I have had some of the best food ever, cooked by my mom. The curiosity to learn from her started only in my late teens. My mom wasn’t into baking, so I explored that by myself, from books and by attending workshops. . . After graduating and working in finance for two years, I realised I wasn’t meant for it and started figuring out something else to do. Because I was so fond of food, I decided to do something around it. I wanted to open a Café and started working on my plan. I took it to my parents, they laughed it off and told me to look for something better. . . But I couldn’t get it off my head, so I decided to take the leap and study pastry. That’s how Lavonne happened. I moved to Bangalore with a hope to find my calling. Once I was there, there was no turning back. I started spending more time at school, stayed back longer but when I would go back home exhausted, I felt content. That’s when I knew this was it! . . I had some great times with the Chefs at Lavonne. They not only taught me all about pastry, but also integral values like- to be disciplined and respect your tools and workspace. All the Chefs there have my heart! . . On graduating, I worked at Tiernom Patisserie for a brief period where my creative skills were put to test and I got to hone the artist in me. . . Thereafter, I started working at Le15 Patisserie! Le15 has always been one of my favourite brands and to be a part of it is a huge milestone. Working alongside Chef Pooja Dhingra in the test kitchen, on new products, and seeing them on the menu has been the most rewarding part of my job. . . The fear my parents had for me and I had for myself, the courage that took me to overcome that fear has kept me going. Keto Cream Puffs! Replacing the high carb pate a choux with cloud bread really works here! Have you made cloud bread? It’s super simple and kind of a blank dough/bread slate as it doesn’t have much flavor. I’m not sure who came up with cloud bread but it’s worth looking into. (Just google, ‘cloud bread’..there are a ton of free recipes out there for it.) But let’s talk about the filling here. Thanks to, @simplydelishnatural Insant Vanilla pudding for such an easy product to work with! I added in 1 cup heavy whipping cream and 1 cup 1/2 & 1/2 and it came out perfect! Bake your cloud bread, whip up the pudding, they have strawberry and banana flavors too which would also be amazing, and you have an impressive dessert with minimal effort. Drizzle with @choczero melted chocolate chips to finish them off! . . KETOPYATT10 will save you 10% on all @simplydelishnatural goodies! Beat the egg whites and cream of tartar until stiff peaks form. In a 2nd bowl, whip the yolk and cream cheese until fluffy and fully incorporated. Fold egg whites gently into the yolk mixture. Gently to not deflate the egg whites. Pipe this mixture in small circles onto a parchment lined sheet pan and bake for 15 minutes at 350. All ovens vary, don’t over cooked them. Remove form the oven and let them cool on the pan. Slice in half and fill with pudding. Follow for more @thespatoola 🌈🌈 📌📝Ingredients Cake 1 1/4 cups gluten-free flour *150g 1/2 cup sugar of choice *65g 1 tsp baking powder 1/2 tsp baking soda 1/8 tsp salt Wet ingredients 1/2 cup dairy free milk *125g 1/4 cup dairy free yogurt *62g 85g dairy free butter, melted 2 tsp vanilla bean extract Passion fruit panna cotta 200g passion fruit pulp 3/4 cup can coconut milk 1/4 cup maple syrup 1 tsp agar agar powder passion fruit jelly 150g Passion fruit pulp 1/4 cup water 3 tbsp maple syrup 1 tsp agar agar powder cake; Preheat your oven at 175c. Line a 6” square pan with parchment paper. In a mixing bowl, combine dry ingredients. In a medium bowl mix together wet ingredients. Fold the mixture with a spatula to incorporate. Pour the batter into prepared pan. Bake for 25 mins or until a toothpick comes out clean. Let cool completely. Panna cotta; add passion fruit pulp and water into a blender. Pulse the blender to separate the seeds from their gelatinous membrane. Rest a fine mesh sieve over a small bowl and pour the passion fruit into the sieve. Use the back of a spoon to press out the juice. In a saucepan, bring coconut milk, passion fruit juice to a boil. Add agar-agar and stirring constantly until completely dissolve, about 2-3 minutes. Add maple syrup stirring constantly until dissolved. Lower the heat and let simmer for 1 min. Pour mixture over the cake and refrigerate until set. Jelly; Combine passion fruit, water in a saucepan bring mixture to a boil. Add in agar powder stirring constantly until dissolved. Whisk in maple syrup, lower the heat and let simmer for 1 min. Pour mixture over the panna cotta layer. And refrigerate until solid. LOVE CAKE . . There’s a shop in Colombo called Fab where they sell this cake called Love cake. It’s a perfumey, nutty, dense cake with a caramelly top! You warm it up in the microwave for 10 secs and its pure heaven! . . I was introduced to this cake about 10 years ago when my husband asked me to try a piece that my sister in law had bought back! In true, “back then Aarati style”, I said “I don’t like it”! He goes, “but have you tried this?”, and again my typical response was “no but I don’t like it”! (This is literally what I was like with any kind of food mind you)! My husband, bless him was so perplexed; but wouldn’t give in and forced me to try a bite anyway! I ate my words and pretty much the rest of that cake! . . Anyway long story short - Sri Lankan love cake is such an amazing flavour! And these mini love cake loaves are my take on it! Ma buongiorno! 🌺 Di solito non pubblico delle ricette elaborate, o troppo impegnative da realizzare, ma fidatevi che QUESTA è una bomba. Quando lho preparata non ci credevo, ma i sapori erano tutti così equilibrati e le consistenze poi 🤤 Insomma, vi lascio la ricetta, poi mi direte voi 🤭 ______________________________________ 4 LAYERS CHEESECAKE 🍰 . Preparazione 1-2: 4 datteri + 2 cucchiai di burro darachidi + un pizzico di sale + una goccia di vaniglia + mezzo bicchiere dacqua Frullare tutto e tenere da parte meno della metà (questo è il nostro caramello di datteri) Per la restante parte aggiungere farina di mandorle o dAvena fino a consistenza modellabile e creare la BASE sul fondo di un coppapasta . PER LA CREMA BIANCA 50g di ricotta + 70g di yogurt greco 5% + un cucchiaio di olio di cocco sciolto (per una versione veg sostituite ricotta e yogurt con la crema di cocco full fat) . Dopo la crema bianca fare un altro strato con il caramello di datteri avanzato . Coprire con cremina al cacao amaro . Fluffy Blue Spirulina Pancakes 🌱 Using Heroic blue pancake supermix from @suncorefoods 💙💙💙 Happy Sunday! Sending love and hugs 🤗 Ingredients 1 1/4 cups Heroic blue pancake supermix *150g 3/4 cup soy milk *180g 3 tbsp dairy free yogurt *55g Mix all ingredients and well combined and smooth. Heat coconut oil in a pan. Cook pancake for a couple of minutes until it starts to bubble. Then flip and cook through for another 2 minutes. Repeat until all the batter is used. By going vegan or plantbased doesn’t mean you can’t eat cheese anymore. Well not the kind that had a momma but there is a whole variety of nut cheese that you can make yourself! Soft cheese, cashew mozzarella, almond feta, cultured sour cream and even ricotta. Qué tal está súper receta que hizo @rodgonzalez_chef hace unos días en el #retoseasonbox con nuestras albóndigas de quinoa 😱😋🤩 ⠀ 🧆ALBÓNDIGAS THAI🍚 Para 1 porción: 100gr de Pasta Vermicelli 3 unidades de Albóndigas de Quínoa (seasonboxsotre) 10gr de mantequilla de maní 20ml de leche de coco 1 diente de ajo 15gr de cebolla roja en julianas 10gr de zanahoria cortada en julianas finas 5gr de mix de frutos seco (seasonboxstore) perejil al gusto aceite de oliva al gusto Sal Pimienta. PREPARACION: 1. Poner la pasta en agua para que se hidrate. 2.Untar un poco de aceite sobre las Albóndigas y ponerlas en el air fryer por 15minutos aprox temperatura alta. 3. En un sarten previamente caliente poner un poco de aceite de oliva, el ajo machacado, y esperar que este un poco dorado, luego poner la cebolla roja y esperar a que este traslucida luego poner la mitad de la zanahoria, revolver todo para que se integren los ingredientes. 4. Poner sobre la mezcla de las verduras la leche de coco y la mantequilla de maní, mezclar todo muy bien y dejar reducir. 5. A short while back we did a poll - whether we should make the Semlas sooner... and the response has been a resounding YES! 💕 So beginning this weekend, we’ll be launching two kinds of semla - the classic 💕and caramelized apple 🍂🍁🍎. Made in house from scratch, these gems are made with brioche cardamom bun filled with housemade almond paste and whipped cream. Normally available from January till around Easter, but given the uncertainty we are facing this time, we decided to BREAK the RULES so people can enjoy it sooner 💕. We will only be making these in limited quantities during the weekend ONLY (Saturday & Sunday). You can also preorder/prepay them for weekend pickup! Dit mooie ontbijt- of lunchtaartje heeft een bodem van granola en een bovenlaag van chiazaad en kokosmelk. Super voedzaam dus! Perfect voor bij een gezonde, uitgebreide lunch. Niet voor het taartje, maar omdat het een superlekker yoghurtalternatief is.
