Warm up with Executive Chef Jitins French onion soup recipe Ingredients Butter - 125 grams Onions (sliced) - 5 medium Garlic (chopped) - 3 cloves Sugar - 5 grams Red Wine - ½ cup Beef Stock - 1,250 ml Thyme - 2 sprigs Bay Leaves - 2 pieces Beef (diced, no fat) - 500 g Salt & Pepper - As per taste Crostini - 1 piece per serving Gruyere Cheese - 30 grams per portion Method 1. Melt butter in a large pot over medium heat. 2. Add onions and sugar and cook until soft, without browning. 3. Turn down heat to low, and cook for 30-45 mins until onions are brown. 4. Bring heat to medium. Add the garlic, thyme and bay leaves. 5. Cook until garlic is soft. Add the red wine and reduce liquid to half. 6. Add the beef stock, beef and bring to a boil. Reduce heat and simmer for another 20 mins. 7. Ladle onion soup into an oven safe bowl with crostini on top. Cover with Gruyere cheese. 8. Bake it in oven at 375°F degrees until cheese has melted. 9. Warm up with Executive Chef Jitins French onion soup recipe Ingredients Butter - 125 grams Onions (sliced) - 5 medium Garlic (chopped) - 3 cloves Sugar - 5 grams Red Wine - ½ cup Beef Stock - 1,250 ml Thyme - 2 sprigs Bay Leaves - 2 pieces Beef (diced, no fat) - 500 g Salt & Pepper - As per taste Crostini - 1 piece per serving Gruyere Cheese - 30 grams per portion Method 1. Melt butter in a large pot over medium heat. 2. Add onions and sugar and cook until soft, without browning. 3. Turn down heat to low, and cook for 30-45 mins until onions are brown. 4. Bring heat to medium. Add the garlic, thyme and bay leaves. 5. Cook until garlic is soft. Add the red wine and reduce liquid to half. 6. Add the beef stock, beef and bring to a boil. Reduce heat and simmer for another 20 mins. 7. Ladle onion soup into an oven safe bowl with crostini on top. Cover with Gruyere cheese. 8. Bake it in oven at 375°F degrees until cheese has melted. 9. Feeling extremely grateful as I reflect on the last couple of days. As I said last night, I am so lucky to apart of the community @dementedfermenter and @whitneykate_ have created at @tmchugos . I really cannot thank them enough. Going though @appetiteforexcellence has shown me this sense of community can go beyond my work place and hometown. Entering a competition of this sort was outside my comfort zone and so different to everyday kitchen life. But the nervousness surrounding it was definitely outweighed by the huge amount I learnt, fun times and amazing new mates. Hoje (ontem, no caso; 13/09) ele estaria completando 75 anos. Se foi muito novo, aos 68. Perdemos o contato diário quando eu tinha apenas 3 anos. Como qualquer filho de pais separados nos anos 70, nossa relação seguiu pelos encontros aos finais de semana. Era pouco, mas tinha amor. Assim eu cresci. No final dos anos 80, foi morar em Gramado. A distância física aumentou. Mas nunca deixávamos de conversar e de nos encontrar. E seguimos nos amando. Do nosso jeito. Era festeiro. Sempre rodeado de amigos e amigas. Fiz muita festa com ele. Sério. É legal sair pra noite com o próprio pai! Em 1995 aumentou ainda mais a distância física. Foi morar na América Central, em Honduras. Ficou 16 anos lá. Nunca nos vimos nesse período. Apenas telefonemas, algumas cartas escritas a mão, outras por fax. Depois o email, MSN... Era tudo distante, mas nunca faltou o principal: amor. Em 2011, veio “passar uns dias aqui porque estava com saudade de todos”. Foi incrível. Bebemos chopps cremosos, fiz churrasco pra ele. Vimos o Inter ganhar a Recopa. Comemorou seu último aniversário em vida ao lado de muita gente que amava ele. Nessa visita, descobri seu câncer na laringe. Tentei, de todas as formas, convence-lo a ficar aqui. Não quis. Preferiu voltar para Honduras. O lugar que ele escolheu morar. Em maio de 2012 sucumbiu a doença. E, assim, os contatos que sempre foram mantidos de uma forma ou outra, encerraram-se. Quando fui convidada para a montagem do curso online de CULINÁRIA FIT, passei por todo o processo de seleção, e o diferencial de propor receitas caseiras, práticas e saborosas nos meus protocolos nutricionais, foi o primeiro destaque. Claro que eu levei para a equipe de seleção uma dessas receitas e acho que conquistei pelo paladar! Rs 🤭 Mas não foi só isso... Quando aceitei o convite eu pensei: “Agora é a minha oportunidade de compartilhar todo o sabor que eu sinto ao fazer uma receita “fit de verdade” com um alcance numeroso de pessoas que realmente se preocupam com a alimentação, e querem seguir um estilo de vida com o prazer de escolher e preparar os alimentos sem o “peso” ou a “obrigação” de estar em dieta”... Ontem, no Hospital de Pronto Socorro de Porto Alegre, aconteceram dois eventos que marcaram o dia no hospital. No início da tarde, a Direção do HPS recebeu a visita do grupo Arquitetos Voluntários, a empresa Health Club Brasil e do jogador do Sport Club Internacional, Andrés DAlessandro (@dale10 ). Juntos, fizeram a doação de um espaldar, colchonetes e uma bola para as salas de descompressão. Estes equipamentos são para os servidores utilizarem nas salas de descanso, que também foi reformada pelos Arquitetos Voluntários. Logo mais, foram retomadas as atividades do Projeto Lean no HPS. Projeto esse realizado pelo Ministério da Saúde em parceria com o Hospital Sírio Libanês, por meio do Programa de Apoio ao Desenvolvimento Institucional do SUS (PROADI-SUS). A proposta da metodologia é utilizar de princípios e técnicas, que buscam reduzir o desperdício de recursos e fortalecer as atividades que agregam valor aos processos hospitalares. Desta forma, o Projeto Lean nas Emergências, visa reduzir a superlotação nas unidades por meio do sistema de gestão, padronizando processos internos e diminuindo o tempo de permanência nos hospitais públicos. . . . Thank you Nashville! See you all in Portland~ This was probably one of the hardest challenges I’ve ever faced in my life. I was not able to perfect my performance the way I wanted it to be this time, but I worked hard and did my best. 2 months of putting in work each night and having nightmares about whats the worse thing that could happen. I had maybe an estimate of 1000 anxiety attacks and there were many times I wanted to give up and run away from this because I told myself I couldn’t do it. This weekend was incredible and such a new experience for me. The only way I can get better is from experience and constantly challenging my limits. It may take years for me to get better, but I won’t give up until I try my best! Thank you @glittercatbarista family for giving me so much support. @tbenfischer @ericjgrimm who are beautiful people in the inside and out for going the distance and putting in the hard work for us to make sure we succeed! O Top Chef Brasil continua, mas para mim foi a última vez naquela cozinha. Um sentimento estranho porque a vontade era ficar até o final 🙃 Como disse, saí feliz pela trajetória, por ter sido eu mesmo o tempo todo. Conseguir aprender e trocar experiências com ética e alegria, apesar das dificuldades do confinamento, foi a maior vitória. Nesse último (meu) episódio, encaramos uma prova difícil e inédita que, apesar de ter perdido, adorei fazer. Mandioquinha é algo bem brasileiro e não faz parte das minhas raízes, um desafio a mais além da comunicação à distância. Na prova final, me senti muito bem comigo. Estava confiante porque fiz receitas de família, adaptadas para que tivessem esse toque #topchefbrasil. Usei referências aprendidas no Brasil e apliquei um pouco da minha admiração pela culinária oriental. Entre tantos ingredientes, o missô não brilhou, algo que faz parte do dia a dia da cozinha. Mas no programa não há segunda chance para ajustar. As palavras dos jurados, que não cabiam no programa editado, me confortaram e mostraram que o caminho que escolhi, quando deixei a Química (após o doutorado) para seguir entre as panelas, é mesmo sem volta. Não sobrou nada nos pratos que servi e é o que me importa: oferecer comida boa, que aqueça o coração e traga a ideia de conforto e família. #topchefbrasil #topchefbrasil2020 🇮🇹🇧🇷 - @petenzimichele on Instagram
