🇨🇵⬇ Easy Quinoa Bowl 🥙⁣ ⁣ Im not a fan of quinoa 😬 BUUUT its super nutritious and mixed with other things its ok 😂⁣ I cooked the quinoa in my rice cooker (rice cooker is life, if you dont have one, buy it now) with some bay leaves and salt. Then I topped my bowl with baby spinach, raw carrot & zucchini, roasted pumpkin, fermented beet and fried tofu deglazed with soy sauce. Drizzle some canola/sesame/olive oil and voilà ! ⁣ Its super fast to make and you can prepare a whole batch in advance to have the whole week or freeze and have it for later. Ingredients: 1 number big onion (chopped) 6 - 8 numbers capsicum or any pepper (chopped) 1 cup chickpea flour/ kadalai maavu in tamil, besan in Hindi 1-3 tsp Red chili powder Salt to taste 1/2 tsp Hing/asafoetida 4 tsp oil 1/2 tsp Turmeric powder Seasoning Ingredients 1 tsp Mustard seeds 1 sprig Curry leaves 2 tsp white urad dhal/skinned black gram Method: Mix the chickpea flour with  the chili powder, turmeric, asafoetida and set aside. Heat the oil in a wide pan or a wok. Add mustard seeds. When they start to sputter, add the curry leaves and the urad dhal and fry until urad dhal turns a reddish brown colour Add the onions, 1/2 tsp of salt and saute until onions turn translucent. Add the peppers, the remaining salt and saute until they are cooked, but not too soft. You should be able to cut it with just a little resistance to check if they are cooked. Now add the chickpea flour mix and continue to saute. At this point, keep the heat on medium, and stir constantly as the flour could stick to the pan. If the oil doesnt look like its enough, you may add a tsp or so When the peppers glisten with the oil, and the flour has lost its raw smell, the curry is done. Turn the heat off, and transfer to the serving bowl Hands down, this curry is best with puris/rotis, along with a cup of thick yogurt About Srilatha: Her cooking is inspired by her amma, grandmother, and friends who adopted our young family and fed us all the time when her babies were little. She also heavily depended on the 3 volumes of “Samaithu Paar” (“Cook and See”) by Meenakshi Ammal, who created her books for the young women, decades ago. Cooking and feeding people is her way of expressing love. And what better way to show it than to leave the recipes my family has enjoyed, for posterity. Place chicken in a slow cooker set on low. In a small saucepan on medium-high heat, combine the hot sauce, ghee, coconut aminos, garlic powder and optional cayenne. Stir together and heat until ghee is melted. Pour sauce into slow cooker. Cook for 4-6 hour on low or until chicken is tender. Remove chicken from slow cooker and shred with two forks. Remove tofu from package and wrap tofu block in 2 paper towels, Squeeze for 10 seconds then break apart tofu into your food processor, To the food processor add salt, lemon juice, nutritional yeast and garlic powder. It’s almost soup season! 🍲 What’s one of your favorite soups? ⠀⠀⠀⠀⠀⠀⠀⠀⠀ It’s way too hard to pick for me but I’ve been super obsessed with this enchilada chili bowl 🌶 ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ My Enchilada Chili Bowl is so creamy and satisfying — perfect for a cool fall evening! It’s got all the enchilada flavors and spices but served in a cozy & comforting way 🥰 22 grams of protein per serving makes for great meal prep or weeknight dinners! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Serves 4-5 Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀ * 1 pack of tempeh * 1/2 onion * 2 jalapeños * 3 cups vegetable broth * 1 can pinto beans * 1 can black beans * 1/2 can corn * 3oz canned tomato paste * 2 tbsp guajillo chili powder * 1 Tsp cumin powder * 1 Tbsp garlic, minced * 1 pinch of cayenne * salt & pepper to taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀ You will need 1 large pot ⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1. Crumble the tempeh and chop the veggies. Sauté the veggies with the garlic and tempeh in a medium pot using splashes of vegetable broth or water for about 5-7 mins. 2. Add in the rest of the vegetable broth and let it boil. When it starts to boil add in the tomato paste, chili powder, cayenne, cumin, beans and corn. 3. Reduce heat to a simmer and let it cook for 7-10 mins. For the tofu I used: 1 block extra firm tofu 1 heaping tbsp cornstarch 1 tsp onion and 1 tsp garlic powder 1/2 tsp salt 1 tbsp cooking oil (I used grape seed oil) 1/4 cup general tso sauce * (see below) As well as: 1 cup cooked quinoa 1 head of broccoli 1 large handful of tender green asparagus Sesame seeds (Makes 2 servings) _________________________________________________ Cut tofu into big chunks and add them to a bowl together with the cornstarch, spices and oil. Toss carefully until evenly coated. Spread cubes on a lined baking sheet and bake them at 375 F/190 C for 30-45 min (depending on size and desired level of “crispness”), giving them a stir once or twice in between to ensure even baking. Add the baked tofu chunks to a non stick pan, pour sauce over it and stir on medium heat for a couple minutes until pieces are slightly sticky and caramelized. HEALTHY KATSU RECIPE 💥 Want something new this #meatfreemonday? 🤩 How about our healthy spin on Katsu curry, with sticky sesame aubergine, edamame brown rice & a side of tenderstem for essential greens 😋 Let us do the hard work & deliver everything you need, to your door. WE DELIVER 100g fresh edamame beans 180g Tenderstem broccoli 1 aubergine 1 tbsp tamari 200ml coconut milk 2 garlic cloves 2 spring onions 2 tsp curry powder 2 tsp maple syrup 2 tsp oil 2 tsp white sesame seeds 4cm fresh ginger 80g brown rice YOU COOK 1. Preheat the oven to 200C / fan 180C / gas mark 7 and boil a kettle. Rinse the brown rice and place in a saucepan with 400ml boiling water and a pinch of sea salt. Simmer for 20-25 mins, then add the edamame beans for the last 2 mins. Drain. 2. Heat a dry medium-sized frying pan on a medium heat and add the white sesame seeds. Cook for 1-2 mins then transfer to a small bowl and reserve for later. 3. Slice the aubergine into 1cm-thick rounds (you should have 10 slices). Place in a large bowl with the tamari, maple syrup and 1 tsp oil, then mix well to cover the aubergine in the marinade. Place the aubergine on a baking tray lined with parchment paper and cook in the oven for 15 mins, until softened. 4. Make the katsu curry sauce; finely slice the spring onions, and peel and grate the ginger and garlic. Heat the same frying pan used for the sesame seeds with 1 tsp oil on a medium heat and add the garlic, ginger and just half the spring onions. Cook for 3 mins until softening. Add the curry powder and cook for a further minute then pour in the coconut milk and simmer for 10 mins, or until thickened to a desired consistency. 5. After the aubergine has been in the oven for 15 mins, add the Tenderstem to the same tray and cook together for 10 mins. 6. Add the remaining spring onion to the drained rice and edamame beans. Mix. 7. Spoon the edamame rice into two warm bowls. Place the sliced aubergine over the rice and the Tenderstem broccoli alongside. New hearts of palm pasta🍝 tried this out tonight by heating it up on the stovetop, adding salt and garlic powder, chopped spinach, and marinara sauce. Once heated there isn’t much flavor to the pasta itself, and the texture is much similar to something like zucchini noodles than actual pasta. I also found there to be a lot of moisture after cooking. On the bright side, it’s a very healthy, low calorie option! Overall it’s something that I enjoyed and was good to try, but not something I would buy a second time because I like other gf pasta options better. What you need: 1 can of chickpeas rinsed, drained & towel dried, 1/4 tsp salt, 1/8 tsp pepper, 3 tbl tapioca flour, 1/2 cup bbq sauce (low sugar) 2 cups seasoned bread crumbs( I used Italian seasoned) 1️⃣Season chickpeas with salt/pepper 2️⃣ To bread chickpeas: set up 3 stations, one bowl with tapioca flour, second bowl with bbq sauce, & a plate with bread crumbs.Line large baking sheet with parchment paper misted with oil 3️⃣Add chickpeas to tapioca flour, mix with spoon till all coated, next coat in bbq sauce, then place in bread crumbs making sure chickpeas are breaded throughout, use a large dry spoon to place chickpeas on baking sheet. Separate croutons that are stuck together, giving enough room between each so they crisp up 4️⃣Bake at 400 F til coating is golden and crisp, shaking pan half way through cook time about 15-20 min or Air fry 7-10 min at 400 F cooking in 2 batches. 5️⃣Serve croutons warm or at room temperature. Proteins are huge molecules made up of smaller molecules called amino acids. There are 20 different amino acids available to us. Eight of these amino acids are considered essential, meaning you have to get them in your diet (or from a supplement) because your body can’t manufacture them. In general, it is better to get your nutrients from your diet, than a pill. ________________________ All plants contain amino acids. The only difference is that some have a lower percentage of amino acids in comparison to the rest of the parts of the plant. ________________________ The term “complete protein” refers to foods that have all nine essential amino acids present in the correct proportion for our bodies to build protein with. The term “incomplete protein” refers to foods which have all the essential amino acids, but are simply low in one or more of them. This is called the “limiting amino acid”. While it’s true that most whole plant foods have one or more limiting amino acids and are thus “incomplete” — this shouldn’t send you running for a steak. ________________________ Our bodies are brilliant, and every food that goes into your system must be broken apart and its nutrients absorbed. During the digestion process, amino acid chains from all sources are broken down and made ready for our bodies to use. Får vi fresta med en lyxig kvarngrynspilaff – inspiration från mellanöstern! 🍽✨👌 4 portioner 🌾 Rostad pumpa • 1 hokkaido pumpa • 4 msk olivolja • 4 msk citronjuice • 2 msk lönnsirap • 1/2 tsk riven ingefära • 1 tsk salt & pepper 🌾 Kvarngrynspilaff • 2 msk smör • 3 dl okokt kvarngryn • 1/2 tsk kardemumma kärnor • 4 dl grönsaksbuljong • 1/2 tsk salt • 2 stjälkar svartkål, hackad • 2 msk citronsaft • 10 blad mynta, hackad • 100 g rostade hasselnötter, hackade 🌾 Tahiniyoghurt • 2 dl naturell yogurt • 2 msk tahini • 2 msk citronjuice • 1 msk lönnsirap 🌾 Gör såhär; Sätt ugnen på 200°C. Halvera pumpan (skalet kan ätas), skrapa ur kärnorna, skär i skivor och lägg på en bakplåt. Blanda ihop olja, citronjuice, lönnsirap, ingefära och salt till en marinad och häll hälften över pumpaskivorna. Vänd så alla bitar är täckta av dressing. This Roasted Cauliflower Salad combines sweet roasted red onions, spiced chickpeas, tender cauliflower, and a tangy lemon tahini dressing! By: @budgetbytes — Ingredients: 1 head cauliflower 1/2 red onion 2 Tbsp olive oil Salt and Pepper to taste 1/2 bunch parsley Lemon Tahini Dressing: 1/3 cup tahini 1/3 cup water 1/4 cup lemon juice 2 cloves garlic, minced 1/2 tsp cumin 1/4 tsp cayenne 1/4 tsp salt Spiced Chickpeas: 15 oz can chickpeas 1 Tbsp olive oil 1/2 tsp smoked paprika 1/4 tsp garlic powder 1/8 tsp cayenne Salt and Pepper to taste — Instructions: Preheat the oven to 400ºF. Chop the cauliflower into small florets and place them on a large baking sheet. Slice the red onion into 1/4-inch strips and place them on the baking sheet. Drizzle the cauliflower and onions with olive oil and season with a pinch or two of salt and pepper. Toss the cauliflower and onions until coated in oil, salt, and pepper. Roast the cauliflower and onions in the preheated oven for 20 minutes, then stir, return them to the oven, and roast for an additional 10-15 minutes, or until the cauliflower is tender and browned on the edges. Let the cauliflower cool slightly. While the cauliflower and onions are roasting, make the lemon tahini dressing. Add the tahini, water, lemon juice, garlic, cumin, cayenne, and salt to a blender. Blend until smooth, then refrigerate until ready to serve. Drain and rinse the can of chickpeas. Add them to a skillet along with the olive oil, smoked paprika, cayenne, and a pinch of salt and pepper. Stir and cook the chickpeas over medium heat for about five minutes, or until they sizzle and become slightly crispy. Remove the chickpeas from the heat. Pull the parsley leaves from their stems and roughly chop the leaves into small pieces (about 1.5 cups loosely packed, once chopped). To build the salad, combine the roasted cauliflower and onions in a bowl with the spiced chickpeas and chopped parsley. Drizzle the lemon tahini dressing over top, and toss to combine.
