It’s Thirsty Thursday and today I’m enjoying a nice big g&t with a new gin that arrived on my doorstep today. This gin comes to me from the fabulous kids @oldyoungsdistillery and is the first gin issued to members of their Juniper Society. I think you’re all going to love the name of this one, even if it is a bit naughty. This special, limited-release small batch gin is called “F*ck COVID”. Yep, it’s been crafted to send a big “F You” to the virus that has hit the whole World so hard. The virus that has had a HUGE impact on all businesses, small and large, and all people, old and young (see what I did there?). At 60% abv this gin is a big one but oh man, it is soooo smooth (thanks to the inclusion of the distillery’s own honey). With healing things like ginseng and a nice helping of Tasmanian pepperberries, this gin is savoury, smooth, spicy and delicious! Perfect for raising your glass to say “f*ck COVID!” I’m enjoying mine with @lovestrangelove Light Tonic, a dehydrated lemon wheel and a few Tasmanian pepperberries from @bushtuckershop and ERMAGHERD I’m in heaven. Negroni purists are going to haaaaaaate me right now. So Negronis are traditionally equal parts Gin, Sweet Vermouth, and Campari. In fact most people would agree that usually the most important thing in a Negroni is the presence of that bright red Campari. This... isnt that. A White Negroni nixes the Campari in favor of Suze, a brilliant yellow bitter gentian root based French aperitif. It has an earthiness like nothing else and though this is not a traditional Negroni, this is still very much in the Negroni family. Bitter, boozy, and stirred. My wife pointed out that the shadow looked like a butterfly and now I cant unsee it, so without further ado, here is the: White Butterfly Negroni 1.25 oz @straydoggin Greek Botanical Gin 1 oz @vermouthdolin blanc .75 oz @Suzeofficial 1 barspoon cape gooseberry syrup* Garnish with fresh gooseberries and sage. With a hint of that sweet tart gooseberry flavor, the fresh crispness of the blanc vermouth, the earthy bitterness of the Suze, and the fantastic rosemary and sage in the gin, its a perfect combination. Stir ingredients with ice and pour over a clear ice cube. Slap some sage to release the oils and aroma, garnish, and enjoy. Cheers! *Bring 1 cup halved gooseberries and 1 cup water to a boil. Let this boil for a couple of minutes and then fully mash. You can use a spoon or a potato masher like I did. Add 1 cup sugar, stir until fully dissolved and then take off of heat and cover. Let this cool to room temperature and then fine strain to get rid of the solids. FYI, the solids can also be used as a tasty topping for ice cream. This 900L batch is a combination of two annual productions of mature Espadín made in March 2016 and March 2017. While Cándido and others generally separate each batch from the next, storage space for many palenqueros can be limited, and sometimes the logical move is to simply mix productions made from the same agave. Don Cándido selected 40 ripe magueyes in 2016 and 50 more the following year, harvested with his son, Heriberto, from their red earth tierra cascajo parcel known as La Mina, where the agave grows alongside food crops. Following an established recipe, the freshly harvested piñas were rested for eight days before roasting with mesquite wood for an additional eight days. The cooked maguey was uncovered and set to cool and rest for four days before processing with a machete and a small shredder. Sugar-rich, the dry fibers sat in Montezuma cypress sabino tanks for 48 hours before alerting the maestro to their need for water. Filling the vats with an equal part of well water, the guarape fermented for 10 days before double distillation in copper pot stills. Adjusted with a select cut of lower proof común for the second round of distillation, the alcohol levels were adjusted down until the presence of rich aromas and a proper cordón of bubbly perlas. The 2016 efforts yielded 400 liters; the process was repeated the following March to yield 500 liters. These 900L made from homegrown Espadín showcase the expertise of the maestro and provide much insight to the lands and practices that provide the aromas and flavors for which Miahuatlán is renowned. It’s actually a mocktail that can easily be made into a cocktail with a bit of a gin - the @barrhillgin I got from @gettapster is utterly perfect in it. Making the apple syrup for this was sort of a revelation for me. It’s blended, not heated, which gives it a thicker texture and keeps it bursting with fresh apple flavor. For those of you that dont know, last week was Zero Waste Week. Something that we strongly believe in at Greensand Ridge Distillery. To celebrate and continue this thinking, this week we have created this cocktail. . We had some wine leftover from last weekend that didnt manage to get drunk (we know, a very rare occurrence!) but rather than throw said wine away we created a delicious syrup from it. So we used Sauvignon Blanc boiled with 50:50 honey and caster sugar in equal amounts to the wine and a couple of sprigs of Rosemary. Here’s a reshake of a cocktail I first tried over a year ago. This time I’ve used @death.gin Chilli Gin and ermagherd, it really makes this sip sing! I discovered this very interesting sounding cocktail on @cocktails_bars website. This Pho Cocktail, a riff on the Vietnamese noodle soup, was invented by bartender Pham Tien Tiep in 2012 as his entry for a cocktail competition. It features the usual pho spices – star anise, cardamom, cinnamon – combined with gin, triple sec and freshly squeezed lime juice and it is all kinds of yum! Pho Cocktail Ingredients 60 ml @death.gin Chilli Gin (or an oriental spiced gin or dry gin) 15 ml @imperialmeasuresdistilling Mandeaux Liqueur 25 ml pho spice syrup* 25 ml lime juice, freshly squeezed 0.5-1ml fish sauce Garnish: coriander sprig, red chilli and a star anise Add all ingredients into your cocktail shaker with ice and a shake what yo’ Momma gave you! Strain into your chilled serving glass and garnish with a coriander sprig, a star anise and a slice of red chilli. *Pho Spice Syrup Recipe 1 cup white sugar 1 cup water 3 cardamom pods, bruised 1 cinnamon stick 1 star anise Dry toast the spices for a minute or two in a fry pan until they release their aroma. In a small sauce pan, bring sugar, water and the toasted spices to the boil and allow to simmer gently for 5 minutes. Leave to cool for a couple of hours. I was so excited to use my present, which was the cocktail mixing glass set, that I had to make myself the recommended martini. . . 60ml gin 20ml @maidenii dry vermouth . Stirred on ice, then strained into a chilled Nick and Nora glass. Finished with a few drops of olive oil, a twist of lemon peel and a trio of Sicilian olives. . . The gin by itself is beautiful and savoury as you would expect. The vermouth which Im trying for the first time is quite different to the Dolin dry that I normally use. Tasted neat, the wormwood tastes quite strong and medicinal to me. This all changes in the martini - I think this is one of the smoothest Martinis Ive had, where the flavours all balance - and some of sweetness comes through from the other native botanicals. Finally, the olive oil gives a beautiful luscious mouth feel that encourages you to knock back the cocktail quick smart. Sheer brilliance! . Fruity Friday A quick post tonight, to talk about todays unusual garnish- micro melons, also known as cucamelons. . These tiny watermelon looking fruit are grown on a vine and are about the size of grapes. But bite into one and it’s a pure taste of cucumber with a slight sour lime taste. . Even though they are small they pack a healthful punch. They are full of vitamins and minerals, antioxidants and fiber, and are also low in calories- bonus! 🤣 . It was an obvious choice of gin to use- @hendricksgin a classic gin which is served perfectly with cucumber, I cut and froze some of the cucamelons this morning into an ice tray and they worked really well. . Spoilt for choice tonight with two new gin purchases arriving from @theginporium. After giving their online Gin Concierge a whirl, I had a few new gins to choose from. First up is @jensensgin Bermondsey Dry Gin. This is a classic London Dry distilled in small batches and described as “gin as it should be”. This spirit is delicate neat with a balanced approach to botanicals of which none are particularly unusual or noteworthy. The simple bottle design is elegant and refuses to detract from what’s inside, and that’s a quality spirit. Celebrating Fathers Day with @fourpillarsgin Olive Leaf gin. . . I was so excited to use my present, which was the cocktail mixing glass set, that I had to make myself the recommended martini. . . 60ml gin 20ml @maidenii dry vermouth . Stirred on ice, then strained into a chilled Nick and Nora glass. Finished with a few drops of olive oil, a twist of lemon peel and a trio of Sicilian olives. . . The gin by itself is beautiful and savoury as you would expect. The vermouth which Im trying for the first time is quite different to the Dolin dry that I normally use. Tasted neat, the wormwood tastes quite strong and medicinal to me. This all changes in the martini - I think this is one of the smoothest Martinis Ive had, where the flavours all balance - and some of sweetness comes through from the other native botanicals. Finally, the olive oil gives a beautiful luscious mouth feel that encourages you to knock back the cocktail quick smart. Sheer brilliance! . Bulldog Mojito . 1oz white rum 1.25oz Goslings Black Seal 1oz Lime 0.75oz Simple 10-12 mint leaves . Lightly muddle/built in glass/add ice/bulldog it. . This is an ode to Covid where working sundays was a blast and everyone worked hard. A well earned drink at the end of a shift, and where we made a ton of jokes about bulldogs. I eventually said “you can bulldog anything” and said I was going to make a bunch of bulldog cocktails. While it is tricky to drink, and you would want a smaller jar thing to bulldog it with, it is very funny and this one goes out to @carterearlsopatyk @iamdarrenwilson and @redwords. They are so much more essential then we could ever really explain 🤓 No matter how well designed and creatively finished our stationery is, ultimately, a piece of card lying flat on a surface just doesn’t do it for ANYONE.
