down my words, and to think of the people who might not want to read/see BIPOC. There is more to this story in which ultimately I chose my own comfort and voice above working with those who did not respond to my ferocity well. Its a good story, but not my main point. Though highly disappointing this has been surprisingly enlightening! I’ve realized I don’t want to just make changes in my specific corner of the world but in the food service industry as a whole. I have worked in almost all faucets of the industry and have seen so many injustices. I want to create a proper support system to connect people to each other, to resources, to the history of our products. This is a very fresh idea, but if you are interested in working with me, please reach out! It will be Raleigh, N.C. based to start, but I plan to set it up in a way that is easily set up by an ambassador. I want this to be a massive movement. There will be no change in the food and beverage industry unless we all work towards it. Let’s stop the abuse of all forms, the racism, and the sexism. Just a reminder that instagram is a highlight reel.  I have no clue what I’m doing. My feed is never going to be “the prettiest” or the most cohesive but I show up. Garlic bread flower! Pretty and delicious! Dough: 200ml lukewarm water 3G dry yeast 300g plain flour 2g sat 10g sugar 25ml olive oil. Method: Mix the water and the yeast and set aside for few minutes. Mix all the other ingredients and add the yeast water. Make a dough. Cover with lid and rest for 20 minutes. Now mix the dough for 1 minute until smooth. Add few drops of oil in the container with lid and rest the dough covered for 2 hours. Knock the dough and decide to 4 even pieces. Roll each piece into round shape. Not too big. On the size of plan of your hand as a reference.Place garlic, spring onion , butter and salt mixture in between the layers. Leave last layer plain. Follow cutting instruction in highlights.Cover and rest for another hour before baking in 205c pre heated oven for 20-25 minutes or until golden brown . Egg wash it before baking . Garlic mixture: One whole head of garlic , all cleaned and finely chopped, 1 spring onion ( optional) finely chopped. 1tsp sat 50g butter. Melt the butter and add the rest of the ingredients. Cook about 30 seconds. Do not brown. Cool down completely before using them. Otherwise it will melt the dough and will be impossible to work with. Bake in 205c . - Dark chocolate and cardamom babka buns for my boyfriends birthday. I’m quite pleased with how they came out.

Cornetti - those Italian style croissants that are eaten for breakfast, standing at the bar, drinking a macchiato. I had steered away from making these because of what I believed was the amount of work needed. But truthfully it wasn’t that much as I split it over three days (as suggested in the recipe). And it is a good thing to do while we are (still) locked down in Melbourne. The recipe is from @emikodavies first cookbook Florentine and they taste just wonderful! I cannot wait to make them for the extended family (maybe at Christmas when I can eventually see them...). The third photo in this series is a cross section of the dough after the butter (all 250g of it) has been layered through the dough, much like when you make puff pastry. The last photo is the butter before I started working it in. It helps to have a stone bench top and a heavy marble rolling pin to keep the butter cold - @italyonmymind on Instagram
