βοΈBeans and avocado saladβοΈβ£β£ β£β£ β£β£ Beets had her first salad yesterdayπ. It was such a huge hitβ¦ She loves everything in there individually but I wasnβt sure if she will like it together. She did love it all together tooβ¦ Though the coriander and onions were tasted but she didnβt like it at allll..β£β£ β£β£ β£β£ She was trying to pick specific ones and eat so in lessons learnt I might try to do a Buddha bowl because she would like to eat them one at a timeπ. She first finished all the tomatoes, then the avocados etc etcβ¦ β£β£ β£β£ β£β£ She ate all the tomatoes, avocados even the ones on the side along with blueberriesβ¦ She ate most of the red kidney beans and cornβ¦ There were wayyyy too many chickpeas π€£β¦ all in all she loved it and ate them happily.β£β£ β£β£ β£ There was a phase where she wouldnβt touch avocado at all after eating it for 3 months since started weaning. I just kept serving even if I knew she wouldnβt eat it. Guess what she eats 1 whole avocado now. It took perseverance for almost 10 months but it works all... Just donβt give up... β€οΈβ€οΈβ£ β£β£ For adults dressing, I added chilli powder and all the trimmingsβ¦ For Beets, I just mixed lime juice, garlic powder and olive oilβ¦ Kept it simple and not over powering not because she wouldnβt eat spicy but because I wanted her to eat the beans and all and not get put off by anything elseβ¦ I shall slowly add more as I introduce more salads.β£β£ β£β£ β£β£ I served these on out @easytots mat. These mats are sooo handy. This one is really generous in size which is really good. Made this beauty again! There is just something about how everything works out so well and balanced in this salad! A complete meal with a lots of nutrition! . Serves : 2 ______________________________________ . Ingredients: . For the salad: 1 cup cooked quinoa 4 chopped cocktail cucumbers 10 cherry tomatoes 1 avocado chopped . . Dressing: 1 tbsp extra virgin olive oil 1/2 tsp minced garlic 1 tsp minced ginger 2 tsp lemon juice 3 mint leaves 1 tbsp chopped parsley Salt and pepper to taste . . Garnish: 1 tbsp chopped walnuts 1/2 tbsp dried raisins . . Method: 1οΈβ£Add all the veggies (except avocado) into a large mixing bowl. 2οΈβ£Into another small bowl, add the dressing ingredients and give it a good mix. 3οΈβ£ Add the dressing and the avocado into the vegetables and quinoa. Give it a good mix until weβll combined. 4οΈβ£Make sure not to over-mix.
