B.A.B.S III is the third edition of our annual release barrel-aged blended stout. Over the next 6 weeks were going to introduce the 6 different barrels used in the blend in the lead up to the release. We love working with wine barrels at Wild. They can give the beer juicy acidity, chalky notes of vinosity and subtle tannins, giving beers like Modus Operandi and Wineybeest their indulgent complexities. B.A.B.S has gained a very mature oak mouthfeel from these French red wine barrels which brings out exciting port like characters when blended with other spiritus barrels. So as many of you know, I have a pretty big obsession with brewing. Over the last 6 months I’ve been slowly upgrading my current home brewing set up. Yesterday this baby showed up on my door step. This is my new Spike Brewing conical unitank fermenter. I did weeks of research debating on which unit I wanted to buy and ended up going with Spike. I cannot say enough about this company! First off I ordered this Wednesday morning at 11am and it arrived yesterday at 10:30am (less than 48 hours!). The quality and craftsmanship that goes into these is unbelievable. All the welds are seamless and done to perfection. I look forward to Sunday when I put my first brew into it! About one year ago, we brewed a small-batch beer with homegrown peaches and allowed it to spontaneously ferment with Sugar House microbes. It turned out to be a delicious peach sour that was featured on Small-Batch Friday a couple of times. We kept this yeast culture alive using the Solera method, where we keep the fermenter topped off with fresh wort. 🍑 Thanks to our friends at Mountain West Cider, we have acquired a rum barrel that they got from Dented Brick Distillery. Weve now transferred our house sour culture to the barrel and also topped off our original fermenter. It will sit in this barrel for about a year until we do anything with it. Were super proud of every bottle that makes it to the shelf. No matter if its been aged for 4 months (like the very first bottles we sold) or 6 years (like our latest Brownstone and Bonded Rye). . And we place the age statement front and center where it cant be missed. . Perhaps it sounds like fiction but one retailer even asks for the younger barrels of our whiskey because they like those the best. . And the awards weve received arent correlated to age, either. . Young whiskeys have their own strengths. Fresh, bright flavors from the grain and the field, that tend to disappear with age. . To step into Hampden Estate is to experience a step back in time to an unchanged, 18th century distillery. Since 1753 Hampden Estate has continuously produced some of the most sought after and valuable rum in the world. In the early 1900s the method of producing extremely high ester rum was developed at Hampden and spread to the other distilleries in the area— the parish of Trelawny became the epicenter of Hogo. Trelawny rums were famous for their extremely high esters and Hampden is the region’s last continuously operated distillery, still producing with the same traditional methods. In 2009, the Hussey family bought the distillery and retained all of the traditional practices of Trelawny Rum. In 2010, Rum began aging at the distillery for the first time in history. A world premiere. Hampden 2010 C💎H is an incredibly powerful bottling of Hampden Estate rum exemplifying the single marque showing 1300-1400 grams of esters / hlpa (the second highest marque of the distillery). This expression is completely aged at the distillery in Trelawny, Jamaica. It has never before been bottled on its own in history, a world premiere. Bottled at cask strength after 10 tropical years, with 64% angel’s share (evaporation). Distilled 2010. Its Whisky Wednesday here at Shelter Point and today we are enjoying one of our smallest releases to date. The Forbidden named after our local landmark The Forbidden Plateau, this small mountain and our whisky are similar in that they are both shrouded in mystery. This whisky is our very first release of a Single Malt Wheat whisky. It takes a lot of Champagne to make great wine. To treat our press wine with the upmost respect, we are experimenting with a Coquard bucket press from Champagne. Our Marzola presses have served us well, and it is time to move forward and bucket-up our press wine component. One of first contributions of Lucien Sinneaux, Mouton winemaker and first co-winemaker at Opus One, was to blend back press wine into the free run. Hey everyone, just wanted to take a moment to say thank you for all the support during this crazy time. This month marks 10 years of professional brewing for me and I am incredibly grateful to be standing on the brew deck at Pariah as I type this. As a new resident of San Diego at the time, I was able to get a part time job at a liquor store and would go to the brewpub next door after work. I asked the bartender why they never had any house beers and he told me they didn’t have a brewer. After thinking it over I got up the courage to bring a 6 pack of home brew in, gave it to the bartender and said “Here’s my resume. I can start tomorrow.” In that 6 pack was a pale ale, a gose, a red IPA, a Belgian strong ale w/ raisins, and a stout that would become Dorcha Extra Stout. The owner gave me the job and I brewed water for 2+ weeks while opening valves and listening for where the water came out to teach myself the system lol. What a wild ride it has been thus far. Coming to San Diego was at a pretty low point in my life but falling in love with this craft has brought me more joy and more awesome life experiences than I could have ever imagined including meeting Christa, who everyone knows is my better half. Opening and running Pariah is easily the hardest thing I have ever done in my life yet I truly love every bit of it. That ethos continues – and evolves – with the launch of our distillery this week, but with a hyper-local focus on our hometown, Accord, NY. It is the land surrounding our farm and the generations of brilliant agriculturalists who have worked the soil that provide the inspiration and provenance for the spirits we are distilling. Our barley, wheat, rye and corn are all grown right here – in Accord. From grain to glass, Arrowood’s distillation process is guided by tradition, but at the same time we are also doing things a little differently. A true point of distinction is how our spirits are distilled on the grain. This process carries the grain all the way through to yield a full body and a unique flavor that truly reflects our place and time. That flavor coming through is Accord. Clonakilty Distillery has just announced that it will start manufacturing hand sanitisers. CEO Michael Scully said, “our main priority is public service, and we feel any company in a position to offer a helping hand right now, should do so.” Scully said that “we are adhering to HSE specifications, creating sanitisers with an alcohol content of 63 per cent ABV. Fortunately, we already have suitable 500 ml PET bottles and equipment in place, which means that we are ready to go into production immediately. We expect to have our first batch of 5,000 bottles ready within the next week.” Scully said, “We plan on offering the sanitiser for free to local charities and those most in need.” The company will supply the rest at cost, at first to the local community.
