Oui, cest une des voies cool de la radio. le genre de voix, qui te rappelle celle dun vieux copain, la voix qui nous replonge peut-être aussi dans notre jeunesse. pour ma part, savoir me rappelle ce des trublions que javais dans ma classe lorsque jétais au collège ou pour ma seule et unique année de lycée. ses chroniques sont toujours drôle et subtile.. Thomas VDB était présent pour la soirée de soutien aux salariés de lusine Ford de Blanquefort. je navais pas vraiment de rendez-vous pour les portraits. Here to remind you on this brutally hot Friday afternoon that Domaine de la Romanée Conti is natural wine! Unfortunately, we haven’t gotten anybody in the company to marry into the Koch family and therefore can’t actually get any Romanée Conti, but we can get you pretty damn close with the wines of Prieuré Roch, Antoni Quari, and Yann Durieux. Prieuré Roch came about when the co-director of DRC, Henry-Frédéric Roch had the opportunity to buy a few parcels in Vosne-Romanée. With those vines he set out with the intention of creating a winery in his own name. Drawing upon the winemaking philosophies in place at DRC, Henry-Frédéric built his winery around organic approaches and minimum-intervention practices in the cellar: never fining, filtering, and an extremely conservative use of sulphur. In due time the Prieuré Roch domaine grew and became a magnet for those interested in winemaking. Enter Antonio Quari and Yann Durieux who apprenticed under the tutelage of Henry-Frédéric (until his passing in 2018) and co-director of DPR Yannick Champ. They each now have vines of their own to which they tend, employing many lessons learned at DPR alongside a few new techniques, as both young men now draw upon biodynamic principals in their vines and cellars. While we can talk about pedigree amongst these men, our view is that what really gives them commonality is a beautiful curiosity for wine. Antonio Quari’s domaine name translates as “to not go forward is to go backward.” At the risk of rambling, we’re happy to see such a statement on our shelves. (English 🇬🇧in comment 👇below). • • Voilà une appellation que j’apprécie en plus particulièrement 😍. J’avais déjà dégusté 2012 et 2015 (le 15 m’avait beaucoup plu !) et j’étais heureux de de découvrir 2014. Les élevages chez Ropiteau se font en fûts durant 12 mois pour cette cuvée avec 20% de fûts neufs. • • 🍷à l’ouverture j’ai eu un léger doute, le bouchon étant assez imbibé. Doute confirmé lorsque je l’ai servi. Le vin avait subi une oxydation prononcée 😥. Malgré cela je lui ai laissé un peu de temps afin de voir son évolution. Le nez 👃 est marqué sur le citron 🍋 confit, l’acacia, la mirabelle et des notes de cire. La bouche 👅est cependant fatiguée avec une oxydation confirmée et une acidité sur la finale me faisant pencher pour une mauvaise conservation de la bouteille ! Here’s @dominiqueansel’s banana bread and glaze recipes from his new book Everyone Can Bake. I used a silicone bouche de noel entremet mold to bake the cake but of course you can use a bread pan. Then I sliced off the crunchy caramelized muffin top (and ate it). Before glazing I flipped the bread so the rounded part was on top. This is the best banana bread recipe I have used. The resulting cake is wonderfully flavorful and the crust really caramelized like a canele against the sides of the mold. ............................................... Getting inspired by @gill.meller. We think our mighty pagnotta would be a great base for this amazing breakfast! . . . . A breakfast fit for a sea king! Mackerel and smoked bacon on toast. I’d kept the mackerel we caught yesterday cold in a bucket of sea water overnight then filleted them this morning. Fried good fatty smoked bacon in a pan then when it was crispy I lifted it out and added the fish to the fat, skin side down. A little salt and pepper and slivered garlic at the end. Meanwhile toasted some sourdough under the grill which got buttered and topped with the last tomato we had on board (from home) Piled the bacon and fish onto the tomato toast and poured over the garlicy, smoky, fishy fat for good measure. This JL Chave 2014 Hermitage Blanc is an opulent white wine from the Northern Rhône valley in France. Simply the best winemaker in Hermitage, the wines of JL Chave are bold, yet fraught with delicate finesse. The cépage here is made from a combination of 85% Marsanne and 15% Rousanne oaked in a combination of new and old French Oak for 24 months before release. The Chapel of Silence is located on the top of a valley on the border between the vast wild wood that dominates the landscape and a vineyard, acting as a threshold element between the two territorial systems. The Chapel is laic, it is born out of the desire of a local community formed by members of dif-ferent religious beliefs. It is meant to be a place of worship, silence, and prayer, suitable for everyone. The arrival is preceded by a long uphill walk, once at the entrance you are wel-comed by a monolithic element made of Botticino’s marble and excavated on the surface. This element serves also as a rainwater collector. The first space, longitudinal, leads to a fragment of the wood, framed by an iron opening that introduces a measured bond with nature; the second space, the main one, frames the outer forest and a three meters high menhir made of Botticino’s marble. This space was designed to be interpreted freely by the “prayer”, there-fore, there is no pre-constituted assembly, but only some leather pillows that may be ar-ranged as desired. A curtain also regulates the levels of intimacy with the outside as required. The Chapel is entirely made of bitumen-coated wood that lends it a black color, similar to that of the trunks of the oaks that surround it. 2018 EXTRA MILE FOCH HARVEST NOTES This wine is a product from twenty-five-year-old vines from Hugh & Mary Vineyard and fruit from premium growers in the Thompson Valley. The fruit was picked at the end of October under clear blue skies. Can you think of a better way to spend a fall day in the Okanagan?! Not a chance. WINEMAKER’S NOTES We are big lovers of Marchel Foch (even though it is not the easiest to make). These grapes were crushed and destemmed and then left to cold soak over several days. The must was fermented in small individual 3/4 ton lots until halfway to dryness, before being pressed in our half-ton basket press, and left to finish fermentation in American oak. This Extra Mile release of our 2018 Foch was the best three barrels of the bunch. The wine was barrel aged for 16 months before bottling. TASTING NOTES Aromas of chocolate, vanilla and coconut coupled with a round, rich palate make this the kind of full bodied wine that will keep you coming back for more (and more, and more). Flavours of blackberry, plum, and hazelnut pair well with a great cut of meat and a whole lot of Leonard Cohen. This is the wine you’ve been training for. ABOUT THE EXTRA MILE COLLECTION It’s never crowded on the Back 40 and the same goes for the extra mile. That’s because it’s not easy to go above and beyond. The thing is, if you’re not willing to settle for less than greatness, there really is no other option. Barbary duck, pomme purée, blueberry jus. As classic as it gets, for such a simple looking dish this was one of the toughest things I have cooked recently. I set out with every intention to cook the GOAT Robuchon’s potatoes with a 2:1 potato to butter ratio but I can never quite get it over the line, ending up around 3:1 this time around- passed then vigorously beat with my favourite @isignyuk. Ridiculously decadent, I am not ashamed to admit I was piping leftovers into my mouth post-meal. The jus I made by sweating shallots, red wine vinegar in before adding red wine and port to reduce down, then beef stock to again reduce before finishing with blueberries. The sauce had some acidity to cut through the richness of the dish which it really needed. The blueberries add a different flavour profile and some freshness, not the most obvious way to enter @_cookitupclub this week but duck and berries are a a match made in heaven so why not! Happy Labor Day! We hope you are enjoying the last portion of the long weekend. While the weather is still pleasant, may we recommend this lovely Loire Valley white from winemaker @luc_prieur Domaine Paul Prieur Sancerre Blanc is produced from Sauvignon Blanc grapes grown in several parcels of south-facing, sloping vineyards, mainly in the commune of Verdigny. The cuvees are assembled and blended from the different origins which enhance the wine’s richness and complexity. Around 70% of the grapes come from vines planted from two different types of limestone soil: the “caillottes” soil which contributes to the wines intense bouquet and vivid fruitiness with pleasant mineral notes, and the “terres-blanches” which provides its considerable body and structure, with great ripeness. The remaining 30% of grapes comes from a Silex soil in the commune of Thauvenay, adding a unique smoky “gun-flint” aromatic quality to the wine.
