The softest and easiest homemade pretzels you’ll ever eat 🥨 here’s another fun weekend baking project for you! Recipe below 👇 - ➡️Ingredients: 10g dry active yeast 90g sugar 300ml lukewarm water 620g flour 1 teaspoon salt 1 tablespoon softened butter 100g bicarbonate of soda Boiling water Coarse sea salt - 1️⃣Make the dough | Sprinkle the yeast on the warm water, add a teaspoon of sugar and leave to stand until frothy (this makes sure that the yeast is alive!). Mix the flour, sugar and salt together, then add the yeast mixture and mix until a dough forms. Knead the dough for 5-6 minutes, until a smooth and elastic dough forms, then add the butter and knead until incorporated. Leave the dough to double in size in a warm place - 2️⃣Make the pretzels | Preheat the oven to 230 degrees C. Divide the dough into equal pieces, roll them out into long cylinders and shape into pretzel shapes (swipe 👉 for video!). Dissolve the bicarbonate of soda in about a litre of hot water, then dip each pretzel in the solution and place on a baking sheet. Sprinkle some coarse salt, then bake for 8 minutes. In honor of the first day of FOOTBALL SEASON 🕺🏾 we’re whippin up some homemade soft pretzels because they’re one of the best game day snacks 🤪🏈 〰️ ^Makes about 12 medium sized pretzels* Heat 1 1/4c water until warm (not boiling, approx 110F). Dissolve 1 tsp white sugar + 4 tsp active dry yeast (I use @bobsredmill). Let sit for 10 minutes. In a mixing bowl, mix 4.5 cups all-purpose flour, 1/2c white sugar, + 1tbsp olive oil. Add the yeast mixture + knead until well combined. If the mixture is dry, you can add 1-2tbsp more of water. Lightly oil a large bowl + place the dough in the middle of the bowl. Cover with a dish cloth + place in a warm, dry area. Let it sit for about 1 hour to allow the dough to double in size. Once risen, preheat the oven to 450F + start boiling a pot of water with 1/4c baking soda dissolved. Divide the dough into 12 equal pieces. Roll into thin rope + twist into a pretzel shape. Dip each pretzel into the boiling water + let it cook for 30 seconds on each side. Move the pretzels onto a greased baking sheet. In a small bowl, scramble an egg then brush onto each pretzel. Sprinkle with kosher salt + bake until browned, about 8-10mins. - @bunchofbri on Instagram

I made some soft pretzels today! 🥨🥨 Aren’t they so cute?? There’s something about pretzels that make me feel so cosy + happy. They are so reminiscent of Autumn, Christmas night markets, cheesy American tv sitcoms, European holidays, and theme parks. I feel like pretzels are always eaten in moments + memories of pure joy, and for that reason alone I KNEW I had to learn to make and perfect them. 🥰 • • I used the recipe from the King of bread, @joshuaweissman While I was wayyy to scared to use lye, a baking soda water bath was a good enough substitute to get the Maillard reaction to occur for that chewy crust, shiny colour, and signature pretzel flavour. ❤️ • • I loved this recipe SO much because it combines science, art, and food (3 of my fav things!) and for those who have heard T-swifts new album, you will know exactly what I mean when I say this: kneading the dough while playing “seven” and looking out at the slightly overcast weather, was the most cottagecore aesthetic I have ever been. Soft Pretzels & Buffalo Chicken Stuffed Pretzel Bites 🥨 . . . • 1 tbsp sugar • 2 tsp salt • @lidlus active dry yeast • 22 oz flour • 2 oz unsalted butter • 2/3 cup baking soda • 1 egg yolk • . . . 1. Warm 1 1⁄2 cups water to 100o F, and let it cool until it is just warm to touch. 2. Add 1 tablespoon sugar, 2 teaspoons of salt & 1 packet of yeast to the water. 3. Let mixture sit for 5 minutes, until it starts to foam. 4. Mix in yeast mixture to 4 1⁄2 cups of flour and 2 oz. melted butter to form dough. 5. Let dough rise for 1 hour in a covered, oiled bowl. 6. After dough has risen (yay!) knead dough & roll into long strips. Use strips to form classic pretzel shape OR roll flat and stuff with buffalo chicken (we again used our Instant Pot roasted chicken + @lidlus buffalo wing sauce!) 7. Boil pretzels for 30 seconds in 10 cups of water with 2/3 cup of baking soda. 8. After taking pretzels out of water, gently brush with mixture of 1 egg yolk & 1 tablespoon water. Sprinkle sea salt on top. 9. Bake pretzels for 12-14 minutes at 350o F. 10. Serve with delicious @lidlus beer cheese! . . . Any diet that rules certain foods as “off limits” or “bad” is not worth doing (in my humble opinion)! 📸: Giant Pretzel w/ Beer Cheese, Pretzel Buns w/ sliced brat, bacon & swiss + 2 “Spiked Ciders” which were Strongbow w/ a shot of Peach Schnapps (NOT A LOW POINT DRINK‼️) What I love about @ww is that it is a lifestyle NOT a diet! There is nothing you cant eat, everything is okay in moderation. Point values are based on four nutrients: calories, saturated fat, sugar and protein! The program, if followed correctly, teaches portion control, healthier choices and some basic nutrition information. It’s not for everyone, if you’re someone who gets fixated on calories or eating the lowest calorie foods, that can easily happen with points as well. The reason #ww gives you a certain amount of points a day,that are based on your gender, height, weight etc., is because they are in your healthy eating zone! Under-eating and overeating are equally as bad for your body and health for different reasons! I allow myself to use my weeklies on outings with friends like today, at this beer garden because I want to enjoy my life! I don’t want to live forever fixated on every single thing I put into my body. Also, weeklies are there for a reason so don’t be afraid to use them! I almost never use all of my weeklies and/or fit points but, it’s a holiday weekend. On Thursday I went to a celebratory dinner with friends where I used a ton of weeklies as well... but, it’s a marathon not a sprint! The most important part of this lifestyle/weight loss/ health journey is a mindset shift you have to make for yourself. | Soft Pretzels with Beer Cheese ⠀ (makes 8 pretzels) ⠀ ⠀ SUNDAY FUNDAY just got that much more fun cause you get to make these bad boys next game day🏈 They were surprisingly easy to make (besides shaping them lmao) and this beer cheese, you guys, UGH TO DIE FOR. Wow all your friends next Sunday and tag me if you make them :) ⠀ ⠀ Pretzel Ingredients ⠀ 4.5 cups of flour ⠀ 1.5 cups of warm water⠀ 1 packet of yeast ⠀ 1 tbsp sugar ⠀ 1 tbsp salt ⠀ 2 eggs ⠀ 1/4 cup baking soda ⠀ Coarse salt ⠀ ⠀ Cheese ingredients ⠀ 1/2 stick of butter ⠀ 3 tbsp flour ⠀ 1 clove minced garlic⠀ 1/4 cup lager beer ⠀ 1/2 cup sharp cheddar cheese ⠀ 1/4 cup milk or cream ⠀ ⠀ Directions: In a large bowl, add your warm water, salt, sugar and yeast packet and let sit for 5 minutes. Slowly mix in all of your flour and knead until well combined. Add a splash of olive oil to the bottom of your bowl, put the dough on top, cover and let rise for an hour. Once risen, slice the dough into 8 separate pieces, roll it out and form a pretzel shape (honestly just watch a YouTube video) Boil pretzels in baking soda water for 30 seconds each side, put on top of a lined baking sheet, cover in egg wash and add coarse sea salt. Bake at 450 degrees for 15 minutes. To make the beer cheese, melt the butter with a clove of minced garlic, add in the flour then whisk in the beer. Once combined, add in your cheese and cream till it reaches desired consistency. I’ve been making soft sourdough pretzels for @kingstonstandard brewing company since they opened in May. It’s been a fun and challenging project. I use local flour from @farmergroundflour and @wildhivefarm and nothing beats the flavor of freshly milled flour that includes the wheat germ. As the seasons change, so does the temperature in the kitchen I work out of and the dough needs to go in the walk-in sooner in the height of summer and stay out for longer to ferment as the weather cools down. A few weeks ago a whole batch of pretzels went to waste because I was still treating the dough as if it was August and the dough and shaped pretzels didn’t get the time needed for a proper rise.
