Lactose is a complex sugar found only in cows milk made of two simple sugars: Glucose + Galactose. In order for our body to digest lactose we need the enzyme lactase to break it down into said simple sugars. For those who are lactose intolerant, lactose-free milk can be a great alternative, but how exactly is it made? In the manufacturing facility a lactase enzyme is added to regular cows milk and slowly mixed for a period of at least 24 hours, to ensure that the enzyme has broken down the lactose present into Glucose + Galactose. After this period the milk is tested by the quality team to ensure that the levels of lactose are present are negligible.
