My heart hurts today as we remember a really good person. Todd Shoberg was a fellow chef, a proud father, a strong athlete, a loving partner, and all around positive force. I saw him frequently at farmers markets and I have have great respect for the food he crafted. He loved great ingredients and honored them simply and in the most delicious way possible. ⁣ ⁣⁣ ⁣I have fond memories of him and Kira sitting at the kitchen counter in our restaurant, always gracious, kind and sweet together. ⁣ ⁣⁣ ⁣This year hasn’t made sense. Covid, curfews, racial injustice, horrible fires, the election, all are impacting our psyches. The round steak. Now this is definitely a cut from #backintheday You really don’t see this cut anymore because we advanced so much with how we break down a carcass. By removing each muscle individually you can ensure that you are cutting against the grain and you can remove any excessive silver skin. . . . Some of you may notice the color difference as you get closer to the bone. That’s actually due to the chilling process. The meat closest to the center takes a longer time to chill causing for a little discoloring. Still completely safe to eat! Don’t judge Beef safety by its color!! . . . You can’t forget these cuts are heavily used in locomotion so this needs to be cooked slow! Many years ago, I had the honor of cooking with @ckostow and his team at @therestaurantmw for the 12 days of Xmas event they held annually. Despite our crude offerings, Chris and his team made us feel welcome and helped transform Northern Thai country cooking into an experience worthy of the venue. That venue is now in ashes but my memory and appreciation for that amazing hospitality feels very immediate and clear. My heart goes out and I hope for a Phoenix like rise from the ashes.
