𝐂𝐡𝐢𝐜𝐤𝐞𝐧 𝐄𝐧𝐜𝐡𝐢𝐥𝐚𝐝𝐚 𝐑𝐞𝐜𝐢𝐩𝐞 Now before I get into this, I have to say one thing - 𝘵𝘩𝘦𝘴𝘦 𝘢𝘳𝘦 𝘯𝘰𝘵 𝘵𝘩𝘦 𝘦𝘯𝘤𝘩𝘪𝘭𝘢𝘥𝘢𝘴 𝘺𝘰𝘶’𝘳𝘦 𝘨𝘰𝘪𝘯𝘨 𝘵𝘰 𝘨𝘦𝘵 𝘧𝘳𝘰𝘮 𝘔𝘦𝘹𝘪𝘤𝘰. There is a time and a place for the real deal enchiladas. Unfortunately, it’s not at this moment for myself. So, I did the next best thing and came up with my own recipe that still has a great taste, but far fewer calories. For those of you who track your macros, here is the more specific set of ingredients: 🌮43.5 oz Chicken Breast (Raw) 🌯363 g White Onion 🌮15.3 T Salsa Verde (La Victoria) 🌯12 Corn Tortillas (Guerro) 🌮780 g Mild Green Enchilada Sauce (la Victoria 🌯120 g Diced Green Chilies (Ortega) 🌮175 g Sliced Black Olives (Early California) 🌯1 Can 98% Fat Free Cream of Chicken Soup (Campbell’s) 🌮3 oz Fat-Free Mozzarella (Lucerne) 🌯4 oz Reduced Fat Mozzarella (Lucerne) 1️⃣ Cook chicken breast, salsa, & onion in the crock pot for 4-6 hours 2️⃣ Shred the chicken in the crock pot once cooked. 3️⃣ Combine Enchilada Sauce, Cream of Chicken soup, & green chilies in a bowl. Mix well. 4️⃣ Using a 9x13 baking dish, place of layer of your shredded chicken on the bottom. 5️⃣ Add some of your sauce mix & cheese to the top of the chicken. 6️⃣ Next make a layer of tortillas using 6 of your 12 tortillas. 7️⃣ Do another layer of chicken, sauce & cheese. (This should use the rest of your chicken.) 8️⃣ Place your last layer of 6 tortillas on top. 9️⃣ Cover your tortillas with the remaining enchilada sauce mix, cheese, and olives. 🔟 Bake in the oven at 350* for 30-40 minutes or until the cheese is melted. Everything in the dish is already cooked so the cheese is all you’re waiting for. 𝐓𝐡𝐞 𝐦𝐚𝐜𝐫𝐨𝐬 𝐚𝐫𝐞 𝐟𝐨𝐫 𝟏/𝟏𝟐 𝐨𝐟 𝐭𝐡𝐢𝐬 𝐝𝐢𝐬𝐡. I just slice it into 12 pieces in the baking dish after it cools down. 𝐋𝐞𝐭 𝐦𝐞 𝐤𝐧𝐨𝐰 𝐢𝐟 𝐲𝐨𝐮 𝐭𝐫𝐲 𝐭𝐡𝐢𝐬 𝐨𝐮𝐭! The nice thing about this recipe is that the macros can be adjusted pretty easily. Want more protein? Use more chicken! Want fewer carbs? Less tortillas! I think the biggest thing I’ve learned over the years is if I wake up super hungry (which is rare for me most days I can easily skip breakfast) that I should make sure I eat. It curbs my cravings and it keeps me full so I can focus fully on other things. Trying to wait to eat is a set up for ordering junk food delivery for lunch or getting busy at work and being so hungry mid morning I grab a carb loaded snack and potentially can over eat without thinking. Yes. You can fit 3 perfect meals into your day and stick within your points. Or, you can use the flexibility of the program to work with what your body is signaling to you it needs. This kept me full so long I didn’t need lunch today. In the early afternoon I opted in for a big serving of hummus and celery instead. I’m feeling excited for my week. I have positive things going on and I feel centered from taking the time to eat right, exercise, and meditate regularly. During those first 5 months I soaked up all the baby snuggles, was relaxed, & the only form of exercise I really doing was going on stroller walks with my baby. Once 5 months hit, I just started making some small changes that I had done prior to having a baby, that had helped me get results in the past. I focused on moving my body daily, eating whole foods vs. processed ones, & drinking lots of water. Those small changes got me to the photo on he right (May 2020).I’ve continued the stroller walks with my baby, but have incorporated workouts from the @sweat app. I promised myself I would give myself lots of grace this year after having a baby, and I’ve proudly done that. As an example I cooked the easiest meal ever (rice and chicken) 😁 Here is what you need to do (given amount of each ingredients is weighed before cooking): 1. 🔺 CARBS - basmati rice 40g (you can replace basmati rice with brown rice, sweet potato (here 160g), whole grain pasta, quinoa or buckwheat), 2. 🔺 PROTEIN - chicken breast 130g (you can also cook chicken thighs, beef, any white fish, salmon or if you are a vegetarian you can have chickpeas, pinto/black beans, lentils, edamame or tofu), 3. 🔺 VEGETABLES - green asparagus 150g (can be replaced with broccoli, lettuce, green beans, spinach, kale, zucchini, tomatoes, cucumber, bell pepper or any other green vegetable of your choice), 4. 🔺 HEALTHY FATS - avocado 50g (instead you can have nuts (30g) , olive oil, coconut oil (one tbs) or if you go for salmon as your protein you can skip this step). . The whole lunchbox is 371 calories ✔️ . This is my usual meal I have 3 times at work (I eat 3 lunches, one every 3 hours). If you eat only one lunch, you should increase the amount of each ingredient in order to fuel your body with enough food throughout the whole day 🤗 They key to success is to eat better and healthier, not less. •EZ BREKKIE CASSEROLE• . Don’t get me wrong, I like to switch things up and get creative, however sometimes it’s nice to revert back to the basics! . If you’re a fan of using whole containers in recipes (aka, less weighing🙌🏼) this ones for you! . Deets 1️⃣Preheat oven you 350°. 2️⃣ Spray a 9x13 baking dish with nonstick spray and line with a tube of croissant rolls. Press edges together to seal. 3️⃣Scramble a small container of egg whites (~454g) + 5 eggs + seasonings of choice together and pour onto croissant rolls. 4️⃣Add 8 turkey sausage patties. (You could also use a whole bag of turkey sausage crumbles or any other meat of choice. *Macros will change.*) 5️⃣Cook for 20 minutes. 6️⃣Add a full bag of @velveeta shreds. 7️⃣Return to oven for an additional 10-15 minutes or until eggs are fully cooked. 8️⃣Divide into 8 servings. Most runners I start working with in my 1:1 coaching programs are under or improperly fueled 😖 ⛽️ . . To put that into reference, if you are a 140lb pre-menopausal female athlete, it is recommended you eat at LEAST 300g of carbohydrates daily if you exercise for about an hour on average daily🍌🥔🥯. This doesn’t even include the 60-90g of carbs you need per hour in your 2 hour + long runs 🏃🏽♀️ . . Do you know how many of my clients are eating enough carbs before we first start working together? 0% 😫 . . Share this with a friend that would appreciate this! ... Tag your gym partners!! . . . Banana Chocolate Chip Muffins. Gluten free, grain free, almost added sugar free (the chocolate chips have some). These are one of my favorite sweet treats to make. They are super easy and a great way to use up some old bananas 🍌 . . All you have to do to make these muffins is throw all the ingredients minus the chocolate chips in a blender and pour it in a muffin tin. Top with a few chocolate chips. Bake at 400F for 8 minutes. Each muffin has around 100 calories if you make 24 of them. A lot of these calories come from the peanut butter. You could certainly get creative and come up with some ways to reduce the amount of peanut butter if you are interested in being more calorie conscious. There are other nut/seed butters that are lower calorie but more expensive. . . Give these a try next time you have some bananas that are about to go bad. Make sure you understand that while these use healthier ingredients they are still very easy to overeat. You need to be cautious you stay within your goals. Because they are mini muffins, it is super easy to just pop them in your mouth mindlessly. Just because they use bananas and peanut butter as the main ingredients doesn’t make them “healthy”. When we decided to try out going vegan as a 30 day challenge, I thought, I can do this! But then I thought, but how can I possibly give up eggs!? That is until I learned the truth about the egg industry. . . A lot of people think that eggs are a cruelty-free food but this is so far from the truth. Chickens used for commercial egg production are perhaps the most-abused of all factory-farmed animals. They live in horrific, unsanitary conditions and their sadly shortened lives are nothing near happy. The stress of increased egg production and crowded living conditions aren’t the only cruelties inflicted on a hen’s sensitive and delicate body. Debeaking is a standard industry-wide practice (even by “humane labels”), done to reduce the aggression and cannibalism common among birds stressed by confinement. And of course there’s the fact that all the male chicks born are either ground up alive or suffocated to death. Millions and millions of baby chicks every year. The egg industry is cruel. . . Plus, the research, published in JAMA, says that the dietary cholesterol in eggs is associated with a heightened risk of cardiovascular disease and early death. . . 12.7 lbs. Three weeks. 21 workouts. No diet, no food restrictions (y’all have seen my stories!) 😋🥄😋RECIPE WEDNESDAY😋🥄😋 🥑🍳🍄Fried eggs with Enoki Mushrooms Avocado & Kimchi 🥑🍳🍄 Serves 2 1 tablespoon grass fed ghee 4 eggs 200g enoki mushrooms 1 avocado, cut into wedges 2 tablespoons kimchi 1 tablespoon black and white sesame seeds Sea salt and ground black pepper To make the mushrooms, melt half the ghee in a frying pan over a medium-high heat. Once hot, add the mushrooms and a pinch of salt and pepper, and cook, stirring occasionally, for 2 – 3 minutes, until the mushrooms are cooked through and slightly caramelised. Remove from the pan and keep warm on a plate. Melt the remaining ghee in the frying pan over a medium-high heat, and crack in the eggs. Cook for a few minutes, or to your liking. Season to taste. To serve, divide the mushrooms and eggs between plates, and add the avocado and kimchi. Sprinkle over the sesame seeds. I grew up in-shape and healthy but years of depression took a toll on my body. I tried and failed dozens of times before I finally made a change and stuck with it starting in December 2019. Since then, I’ve lost over 90 pounds and counting. My ultimate goal is 150 pounds to get to my “old self” and to feel my best. Too exciting not to share right meow! 😸 Today is 75 days from my first attempt at #75hard. (Official day 52). Am I sad about the “would have been.” Hell to the no. I’ve said it before, and I’ll say it again. There is no “failing” with this program. There is so much growth no matter how many times you restart. 22 pound difference between these photos. Workouts have mostly swerk (@swerkdancefit), with weight training a couple times a week and a walk outside #everydamnday. My work days are #activerecovery days with gentle yoga before my shift in the ICU and still that outdoor walk. Diet has been low carb/healthy carbs. I remember so clearly when my Instagram was full of pictures like this, because I wanted to lose weight. I followed countless pages that posted pictures like this every single day. I started to question my eating habits. Because these pages have thousands of followers. So why was I eating differently from them? There was something wrong with me and with my habits. These fitness/nutrition pages changed my relationship with food. These pages made me start counting calories. These pages changed my beliefs on food and exercise. Those pages made me become obsessed with what I ate everyday. This is not okay. Pictures like this are not okay. They influence girls. They perpetuate the idea that nutrition has to be micromanaged and controlled. They perpetuate the idea that in order to fit in you have to eat less. They perpetuate the idea that we should have rules to be successful eaters. But thats not true. Eating these small portions is not okay. We need energy to exist, to live and to thrive. Traditional boudin features pork liver and/or pork heart along with scraps of pork meat from just about any part of the hog. The meat is first simmered, and then drained and ground up. The ground meat is heavily seasoned and combined with vegetables such as onions, celery and bell peppers, plus cooked rice, to produce the filling, which just happens to be, essentially, a dish known as pork dirty rice. Day 11. What a journey! Started at 219 pounds, finished at 204. 15 pound loss. Haven’t felt this clean in a long time. Looking at the comparison pictures, #smashingreens really did make a difference. I’ll be placing another order, along with some of the other supplements this time. I think the hardest part of the past 10 days was keeping focused on the goal. Holy Tuesday!!! I was going full speed today. I had one of those VERY productive days and didnt even need an official workout because I did so much I literally got a 30 minute workout in! Hahah!! We (mom and I) have 4 staple food items on hand in our house at all times. We usually make them in big batches so they last awhile. Over the last 2 years my mom has honestly kept me afloat she continued to prep all of our items and just kept stock piling me with food. Pretty amazing. Today was my day to repay her. Even though I was busy and had lots to do I actually had a great day. I started gaining more and more weight throughout these two years and all of a sudden i was 211 pounds. That’s right....Bagel!!! You can eat bagels as a part of a healthy lifestyle. Here I have a Thomas’s 100% Whole Wheat Bagel. Instead of rice or raw oats, this is also another healthy complex carb. The bagel is 250 calories, but also has 11g Protein and 7g Fiber. These are great to have if you’re craving a bagel. Eat half the bagel if you’re on a lower calorie plan. You can fit these into your macros either way. On this bagel, I have 2 Tbs of Reduced Fat Garden Veggie Cream Cheese. Also a 4 Egg White Omelet with Chives and filled with 2.25oz Smoked Deli Ham. When I cook the ham first, it gives an even more smoky flavor and reminds me of bacon. Yum! Topped with 1/8 cup Reduced Fat Shredded Cheese. It’s really difficult for me to eat after a workout, especially in the summer! That, however, is no excuse to ignore recovery. I’ve found that I’m able to get fluids in and I’m able to both rehydrate and refuel! • I use a combination of the these drinks to get in a variety of nutrients that are also super hydrating💦 • My smoothie usually contains frozen berries, spinach, vanilla vegan protein powder, vanilla unsweetened almond milk, hemp, flax, and chia seeds! All the carbs and proteins to help me recover from a hard run! • If I’m in a hurry, Fairlife chocolate milk is great! It contains 50% less sugar, 13g protein and it’s lactose free! • I always have Gatorade in my fridge. A lot of people aren’t a fan of Gatorade due to its sugar content, but I have a little hack to help combat that. I buy the powder container, so I can control my powder to water ratio. The container is also cheaper than the bottles! As a runner who hits high mileage though, I know these sugars and electrolytes are important for me! • I love my Gut Health juice! I make it pretty much every week and it makes me feel so good! It’s made with beets, cucumbers, celery, carrots, apples, lemons, and ginger! • Finally, water! I bring my 40oz Hydroflask with me EVERYWHERE! 🔥 Transformation Tuesday 🔥 Tracie is an OG at Burn Boot Camp South County💥 After trying different home videos and big box gyms to stay in shape, she just never could find the right fit. Some of her coworkers told her about a local Burn opening up near her, so she figured shed give it a try. Shortly before the South County opening, I experienced a miscarriage. I was emotionally drained and needed an outlet to put myself and my health first. The diverse protocol and motivating atmosphere is one that cannot be replicated. Breaded Taco Shrimp and AirFried Tachos (Tofu Nachos). Using my homemade breadcrumbs I made with 647 Italian Bread, really took the tofu and shrimp up a level. I think these are worthy of a highlight. Breadcrumbs are 1sp for a 1/3 cup. Salsa Queso is 1sp for 2tbl, but make it go further by adding about a Tbl of water. Tachos - I had a frozen block of tofu that I defrosted. It makes the tofu more spongy and airy due to the ice crystals. Squeeze out all the water and rip into chunks. Sprinkle taco seasoning in the breadcrumbs. Toss the tofu in the crumbs. Spray with oil spray. Air fry at 400° and start with 6-8 minutes. Watch and toss til crispy. Drizzle with queso. Shrimp - save the breadcrumbs from the tofu (or start with a fresh batch) and add more taco seasoning. Heat up pan with a little olive or avocado oil. Take defrosted shrimp and press and roll in paper towels. Make a small egg wash (I used egg sub) and drop the shrimp in. Drop separately in breadcrumbs, toss/coat and cook in pan turning over once one side crisps up. Once both sides are crispy, plate and drizzle with salsa queso. - @foodiejudy_ww on Instagram

Ok guys, real talk time... I know this week Ive been touting the benefits of whole grains but only because our standard American diet usually under performs in this category. That DOES NOT mean we should demonize non whole grain foods like white rice or regular pasta. At the end of the day, all food is fuel and there is room for both in a healthy, well-rounded diet. Specific conditions may require more attention to portion control and food pairings but it is still possible. Unfortunately, diet culture has done a pretty great job of hating on foods, white rice being a huge one. As you can see, the nutrient breakdown is very similar between the two (specific products may vary). The only difference may be a touch more fiber and dash more protein. But 1g here or there WILL NOT make your break your health goals. A good rule of thumb is to make at least 50% of your grains whole grains but that is not the end all recommendation. In fact, it may even be less if you dont consume any whole grains now. This brings me to my next point... The minute we try to go from zero to 100 overnight, we set ourselves up for failure. Setting smart, realistic goals is the best way to learn new habits and improve health. Not sure how to do that? These foods are high in carbs, starch, and calories and should be avoided on most diets but are specifically bad if on the keto diet. • It’s important to eliminate all carbs – which includes sugar – from your diet in order to succeed on the keto diet. • Vegetables that are high in carbs like potatoes, sweet potatoes, and corn should not be on your grocery list. • Drinks like milk, soda, juice, sports drinks, smoothie, beer, wine, and cocktails are off-limits on the keto diet. • The keto diet is low-carb. This week there are a ton of warming recipes in the Meal Planner. This is what a typical day looks like for me. A full day of eating with tons of variety, flavor, and packed with nutrients! I try to get a variety of protein sources from beans, nut, seeds, and whole grains throughout the day. Plus a variety of fruits, vegetables, and healthy fats. Eating a balanced variety is important to ensure we avoid any gaps in our nutrition. Although, I would still suggest taking a b12 vitamin as its often cheaper and easier than keeping track of servings from fortified foods. So here’s an example of what I eat on a typical “keto” day. It’s usually about 5 meals eaten between noon and 10pm: Meal 1 - whole eggs, bacon or steak & avocado Meal 2- cottage cheese mixed with Greek yogurt, almonds, macadamia nuts & blueberries Meal 3 - Heka bar or cookie with coffee Meal 4 - steak, vegetables & avocado Meal 5 - protein shake made with @dymatize & macadamia nut milk Sometimes I’ll have a bag of @questnutrition chips and Diet Coke if I’m craving a snack. Here’s what you need: -Turkey breast from the deli -Lettuce leaves -Cheese of your choice -Sugar free sauce (G Hughes is the best) What to do: Add your meat and your cheese to your lettuce leaves and roll it up!! True Story.... A longtime customer found himself in another part of San Jose, far away from Wicked Chicken. He was craving wings, and found a Wing place nearby, stopped in a ordered some. He was shocked at the small size, and poor quality of the wings (previously frozen) and drove all the way to Wicked Chicken to get his Real Wings. Pretty decent value for the money. - DEEP FRIED CHICKEN LEG ON RICE - Though its skin was crispy and its meat was juicy, chicken was quite bland. - GROUND PORK SAUCE ON RICE - BabyE wanted her own meal, so we got her a small bowl. Good mix of seasonings. Meaty sauce. Sizeable portion. - LYCHEE BLACK TEA - Tasted different than what we usually get at other shops. Ah, they dont use lychee syrup here, instead, they use canned lychee. Lychee bits with every sip. This was good. - PEACH GREEN TEA - Similar to lychee black tea, tasted different here than other places. This had a subtle peach fragrance, like biting into a real peach. Very different taste than the ones using peach syrup. - BLACK TEA - Soft hints of roasted aroma that lingers.
