За что я люблю осенние пряные пироги - так это за универсальность. Ведь что нам нужно? Один хороший рецепт, с которым можно будет протянуть до самой зимы. Яблоки, груши, сливы, тыква, инжир и прочие сезонные сладости, сменяющие друг друга, легко уживутся в одном и том же тесте. Да и пряности можно выбирать на свой вкус, мои фавориты это настоящая корица и мускатный орех. Но я знаю людей, которые принимают исключительно молотый имбирь, что тоже неплохо. ⠀ Пироги ещё хороши тем, что можно бесконечно экспериментировать с составом. Никто же вам не скажет, что пирог был не тот, потому что всегда есть аргумент а кто вообще решает, каким он должен быть. В этот раз решил попробовать с инжиром. Мне всегда казалось, что он слишком хрупкий что ли, для того, чтобы выпекать его. Теперь понимаю, как много я пропустил. Весь секрет - это выбрать на рынке инжир маленький и поплотнее, будьте уверенны, десерт получится фантастическим. Для лёгкой текстурности я добавил лепестки миндаля, тут всё на ваш вкус, но мне кажется они идеально похрустывают на фоне общей нежной текстуры. Инжир довольно сладкий, что позволяет использовать минимум сладости в самом тесте, а это несомненный плюс и особенный вкус. ⠀ Ну и самое главное - это подавать такой пирог горячим, полив сверху сиропом и добавив немного лепестков миндаля на тарелку. Знаю, что кто-то достанет шарик мороженного и такая идея тоже мне очень нравится. Такой пирог разлетится в считанные минуты, потому что осенью всегда хочешь больше ароматов, тепла и сытости. Корица и печённый инжир будут отвечать за первое, горячий сироп согреет, а плотная текстура с хрустящими лепестками подарит настоящее удовольствие. Sto parlando della Piadina-pancake, o #PiadaCake come la chiama Cecilia @delicious.breakfast, dalla quale ho preso questa bella idea! 💙 Non é altro che un pancake in formato XXL, sofficissimo, da tagliare a fette come se fosse una torta. Cambiano le dosi e gli ingredienti, ma il procedimento è lo stesso indicato da lei! La mia combo preferita è quella che trovate qui sotto: i fichi si sposano benissimo con la dolcezza della marmellata di albicocche e il sapore deciso del cioccolato extra fondente all’85%! . . PIADA-CAKE con marmellata di ALBICOCCHE, FICHI e CIOCCOLATO FONDENTE 🥞 ( 🇦🇺 PIADA-CAKE with APRICOT JAM, FIGS and DARK CHOCOLATE 🇦🇺) Per un padellino da 18-20 cm di diametro: - 30g di farina di avena - 10g di farina di cocco - 85g di albume - un cucchiaio di eritritolo (o anche zucchero/ altri dolcificanti a vostra scelta!) - 30g di purea di frutta (io amo quella di pera e quella di banana) - 1g di idrolitina + acqua qb (o bicardonato+limone o mezzo cucchiaino di lievito per dolci) Mescolare le farine (anche l’eventuale lievito se usate quello) e aggiungere poi l’albume e la purea di frutta mescolando per bene. Versare idrolitina e far reagire con acqua per qualche secondo. Versare l’impasto sul padellino caldo unto con un goccio d’olio e coprire con coperchio. Quando la superficie sopra risulterà asciutta, girare il pancake e lasciar cuocere un minuto anche dall’altro lato. G’day Neighbour ° No insty live tonight ... but didn’t want to leave you hanging without a @meatfreeweek recipe - Cjr & @meatfreeweek ° - “Armenian Pumpkin “ #ghapama Eat consciously in an effort to feel and live better 🎃 1 x 3-4kg pumpkin 1 onion diced 2 tablespoon olive oil 2 cups chopped mushrooms ( Swiss browns or buttons) 1 small bunch sage chopped 2 cups cooked rice ( long grain) 1 small bunch cavolo nero chopped and cooked for a few minutes in 2 tablespoon @riovistaolives olive oil 3/4 cup chopped walnuts 3/4 cup chopped dried figs 1/2 teaspoon @olssonssalt 1 bunch parsley finely chopped In a medium sized skillet sweet the onions in olive oil till translucent (4-5 minutes) add in the mushrooms and sage, continue to cook until the mushrooms have wilted. Tip contents of pan into a large mixing bowl. Add in the remaining ingredients and mix well, set aside. Using a sharp knife cut a 6 inch circle around the top of the pumpkin and remove. Using a large spoon scrape out the pumpkin seeds and soft innards. Pre heat oven to 200c Push the rice mixture into the cavity of the pumpkin, press in firmly and place the top back in place Place pumpkin onto a baking sheet or into an oven proof pan and place into the oven! Cook for 30 minutes at 200’C before lowering the temperatures 160’C for a further 2 hours! Cooking temp will vary depending on density and size of pumpkin. To test if ready pierce with a skewer, should be very little resistance. When it’s only Monday and you already need a pick-me-up, make this Apple and Honey Galette! Recipe created for @freshdirect. Step by step how-to on stories or in my highlights Ingredients: - 1 sheet frozen puff pastry, thawed - 1 1/4 c almonds, toasted - 1/4 c granulated sugar - 1/3 c brown sugar - 1/4 tsp. kosher salt - 2 tbsp. honey, plus more for drizzling - 2 tbsp. unsalted butter, melted - 1 tsp. vanilla extract - 1 tsp. almond extract - 3 large eggs, divided - 2 tbsp. unsalted butter melted - 3 large Granny Smith or baking apples, peeled, cored, thinly sliced - 1/2 lemon, juiced Preparation: Preheat oven to 425F. On a lightly floured work surface, roll out puff pastry into a 14” x 12” rectangle. Carefully roll the pastry around rolling pin and transfer it to a 9” cast iron pan, pressing pastry to the bottle and side of pan. Place in refrigerator. Note: galette can be formed plat on a baking sheet as well (see highlights). In a blender or food processor, blitz together almonds, sugars, and salt until the texture resembles sand. Add vanilla and almond extracts, honey, butter, and 2 eggs and blend until the mixture is well combined. Set aside. In a medium bowl, toss the apple slices with lemon juice. Remove cast iron from the refrigerator. Pour the almond mixture into the base of the pan and spread evenly over pastry. Arrange apples over the almond paste, then fold excess puff pastry over the edges of the pan towards the apples. In a small bowl, beat reaming egg with 2 tbsp. water to form egg wash. Brush pastry with egg wash. Bake for 40-45 min, until the puff pastry is golden brown and the apples have slightly softened. Let cool for 10 min, then drizzle with honey over top. 🥳 Marijke Bruinewoud is de blije winnares van het bericht waarin we vroegen: “welk speelgoed zou jij wel eens willen testen?”. 🥳 Haar keuze viel op ‘Ik leer symmetrie, dit artikel is genomineerd voor Verkiezing Speelgoed van het Jaar in de categorie 4 & 5 jaar. Marijke stuurde ons een hele leuke review toe: “Wat leuk! Van Verkiezing Speelgoed van het Jaar mocht mijn zoon Thijs het genomineerde spel Ik leer symmetrie testen. Omdat Thijs vaak bezig is met alles op kleur rangschikken en veel dingen netjes op een rij te leggen, leek mij dit wel een leuk spel voor hem. Ook houd ik van speelgoed, waarbij kinderen spelenderwijs leren. Met ‘Ik leer symmetrie’ moeten kinderen de afbeeldingen namaken die op de kaarten staan met de gekleurde vormpjes en door de spiegel zien ze hoe de volledige afbeelding eruit komt te zien. De oplossing staat op de achterzijde van de kaart. Toen het spel binnen kwam, moest er dus ook meteen mee gespeeld worden. Het was gelijk al een feest, omdat alle vormpjes uit de kartonnetjes gehaald moesten worden en op kleur in het bakje gelegd konden worden. Het spel heeft 4 verschillende niveaus met opdrachten. Omdat het spel vanaf 5+ is, en Thijs 3.5 jaar is, heb ik eerst alleen de opdrachten met 1 ster gepakt (niveau 1), zodat Thijs deze eerst kon proberen. Na uitgelegd te hebben wat hij moest doen, ging Thijs er zelf mee bezig. En dit ging best goed! Ook vond Thijs het echt leuk om te doen. Soms is het nog lastig om de vormpjes goed neer te leggen, maar al met al lukt het hem aardig en vraagt hij regelmatig of hij het spel weer mag spelen. Doordat hij het nu regelmatig speelt, krijgt hij nu ook echt wel door hoe het moet. Dus binnenkort gaan we verder met niveau 2. Het spel is dus een succes! Door de spiegel wordt het een leuk spel. Doordat de antwoorden zelf te controleren zijn op de achterkant van de kaarten, kunnen ze het zelfstandig spelen. Ook mooi dat er verschillende niveaus zijn. En handig dat het in een mooie koffer zit waarin je alles netjes kan opbergen! R E C I P E: Churros + doughnuts = possibly the best combination ever. 😍😁 Rolled in cinnamon sugar + hazelnut flavoured whipped cream and sprinkles on top. 💕 {⬆LINK to the recipe is in my bio⬆} Despite all the gf doughnut recipes I’ve come up with over time, I have to say these are still one of my favourite alternatives for sure. We are ready for colorful autumn leaves, cozy sweaters, pumpkin spice coffee, and pumpkin pie bars! Our friend @healthysimpleyum has created our new fall favorite 🍂 Crust: * 2 cups BOM Rolled Oats * 1 cup Walnuts * 6 Dates, pitted and soaked * 2 tbsp flax meal and 1/4 cup water Filling: * 2 1/2 cups Pumpkin puree * 1/2 cup full-fat Coconut milk * 4 Tbsp Cornstarch * 1/2 cup Maple Syrup * 3 Tsp Pumpkin Spice * 1 tsp Vanilla extract Toppings: * 1 cup mini vegan Marshmallows Instructions: 1. Preheat oven to 350 degrees F and line a loaf pan with parchment paper. 2. Soak dates in extra hot water for a few minutes. Prep flax egg by combining flax meal and water. 3. Add 2 cups of rolled oats to a blender and blend until oat flour is created. Set aside. 4. Add walnuts to food processor and process until crumb-like pieces form. Add oat flour, soaked dates and flax egg. Process for 4-5 minutes until dough forms. 5. Press dough crust into bottom of your loaf pan. Use the back of a spatula to flatten it out. 6. Add all filling ingredients to food processor and process until creamy and smooth. 7. Add pumpkin filling on top of crust and bake for 25 minutes. 8. Add mini marshmallows and broil for 2-3 minutes. 9. Take out and let cool-off for 2 hours. Refrigerate for up to 5 days. - @bakeryonmain on Instagram

I’m Dr. Smita-pediatrician, author and mother to two daughters! ⁣ ⁣ Today I want to talk about how we talk to our children. ⁣ Many of you know that I lost my mother-in-law to COVID.⁣ ⁣ What took me by surprise is when my 6 year old asked me if my husband and I would also leave her because of this illness.⁣ ⁣ I was prepared for many questions-but not that.⁣ ⁣ I want to share what worked for my family in hopes that it will help yours:⁣ ⁣ 💗 𝗦𝗵𝗼𝘄𝗶𝗻𝗴 𝗺𝘆 𝗳𝗲𝗲𝗹𝗶𝗻𝗴𝘀⁣ I let my daughter see me grieve. I let her see me say ‘I’m sad’. It’s important to create an environment where ‘all feelings are okay’⁣ ⁣ 💗 𝗩𝗮𝗹𝗶𝗱𝗮𝘁𝗶𝗻𝗴 𝗙𝗲𝗲𝗹𝗶𝗻𝗴𝘀⁣ When my daughter told me about her fears, my first instinct was to say “don’t worry about that!”-but instead I made a point to say “I understand you are scared. It’s normal to feel that way”⁣ ⁣ 💗𝗔𝗰𝗸𝗻𝗼𝘄𝗹𝗲𝗱𝗴𝗶𝗻𝗴 𝗨𝗻𝗰𝗲𝗿𝘁𝗮𝗶𝗻𝘁𝘆⁣ None of us can predict the future. Telling my daughter “I don’t know what’s going to happen because none of us can predict it” helped her to understand that it IS possible to live amidst uncertainty⁣ ⁣ 💗 𝗔𝗰𝗸𝗻𝗼𝘄𝗹𝗲𝗱𝗴𝗶𝗻𝗴 𝗪𝗵𝗮𝘁 𝗪𝗲 𝗖𝗮𝗻 𝗖𝗼𝗻𝘁𝗿𝗼𝗹⁣ While I can’t predict the future, I want to show my daughters what we are doing to stay safe. We are wearing masks, social distancing and being careful with our actions. I give them this comparison of ‘the eye at the center of the tornado’—where although everything around us may be chaotic—like the eye at the center of a tornado—we can control ourselves and our own feelings. We can remain calm within ourselves.⁣ ⁣ I call the year 2020 a ‘master class in resilience’ that has deepened my connection to my daughters in many ways. ⁣ ⁣ One of my favorite quotes is from Bessel Van Der Kolk, “ 𝗧𝗵𝗲 𝗽𝗮𝗿𝗲𝗻𝘁-𝗰𝗵𝗶𝗹𝗱 𝗰𝗼𝗻𝗻𝗲𝗰𝘁𝗶𝗼𝗻 𝗶𝘀 𝘁𝗵𝗲 𝗺𝗼𝘀𝘁 𝗽𝗼𝘄𝗲𝗿𝗳𝘂𝗹 𝗺𝗲𝗻𝘁𝗮𝗹 𝗵𝗲𝗮𝗹𝘁𝗵 𝗶𝗻𝘁𝗲𝗿𝘃𝗲𝗻𝘁𝗶𝗼𝗻 𝗸𝗻𝗼𝘄𝗻 𝘁𝗼 𝗺𝗮𝗻𝗸𝗶𝗻𝗱.”⁣ ⁣ I hope to maintain that connection with my children for a lifetime 💗⁣ ⁣ (I’m posting this picture from NYC because I met my MIL for the 1st time in a restaurant with the best guacamole in the city. In un bicchiere versate lacqua e lo zenzero in modo da aromatizzare lacqua. Versate lentamente lacqua nella ciotola fino ad ottenere una pallina morbida e senza grumi. Avvolgetela nella pellicola e fate riposare in frigo almeno mezzora. Stendete la pasta con un mattarello e create dei cerchi. Io li ho poi messi dentro dei pirottini in silicone. Versate dentro la marmellata o qualsiasi crema. Sbizzarritevi nelle decorazioni. Io oggi ho utilizzato la marmellata di FICHI E ZENZERO. I’m playing with Danish pastry this week and never having been much of a Danish pastry maker before coeliac and the last time I attempted them being well over 20 years ago, my shaping needs work. You can see from the raw dough picture that I put the fruit underneath the points of the pinwheel 🙈 Anyway, the main thing is the dough and I’ve managed to make a light, crispy, buttery dough with a soft centre that pulls apart to reveal layers of yummyness inside. I’m excited! I’ll be perfecting a few Danish recipes for my enriched dough course and recording it in October. Babka, Danish, fruit breads and more coming your way. It ain’t health food, but boy will it bring delight to your winter weekends. What’s your favourite Danish pastry? Which ones should I include in the course? Cream cheese and blueberry? I cant believe the initial lockdown periods will be under throw back categories now.... throw back to the times we couldn’t dine out so we dined in and made it classy 🤪 Time definitely has passed, we have survived almost 7 months being the responsible ones. Keeping social distancing and following all the guidelines. The most important guideline? How to be sane living the same day on repeat from 7 months? Nobody knows, how we adapted to this weird situation. How we managed to stay distant from our family from 1.5 years. Every morning starts to feel like a déjà vu. Tied to a thread, walking a guided, restricted path and just days passing. Many asks me the reason I turned Vegetarian. I felt at unease under lockdown, where I was safe, it was to keep me protected. Es pura felicidad, ligero y aireado como un soufflé... ¡Seguro lo amarán!😋 NECESITAMOS: Para el pudín: ✓ 1/4 taza de mantequilla ✓ 1 taza de azúcar polvo o azúcar glas ✓ 4 huevos ✓ 1/2 cda. de pasta de vainilla ✓ 3/4 de tazas de harina ✓ 1 cdita. de levadura en polvo ✓ 1 pizca de sal ✓ 2 tazas de suero de leche ✓ 1 taza de leche ✓ Ralladura de 1 limón Para la cobertura o topping: ✓ 100 g de arándanos ✓ Una pizca de azúcar glas ✓ Un chorrito de limón Para decorar: ✓ Almendras en rodajas ✓ Azúcar glas PREPARACIÓN: 1. Precalienta el horno a 180 ° C. Para preparar el pudín: 2. Bate la mantequilla y el azúcar hasta obtener una textura esponjosa. 3. Incorpora los huevos uno a la vez, hasta que estén bien combinados y añade la pasta de vainilla. 4. Tamiza y combina los ingredientes secos: la harina, el polvo para hornear y la pizca de sal. 5. Ahora agrega los ingredientes húmedos y combina de forma envolvente apoyándote de una espátula. 6. Vierte la mezcla en un Skillet Le Creuset previamente engrasado. Hornea por 45 minutos o hasta que esté dorado y haya esponjado. Para preparar la cobertura: 7. Eggplant Steaks with Buttery Cannellini Beans and garlicky tahini sauce. Here is another fall favorite which is also one of my most requested side dishes during holidays. These roasted eggplant steaks are very satisfying and are perfect as a main dish or an appetizer. Here is a recipe. Eggplant Steaks with Buttery Cannellini Beans and garlicky tahini sauce Makes 4-5 servings Ingredients For the steaks 4 medium size Italian eggplants or use japanese eggplant 1/3 cup of extra virgin olive oil 2 tsp of Cajun seasoning 1 tsp of salt 1 tsp of black pepper 1 tsp of garlic powder 1 can cannellini beans drained 1 clove of garlic 1 tsp of vegan butter Pomegranate seeds and fresh oregano for garnish For the garlicky tahini sauce 3 tablespoons of good quality tahini Juice of 1 lemon 1/4 cup warm water 2 cloves of fresh garlic 1/2 tsp salt 1/2 tsp black pepper Blend all the sauce ingredients together in the blender, add more water if the sauce is not thin enough. Preheat the oven 400 F. Cut the eggplants in half lengthwise and criss cross cut the center of each eggplant. Line the eggplant in a cookie sheet and season it with salt. Leave it marinated out for about 15 min. Drain any water that comes out the eggplants. Pat dry each and place it back on a cookie sheet. Brush eggplants on both sides with the generous amount of olive oil. Season with it with cajun spice mix, black pepper and garlic powder. Roast the eggplants in the oven for 25-30 min until top is nice a golden brown. Meanwhile, melt the vegan butter in a sauce pan, add crushed garlic and sauté for few seconds. Add the cannellini beans and heat the through. Take the eggplants out of the oven, drizzle with the tahini sauce, top it with buttery beans, pomegranate seeds and fresh oregano. What a lady, what a night! We had the absolute pleasure in creating a series of iconic “designer bag” inspired goody bags for Eve’s Birthday a few weeks ago. Inspired by the birthday theme of Claris the Mouse, a gorgeous book by @meganhess_official, we wanted to make sure each bag was hand-drawn, so I commissioned my 13 year old daughter to sketch the bag, which was then outlined, then coloured and illustrated on computer. The first bag here is the Lady Dior bag, which we styled here with amazing flowers by @madame.fleur_ and gorgeous goblet, gold cutlery and premium melamine plates from @theprettytablehire 🌸 swipe to see the process of making this bag into what you see here! Grilled fruit is always delicious, but its even better when its cold outside ❄ We LOVE these coconut grilled pineapple slices for a healthier dessert option during winter 🍍 Find out how to make this delish recipe by @nicole.dula below! 👇 INGREDIENTS 1 ripe pineapple 1 – 14 oz. can of unsweetened coconut milk, well shaken 1/2 cup of coconut sugar 1 heaping teaspoon cinnamon coconut whipped cream or ice cream for serving (optional) INSTRUCTIONS Set up the grill for direct grilling and preheat to high or use a grill pan over high heat. Peel, core and slice the pineapple into 5-6 slices. Shake coconut milk before opening the can. On a rimmed baking sheet, add your pineapple slices and drizzle with coconut milk, about half the can. Combine coconut sugar and cinnamon and sprinkle on both sides of the pineapple slice. Oil the grate and then put pineapple slices on the hot grill. Cook for 5-6 minutes per side. Check after a few minutes and move slices around if you have hot spots on your grill that are cooking some faster than others.
