Today was the last day of the 2020 harvest at Sítio. We will still have a few weeks of care with drying the last batches but we are very happy with the result. So far, all coffees with specialty potential have come to the end of drying as a specialty. Before the introduction of the ubiquitous yellow plastic buckets used by Colombian coffee Piker’s, we employed beautiful handmade Wicker Baskets. Some growers, like my friend Juan Vargas @jnatureadventure @fincasverdes, still uses the iconic canasto. Few years back, I asked Juan if it was possible that his neigbour, the artisan in San Antinio Tolima, made two canastos for me. In Portland, my canastos became baking proofing baskets. I use them in tandem with two beautiful banneton baskets, also made made by a craftsman in England. The pleasure of the essential things. Highly recommend. When I started roasting, I thought it would be easy. The longer I have done it, the more I feel like I don’t know a thing. Roasting is a complex beast. It is humbling. It’s so important to listen to others, trust their thoughts and palates. It’s important to roast and taste, over and over and over again. This is how you get it right. The Natural Processing Method ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Coffee processing refers to the method in which the producer decides to transform the coffee fruit into an exportable green bean. This decision can be by choice or sometimes restricted by the environment and equipment available. Natural process will have one of the most significant impacts on the flavour profile and also the final cup. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Natural Process is the only processing method which doesn’t require machinery or water. After being harvested and sorted, the cherries will be dried as a whole fruit (like a date). The natural” or dry” process implies drying the whole coffee cherry without removing any layers until the drying stage is finished. This method of processing was used for centuries and was the only option before the invention of agricultural machinery. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Producers use different drying techniques like raised beds or patios paired with different layers or shadings to achieve the desired result. They also can use a range of post harvesting techniques like whole cherry pre-fermentation before the drying stage to impart stronger and potentially more interesting flavours into the coffee. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ A cherry is like a sealed fermentation tank by itself and that is why drying Naturals is a very challenging but rewarding process. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Less go! ⠀⠀⠀⠀⠀⠀⠀⠀⠀ PS : some countries like Burundi, Rwanda and Colombia were previously banned from producing Naturals - @tobysestatecoffee on Instagram

Freshly harvested cherries at the Koke Washing Station in Yirgacheffe, Ethiopia.⁠ ⁠ The family-owned Koke washing station was built in 2011, and it has seen many improvements since 2015 when the washing station staff began providing guidance to contributing producers regarding steps to increase coffee quality.
