De plus, il est souvent ajouté dans ces plats un arôme qui n’est pas celui de la truffe d’été mais celui de la truffe blanche (tuber magnatum), ce qui est source de confusion pour le consommateur qui va associer le goût de la truffe blanche à celui de la truffe d’été qu’il a dans son assiette; voire même à celui de la truffe noire d’hiver puisque leur peau sont similaires (photo suivante). Habitué à cet arôme, le consommateur goûtant de la truffe noire pour la première fois, et ce sans en être conscient, s’attend à retrouver un goût aussi puissant que celui de la truffe blanche.
