When it comes to fruit and vegetables choices, the more different ones we eat, the better. Variety is the key to supporting a diverse ecosystem of microbes within our guts.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Rather than simply aiming for 8 servings of vegetables per day, aim for a serving or two from each of the vegetable families most days: cruciferous vegetables, the parsley family, the onion family, the ginger family, leafy greens, roots and tubers, sea vegetables, and mushrooms. Vegetables not specifically listed within these families are still healthful but have not been studied in the context of the gut microbiome as extensively. They can be broadly lumped together into an other category, also worth incorporating in to the diet on a daily basis. In addition, within each family of veggies, mix it up day to day, so don’t always choose broccoli as your cruciferous veggies, and if having two servings of roots and tubers per day, choose two difference ones.⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ As a general rule of thumb, aim to eat at least 30 different vegetables throughout the week. One way to achieve this is “one of each” shopping. Får vi fresta med en lyxig kvarngrynspilaff – inspiration från mellanöstern! 🍽✨👌 4 portioner 🌾 Rostad pumpa • 1 hokkaido pumpa • 4 msk olivolja • 4 msk citronjuice • 2 msk lönnsirap • 1/2 tsk riven ingefära • 1 tsk salt & pepper 🌾 Kvarngrynspilaff • 2 msk smör • 3 dl okokt kvarngryn • 1/2 tsk kardemumma kärnor • 4 dl grönsaksbuljong • 1/2 tsk salt • 2 stjälkar svartkål, hackad • 2 msk citronsaft • 10 blad mynta, hackad • 100 g rostade hasselnötter, hackade 🌾 Tahiniyoghurt • 2 dl naturell yogurt • 2 msk tahini • 2 msk citronjuice • 1 msk lönnsirap 🌾 Gör såhär; Sätt ugnen på 200°C. Halvera pumpan (skalet kan ätas), skrapa ur kärnorna, skär i skivor och lägg på en bakplåt. Blanda ihop olja, citronjuice, lönnsirap, ingefära och salt till en marinad och häll hälften över pumpaskivorna. Vänd så alla bitar är täckta av dressing. Rosta i ugnen i ca 25 minuter eller tills de är gyllene. Häll över resten av marinaden och låt dra. Smält smöret i en stekpanna. Häll i kvarngryn och kardemumma och bryn två minuter på medelvärme under omrörning. Tillsätt grönsaksbuljong och låt koka på svag värme i 12 minuter. Häll av överflödig vätska och låt svalna. Massera in citronsaften i svartkålen och rör sedan ner den i grynen tillsammans med myntan. Rör ihop tahiniyoghurten. Lemon Roasted Salmon with Sweet Potatoes INGREDIENTS: -2 medium sweet potatoes, cubed -sea salt + fresh black pepper -½ teaspoon cumin powder -a few tablespoons of olive oil -4 cups of broccolini (or broccoli florets) -12 ounces of wild-caught salmon filets -1 tablespoon butter -2 tablespoons lemon juice -¼ teaspoon garlic powder -⅛ teaspoon red pepper flakes and/or fresh thyme (optional) INGREDIENTS: Preheat the oven to 425ºF. Arrange the diced sweet potatoes on one sheet pan and the broccolini on another sheet pan. Drizzle both with olive oil. Top the sweet potatoes with salt, pepper, and cumin, toss to combine. Toss the broccolini with the salt and pepper. Bake the sweet potatoes for 15 minutes, set broccolini aside. While the sweet potatoes are baking, prepare the salmon. In a small bowl, combine the butter, lemon juice, garlic powder, pepper flakes, thyme, salt and pepper. Heat in the microwave for 15 seconds or until the butter melts. Line a small baking sheet with foil, spray with cooking spray. Place the salmon filets on top. Drizzle with the prepared lemon sauce. When the timer on the potatoes goes off, remove and toss. Place back in the oven along with the broccolini and salmon for 12-15 minutes. Check on the salmon and broccolini around the 8 minute mark. Salmon is done when firm to the touch. Baking time will vary depending on the thickness of the filet. Divide the veggies and salmon into containers and allow to cool slightly before refrigerating.
