We drink a lot of espressos, cappuccino, and caffé lattés so looking at the beans for these drinks is quite important so we all get a feeling of what would suit oneself.⠀ ⠀ As I did last time (2 weeks ago) I fixed another voucher for you! that’s the only way I can give back to the ones who are reading my reviews. It’s a voucher on 15% of all coffee from the Italian Artisanal roastery @pedron_caffe and also from Baristashopens own coffees such as the last review Espresso Organic and many more! The code is kaffenytt15.⠀ ⠀ I liked this coffee with a 1:2 or 1:2.5 ratio, anything higher will not work as well. Worked great as an espresso, cappuccino, and even caffé latte.⠀ ⠀ The coffee has an 85% Arabica and 15% Robusta blend,2 natural (Brazilian Rosa Moreno & Ethiopian Sidamo), and 2 washed (Colombia Supremo Huila & India Mysore Nuggets) and the robusta being a washed India Kaapi Royal. The cup is very traditional with notes of chocolate, hazelnut, and caramel.⠀ ⠀ The espresso has served us well in the home, I could use this as my everyday espresso for a really long while. Always in the background, the backdrop to what we do is our essential link to those growing speciality coffee and the flavours we hold so dear. 🌱 We never take for granted the availability of all these coffees. 🌱🍒 As well as the growing, picking and processing of coffee with all that sweet delicious flavour, producers have to deal with issues around very volatile income due to coffee prices, climate change the the quest to grow coffee plants more resistant to disease. 🍒 This post is just a little marker of recognition that we never forget it and appreciate all their work so much. 🌱🍒 Where does coffee come from? Well, originally from the ancient coffee forests of SouthWest Ethiopia🌳🍒🌴and it’s an absolutely fascinating and deeply immersive tale, told incredibly well by @jeff_koehler in his book Where The Wild Coffee Grows. It seems like we just released it last week as this summer, much like the months before, have all been blurred together. The whole goal behind this coffee was to bring a bit of joy and nostalgia of those summer days. It was a lot of fun seeing the reaction to the little touches of it all, from the coffee to the vintage baseball card packs thrown in. Being able to taste a fruit in coffee was just wild. The coffee that started my passion for specialty coffee was from an African town Yirgacheffe. Ive tried a few of these from different roasters and so far they have been great! @cityleaguecoffee offers this coffee under the name of Sandlot which awesomely fits their branding. If you dont know what I mean, definitely check them out. I was there at the beginning when City League was an idea and now Im able to try one of my favorite coffees from them and what a GREAT coffee this is. Roaster: @cityleaguecoffee Coffee: Sandlot - Ethiopia, Yirgacheffe Process: Natural Tasting Notes: Blueberry, lemon, honeysuckle Aroma: Just from the bag you can tell this is going to be a sweet and fruity coffee. A mix of dark and milk chocolate with a hint of red apples, peach and definitely blueberries... There is some honey sweetness to it and a bit of roasted peanuts. Very interesting just from the aroma. Taste: One of the characteristics of Yirgacheffe is its distinctive note of blueberries... And this coffee screamed blueberries. It was rich and creamy... It was like tasting melted chocolate with blueberry syrup with undertones of raisins, apples and honey. A nice gentle acidity and definitely a summer coffee as stated on the bag. Pour a cup, then hit the coast. Last weekend was spent learning Rhode Island’s tautog fishery from beneath the waves. It didn’t come easy, but we managed a few. Spearfishing seamlessly combines two of my deepest passions: hunting and fishing. It’s intimate, adrenaline pumping, and takes me out of my comfort zone every time. The selective nature of spearfishing also makes it an incredibly sustainable way to procure seafood. When fishing with a spear, by-catch is eliminated, and release mortality is nonexistent. But like most things, it isn’t without risk. At the core of founding Department of Brewology, our goal has always been to enrich the specialty coffee community through elevating design and creating unique experiences while supporting marginalized groups in and outside it. Over 5 years later, the industry is a much different place than when we started, and weve continued to look for new opportunities to make a difference, but that has inevitably led us back to where it all started; coffee. In the coming weeks, Department of Brewology will begin selling coffee. Entering the arena of selling coffee isnt something we take lightly, and which we actively resisted for a while; however, with COVID-19 accelerating rapid change within the industry and having devastating effects to many businesses within it, including ours, we looked for a way to have the largest positive impact while trying to envision what the future of this industry may look like. n trying to have a meaningful impact, were faced with the truths that this industry has to solve, including its dark history of colonialism, gender inequality, youth migration, the coffee price crisis, and much more. For producers, these are just a few of the hurdles that plague the coffee supply chain that they are forced to navigate. For retailers and consumers, this can be overwhelming but it shouldnt let us off the hook. Department of Brewology, as part of our new #givebacktocoffee initiative, will be committed to responsibly addressing these issues in several ways including, but not limited to: 1.) We hope to facilitate two-way transparency where the coffee farmer is included in the process of how we market and sell their coffees, this includes disclosure of costs, margins and final retail price point. 2.) We hope to donate 10% of every coffee sale directly back to the coffee farmer. 3.) We hope to create on-ramps for the coffee consumer to contribute to positively impacting the livelihood and well-being of coffee farmers.
