Do you ever wonder why some chocolates have a white film on their surface? Thats called fat bloom, and it is the result of exposure of the chocolate to heat. The melting of chocolate changes the structure of cocoa butter crystal from beta 5, which is a stable crystal that gives a shiny and smooth texture to chocolate, to beta 1 to 6, more unstable crytals that causes white patchy coloration on the chocolate. Fat bloom often results from uncontrollable situations like where shippers and carriers store these chocolates at high temperatures. Though this powdery white surface seems concerning, its completely safe to consume these chocolates. Fat bloom does not pose a risk to your health. And if you find yourself not liking the texture, you can always add these chocolates to your baking recipes or melt them for hot chocolate drinks. If youre feeling particularly adventurous, you could also try to retemper the chocolate. --- Pernahkah kamu bertanya-tanya mengapa di permukaan cokelat suka terlihat ada lapisan putihnya? Itu adalah fat bloom yang disebabkan oleh suhu panas yang terpapar pada cokelat. Peleburan coklat mengubah struktur kristal cocoa butter dari beta 5, yang merupakan kristal stabil yang memberikan tekstur mengkilap dan halus pada coklat, dan menjadi beta 1 sampai 6, kristal yang tidak stabil dan menyebabkan munculnya warna bercak putih pada coklat. Fat bloom sering kali terjadi dikarenakan keadaan yang tidak bisa dikontrol seperti di saat pengirim dan operator menaruh kiriman cokelat di ruang suhu yang tinggi. Meskipun penampakan bercak putih ini terlihat memprihatinkan, cokelat ini sepenuhnya aman dikonsumsi. Fat bloom tidak menimbulkan risiko bagi kesehatanmu. Dan seandainya kamu tidak menyukai teksturnya, kamu selalu bisa memasukan cokelat ini ke resep cake mu atau dilelehkan untuk dijadikan minuman cokelat.
