For those of you that dont know, last week was Zero Waste Week. Something that we strongly believe in at Greensand Ridge Distillery. To celebrate and continue this thinking, this week we have created this cocktail. . We had some wine leftover from last weekend that didnt manage to get drunk (we know, a very rare occurrence!) but rather than throw said wine away we created a delicious syrup from it. So we used Sauvignon Blanc boiled with 50:50 honey and caster sugar in equal amounts to the wine and a couple of sprigs of Rosemary. Nothing wasted! . 35ml Greensand Ridge London Dry Gin 50ml Fresh Grapefruit Juice 20ml Homemade Wine Syrup Topped with Soda Water . Super refreshing and far too easy drinking! This is an export Bottled in Bond bourbon, allowing it to be filled at a lower 90 US proof, rather than the domestic requirement of 100 proof set out by the Bottled in Bond Act of 1897. Sizes available at that time were 1/2 pint, pint, 4/5 quart (a fifth gallon or just a fifth), and gallon. This is a 4/5 quart bottle. Willett Distillery Pure Kentucky, Kentucky Straight Bourbon, 107 Proof. The sleeper in the Willett family of whiskeys. This is a blend of two different rye second grain mash bills. One high-rye (38%) and one OG Willett recipe with 12% rye. The whiskeys are aged roughly 5-7 years in favorable locations in the rickhouses before being masterfully blended. The Willett Distillery makes a number of great whiskeys and some of them have become very recognizable names--the Family Estate, Noah’s Mill, Rowan’s Creek, and Johnny Drum, sll come to mind among others. With a lineup like that, coupled with 100 years of whiskey making history it’s hard to surprise people. But so often when I crack open a PK 107 and tell the person sipping with me that this is from the Willett distillery I am met with surprise and bewilderment. And customarily a request for another pour. Pure Kentucky was originally launched in the 90s as part of the new small batch collection from Willett. Bourbon at the time was growing globally and most of the early Pure Kentucky whiskey was shipped overseas. Part of the inspiration for the package came from overseas as well; nowhere is that more apparent than with the XO designation, a famous cognac mark meant to signify an extra aged or extra old brandy. Some of those same traits also pay homage to not just the provenance of the whiskey but also the long and storied history of the Willett family, who long ago started their journey into distilling in the brandy world. Pure Kentucky has a classic rich brown color and the proof is masked by sweet nose of oaky vanilla, cinnamon, toffee, and maple. The balanced rye in the mash bill comes through with floral notes and minty eucalyptus, rounded out by hints of dried fruits like cherry and apricot, and then a touch of walnut. The oak comes through quite a bit on the palate in many forms--leather, clove, and baking spices--all followed by vanilla, toffee, and a rich oily texture. So, today marks the tenth anniversary of my dad, ol JBE, Jack Eshelmans passing. It seems like yesterday even though I had a hard time remembering today if it was 2009 or 2010. Just in case you havent heard this before, Jack brought liquor with him whenever he traveled. It always made me laugh because i told him, You know, dad, theres probably liquor on the way and liquor wherever you are going. But he did it regardless--for many years in a very fine leather etui case with crystal bottles--however, for our wedding, he bought the pictured bottle of perfectly average ($15/750 ml) Grants Scotch to California from Lancaster, PA. Though it stopped aging the moment it went into glass, thats a 40-year-old bottle now, and Ive taken to having a wee dram of it each year on this day as long as it lasts. I figure I can do this another ten years or so. You know, even though he was gregarious, quarantine would have suited him just fine: he puttered around days on days, writing, eating canned Campbells soup, Hammonds pretzels and (or with) ice cream, building contraptions to help him with his computer or the house, and generally driving my mom nuts, whether she was with him or not. All of this in what we would call fancy clothes. Saturday ruggeds for him would be pressed trousers and a polo shirt. Anyway, the dram is a testimony to the little quotidian memories i have of him that combine with his literally twinkling blue eyes, easy, guileless smile, gentle voice, kindness, ridiculous comb-over, and overall goofiness and goodness that carried him through life, and carried my mom, brothers and sisters along for too short a part of that journey. #jbe #dad #rip #scotch #memories #family #anniversary - @hoeshelman on Instagram

With Aberdeen having been in lockdown again I had to get a bit more creative with finding shots for bottles. One of mine and @emmabarclay89 go to spots have been Johnston Gardens. A lovely spot to escape city life right in the city and an ideal spot to snap this shot of the Elgin Classic. This is the entry level bottling that can be picked up in all good local stores for a reasonable price. A good daily drinker that’s very light and floral on the nose. Well balanced and smooth on the palate without any really big flavours. A reasonable finish, again without really offering too much. This does leave me interested to sample some more of their offerings... Though this endeavor is new, their company’s other business, Ferm Solutions, has spent the past three decades making distilleries around the world better. In 1897, The Bottled-in-Bond act was established and implemented nationwide. To be labeled Bottled-in-Bond, whisky must be from one distillation season, in the same year and aged in a federally bonded warehouse. Old Forester 1897 Bottled-in-Bond, presented at 100 Proof, follows these same regulations with utilizing a small batch of barrels aged for a minimum of four years resulting in a dark and spicy Bourbon. 📌Willett Distillery 4 Year Old Kentucky Straight Rye Whiskey The barrels that went into this small batch combined to make an amazing drinker. It opens up with time and is reminiscent of cutting into your dessert with your fork which releases cinnamon and baking spices with just a hint of oak. Hope everyone had a smashing Whiskey Sour Day. I celebrated it by making a rather tasty @gentlemanjack_au sour. You can find the recipe below: Safekicker Sour 60mls Gentleman Jack 30mls Fresh Lemon Juice 15mls Rock Candy Syrup* 15ms Egg White/Aquafaba** Shake with no ice (to get that silky smooth texture), then shake with ice and double strain into a chilled coupette. Dust with mixed spice*** * Rock candy syrup is equal parts sugar and water that’s dissolved over heat in saucepan, along with vanilla pods, star anise and cacao nibs. ** Aquafaba is chickpea brine. Shake a can of chickpeas, open and strain out the brine. Today’s Objective: Travel “From Cornwall to Madagascar” with the @smwsamerica release 94.8 . . Distilled in March of 2011, this 2nd fill ex-bourbon Barrel bottled at 62.4% ABV doesn’t pack the immediate punch I was expecting. Not that that’s a bad thing. Wait for it. The punch comes later. . . Nose: bright with pear, apple, cereal and oats, caramel, bread, light metallic astringency . Palate: oily, vanilla, fruity with pears, hint of mint (like Wrigley’s spearmint gum) .
