Hello Friday and hello fluffy banana yoghurt porridge 🍌 Im still dealing with a bunch of overripe bananas, but I cant complain, this banana porridge turned out absolutely dreamy 😇🍌 So if you have a sweet and soft banana to use I highly recommend you trying this recipe for breakfast, especially now, when the mornings are already getting chilly. Its naturally sweet, comforting and contains an extra dose of probiotics and protein coming from yoghurt 😊 Ill leave you the recipe below! . Banana yoghurt porridge ▪️Half of a large banana, mashed ▪️1/2 cup (about 55g) oats ▪️1 cup (240ml) of water ▪️pinch of sea salt ▪️1/2 tsp of natural vanilla extract ▪️1/2 tsp of cinnamon ▪️1/4 cup (60ml) of plant milk of choice ▪️2 heaped tbsp of Greek style (thick) coconut yoghurt Add mashed banana, oats, water and salt to a sauce pan. Bring to a simmer, whisking frequently. Cook on low heat for about 5 minutes or until most of the liquid is absorbed, dont forget to stir. Add milk, vanilla and cinnamon, cook for a few more minutes until thickened, stirring constantly. Remove from heat and mix in the coconut yoghurt. Transfer to a bowl, top with banana slices, peanut butter, chocolate chips and walnuts, or different toppings of choice. Line a 9inxch square pan (8 is okay) with parchment paper. If using a 8inch pan, cut your bars into squares as they’ll be thicker. 2. In a large bowl mix oats, almonds, coconut flakes, chia seeds, cranberries and chocolate chips. 3. Place medium saucepan over low-medium heat. Add honey, peanut butter, coconut oil, salt, cinnamon, and vanilla; stir until warm. Stir for a few minutes until everything well combined. 4. Let peanut butter mixture cool down before adding to dry ingredients; so the chocolate chips don’t melt!! Once cooled, then add to dry ingredients. Transfer mixture to pan and press firmly down with spatula. The harder your press, the more they’ll stick together. 5. Place in fridge for 1-2 hours. Take out and cut into shape of your choice. So I tried #flaxmilk for the first time and I’m kinda on the #flaxwagon now. Literally 8g of protein per cup! It’s thicker and creamier than oat milk, but also pricier 😫 ive been digging it in my oatmeal but stick to it milk for that cup o joe. Also @good_karma_foods is dedicated to being a completely allergy friendly facility, which is so rare and refreshing when it comes to the “health food” brands. easing my way into friday with a bowl of PUMPKIN CAULIFLOWER OATS 🥣🧡 to make, I combined 1/2 cup of @onedegreeorganics sprouted oats and 1 cup water on the stovetop to boil. When the oats began to thicken, I turned them down to low and added 1/2 cup riced cauliflower, 1/3 cup of canned pumpkin, a spoonful of full-fat coconut milk, 1/2 tsp @simplyorganicfoods cinnamon, and 1/4 tsp each of ginger and nutmeg. Once the oats were fully warmed, I stirred in 1 tbsp of maple syrup and transferred to a bowl. VM Nutrition oatmeal with strawberries, blueberries, peanut butter, nuts, and hemp seeds! 🤩🍵🥜🍓 A bit high on calories for sure but so delicious and a great way to refuel after the gym or prior training. 🍓S T R A W B E R R Y C H I A S E E D P U D D I N G🍓 It’s that time in Ontario, Fresh strawberries are e v e r y w h e r e lately and I couldn’t be happier. Here’s a quick little recipe for a breakfast that legit tastes like desert if you’re feeling like breaking out of your ordinary routine. For the Pudding: 3 tbsps chia seeds 1 cup plant milk *shake well in a mason jar and let sit in the fridge for minimum an hour, or over night* Stewed Strawberries: 1 cup of fresh strawberries (tops cut off) 1/2 tsp coconut oil 1 tbsp of maple syrup or honey *heat the oil on medium low in a skillet and add the strawberries and sweetener of choice. Cook till soft and mash up slightly with a spoon or fork. Pour the cooked strawberries over the chia seed pudding and mix together. Managing Monday blues (yes they still exist in covid times!) with this creamy mushroom soup that we made into a filling lunch with our savoury granola. Sauté one cup of sliced mushrooms, 3-4 minced garlic cloves in 1 tbsp olive oil for 5min. Add 2 tbsp mixed herbs (I used oregano and thyme) and 2 tbsp cashews, take it off the heat, add 1 cup water/milk/veggie stock and let it cool. Blitz the mixture in the blender until creamy, add salt and pepper to taste. Heat on pan and then transfer to bowl and top with half cup of savoury granola. Lunch is served. Our savoury granola is flavoured with homemade Dijon mustard, virgin olive oil, lime, chilli, fresh herbs and comes fully loaded with oats, buckwheat, hazelnuts, almonds, pumpkin seeds and sunflower seeds. It’s the perfect addition to soups and salads to make it a wholesome meal. Quick, satisfying and high in energy to get ur butt going with the day’s work. Today marks my last ever first day of classes! ✅🥳 They were all on zoom, which is not exactly how I imagined starting my last semester of college, but I’m just thankful for the opportunity to be able to continue my education and be one step closer to becoming a nurse! Since my zoom class this morning started at 9am, I wanted an easy breakfast that didn’t require a lot of prep (I’m not exactly a morning person 🙅🏼‍♀️) which is why these PB & J overnight oats were perfect! I made the oats & the strawberry chia jam last night so all I had to do in the morning was assemble it! I have a feeling that overnight oats are definitely going to be one of my go-to’s this semester! #mealswithmandy #dEATS -oats: 1/2 cup oats, 3/4 cup almond milk, 1 tbsp chia seeds, 1tbsp peanut butter (I used @justins honey PB), and 1 scoop vanilla protein powder. Stir and store in the fridge overnight -strawberry chia jam: wash and slice strawberries, then add to a pan over medium heat. I had mid-week meal prep cooking party in my kitchen yesterday. 👩🏼‍🍳🎉 Once I got started I was on a roll and quick whipped up these Pumpkin Pie Chia Puddings (they only take 5 minutes!), roasted some cinnamon coconut sugar pecans, boiled some eggs, and put together a few salads. My husband unexpectedly came home to cinnamon spice all over the counter tops and I told him I decided to have a cooking party. He said, “I can see that.” 😆😂 Then proceeded to steal my pecans and eyed up the chia pudding. Haha • Thanks @laura.el.fitness for the inspiration to make these. All I could think about was Pumpkin Pie after talking to you and these did not disappoint!🧡 • These Pumpkin Pie Chia puddings tastes like Thanksgiving in a jar! 🍂 If you haven’t made it yet give it a try!! So quick and easy. I followed the recipe with the exception of almond milk. I used coconut milk from a can, I feel like it makes it thicker and creamier. Then topped it with my homemade cinnamon coconut sugar pecans, pumpkin seeds and sprinkled on more pumpkin spice. It’s a very basic recipe so you can whip it up in a hurry. It feels contradictory and confusing, but we are staying within our homes and limiting social exposure for the good of the community. We isolate, much less to protect ourselves, but to protect everyone. It’s painful to isolate. For the good of everyone’s physical health we do this thing that is hard on our mental health. I really think hanging onto the WHY we are doing it will help us get through and help guide our decision-making when we think about who and how we help. And hey, maybe even this here app can help us stay connected?⁣ ⁣ Any ideas for how to support those of us who cannot so easily stay home, whose livelihoods are tied to human interaction or who perform essential services please share below. ⁣ ⁣ My offering today is this recipe. ⁣ ⁣ Mango Cardamom Steel Cut Oats⁣ Serves 2⁣ ⁣ 8 cardamom pods⁣ 2 1/2 cups water⁣ ½ tsp salt⁣ ½ cup steel cut oats⁣ 1 Tbsp (or more!) pourable honey⁣ 1 mango, peeled and chopped⁣ Yogurt, to taste⁣ ⁣ Crush the cardamom pods with the back of a knife or in a mortar and pestle.⁣ ⁣ Add the cardamom to a small pot with the salt and water and bring it to a boil over medium high heat. Once boiling turn it down to a simmer for 5 minutes to let the cardamom infuse. ⁣ ⁣ Place a sieve over a metal bowl and pour the water into the bowl using the sieve to catch the cardamom pods and seeds. ⁣ ⁣ Pour the water back into the pot and bring it back to a simmer. ⁣ ⁣ Slowly pour in the steel cut oats and cook on low for 25 minutes, stirring occasionally.⁣ ⁣ While the oats cook cut up the mango.⁣ ⁣ After 25 minutes, taste the oats and cook for 5 to 10 minutes longer depending on how al dente or creamy you like your oats. Stir and add more liquid if it is getting too thick for your taste.⁣ ⁣ Once the oats are cooked add half the chopped mango, honey and stir. Divide between 2 bowls and top with yogurt and the rest of the mango and a drizzle of honey.⁣ - @leanneebrown on Instagram

Mein 10 Jahre jüngeres Ich würde in schallendes Lachen ausbrechen und es nicht glauben 😅 wenn man mir damals gesagt hätte, dass ich mal um 5 Uhr (🤪)aufstehe und mit dem Hund (🥰) joggen gehe (freiwillig) und dann einen Tee trinke und veganes Müsli voll lecker finde, hätte ich gelacht und genüsslich an meiner Zigarette gezogen. Freiwillig vor 9 aufstehen und keine Kippe? Und dann noch joggen ?! Ich habe joggen gehasst! Und vegan???? Frühstücken !?! Never! Niemals. Damals war ich zwar schon mit dem Ernährungsthema beschäftigt, weil ich immer abnehmen wollte, aber ich wäre nie auf die Idee gekommen, so zu leben wie heute. Aber dann sind so viele Dinge passiert 😔 Schrecklich traurige und wunderbare Momente, die mich dazu gebracht haben, das Leben und meine Gesundheit wirklich zu schätzen. 10 Jahre von Kaffe und Kippe hin zu Heidelbeeren und Joggen 😬 was für eine Zeitspanne 😮 hier also mein Frühstück und meine Morgenrunde 🤗 und Hund 🥰 Max. - @vegane_fitness_rezepte on Instagram

I’m alive whaaa. yeah, I am extremely inactive during school week, because the only meal I can actually take time to make is dinner, and the light is awful at that time anyway so yep haha. My week days are just school, gym, might have a random appointment or might have to meet someone and study. Thank you so much to @munchmesnack for sending me some of their amazing products to try! This was my first time trying their products and I really loved them. My favourite of the four flavours they sent me was the hemp seed blueberry. Munch is all natural vegan with super clean ingredients and reusable packaging which is amazing! I definitely recommend trying them out. They’re so versatile. I can’t believe I waited THIS long to try baked oats but I finally did yesterday for lunch and let me tell you... they are better than regular oats!! I used @sweatysweetpotato recipe and added some blueberries to the mix; defs on a blueberry kick these days!! Here are the details of this beauty bowl! • • 🍎1/2 cup of rolled oats 🍎2/3 cup of almond milk 🍎1/2 mashed banana 🍌 🍎1 tbsp of chia seeds 🍎1 tsp of vanilla 🍎a bit of cinnamon 🍎half an apple into small pieces 🍎optional: blueberries or any other summer fruit • • Instructions: 🍎preheat oven to to 400F 🍎mash the banana with a fork and add the other ingredients to a bowl 🍎give it a stir and top with extra cut up apple 🍎pour into a greased ramekin and bake for 20-25 minutes 🍎top with anything you’d like!
