Heres the recipe for 2-3 servings: 2 cups oats 1/2 cup chopped almonds 1 tbsp coco oil -melted (ingredients by @rapunzel_naturkost) 3 tbsp maple syrup Pinch of salt and seasoning of your choice (vanilla,cinnamon,nutmeg etc.) Mix and place on a baking pan and let the mixture stick together (makes yummi crispy chunks after baking) Bake for 10 minutes at 100°C mix through and bake again for 10 minutes. Let cool. After baking add 1/2 cup of puffed quinoa and/or dried fruit like raisins. Let’s talk a bit about what happens when processing our Lactic coffees. The first thing to note about this process is that it’s a wet process (washed coffee), and not a dry process (natural coffee), and this implies a huge difference when talking about metabolic reactions. According to some solid research, and based on our own observational field work, we’ve seen how a major loss of biomass occurs during the initial phases of a Lactic washed process. In fact, while the content of glucose and fructose remains relatively unchanged throughout natural processing methods, we’ve seen huge decreases (up to 90%) in wet processing methods. The consumption of organic matter by respiration and anaerobic fermentation (metabolic reactions) leads to a decrease of pH in the coffee tank fermentation substrate, which suggests the occurrence of lactic acid fermentation in the tissue of the endosperm. After conducting various laboratory analysis with a prestigious local University, we were able to observe interesting amounts of lactic acid production during the initial stages of this process. Furthermore, as soon as the pulp is removed under a Lactic washed processing method, germination is triggered. And germination is also responsible for many enzymatic reactions that take place inside the beans, reactions which also have a huge impact on the cup profile. For example, a key enzyme responsible for the conversion of fatty acids into carbohydrates, called Isocitrate Lyase (ISL), is one of the first enzymes expressed during germination. We don’t really know much about the exact effects of germination on the cup, but we know one thing: for the Lactic coffee profile to be distinctive, we must have a germination phase and relevant amounts of ISL during the initial fermentation stages. We will continue to share more info about our Lactic Process on future posts, but let’s stop for a minute and think about one thing: we haven’t even talked about the prefermantion or drying phases yet, and the variables affecting this process are already far too complex for us to understand thoroughly.
