Thrown and altered iron rich clay, black Tenmoku glazed bottom portion, white slip and ash glazed upper.... Trus jadi iseng, saya coba bikin infused oil. Terinspirasi highlite @balibuda yang bikin minyak kelor. . . Pilihan minyak yang dipakai adalah minyak yang tidak ada aroma khas, antaran lain minyak kedelai, sunflower, canola gitu. Tapiiii... Karena gak punya, saya pakai minyak kelapa merk dorang yang memang gak beraroma. Saya sudah lama nggak belanja minyak kelapa sawit ya, jadi jangan ditanya boleh pake sawit nggak. . . Takaran mix herbs (Rosmary, Basil, Thyme, Sage dll) yang saya pakai 1/4 toples. Di resep Bali Buda minyaknya dihangatkan sebentar dengan cara di tim. . . Herbsnya bisa diganti bubuk kelor, bubuk seledri kering, bubuk rimpang atau bubuk rempah lainnya yang bermanfaat. Saya juga pernah merendam bawang tunggal pakai resep garlic confit nya mbak @sarahcandra bawang dan minyak dimasak dengan api super kecil, diamkan baru simpan dalam jar. Jarnya disterilkan dulu dengan cara dikukus. . . Lumayan jadi punya minyak yang beraroma herbs, sedap banget buat pasta, salad, sup dan lainnya. . . Another round of the Woodwind oolong. Enjoyable but confusing. It is very green and grassy and does not resemble typical lightly oxidized oolong teas. Other than Woodwind, I once tried a Japanese oolong made from minamisayaka cultivar and one made from koushun, both very light but with typical oolong mutations. This tea is rather green... I brewed it in a glass teapot and got generous, savory grassy notes, and then in raw clay, where wet leaves had a smell of fresh coriander and wormwood. It tasted like sencha, but you can guess some unusual processing twist from flavour and taste. Also the appearance of the leaves is more typical for Japanese greens, rather fragmented. Thinking of it as deeply withered tamaryokucha rather than oolong seems more to the point🤔It is strange and elusive like the transition between summer and autumn. ✨Sundays are for oat-milk making🥛✨ . Really, its so easy Ive even whipped the stuff up on hectic weekday mornings (mornings when I make breakfast for 2, pack breakfast to-go for myself, pack lunches for 3 and barely have time to change out of my pajamas before school drop-off and heading to work). . According to scientists: avoiding meat and dairy products is the single biggest way to reduce your environmental impact on the planet. . Our family is by no means vegan, nor are we vegetarian. . .and I cant imagine ever giving up cheese. . .but I think its all about trying to be aware and do better. So Im trying to cut back and find plant based alternatives where possible. Honestly, before I was even aware of the meat & dairy industrys environmental impact, I started buying less of each because they tend to come packaged in plastic. I found unpackaged alternatives. . .but they were more expensive. . .so I bought less. . I started exploring nut milks as an alternative to cream in my morning coffee. . .but none of them fit the bill (and local bulk nuts are waaaay too expensive to use in this quantity). Then I discovered oat milk and have simplified the process enough to make it doable (and affordable. . .downright cheap, actually) - so this is what I now use in our smoothies and my cereal. It doesnt replace all of our (dairy) milk consumption, but it cuts it back for sure. Still havent quit cream in my coffee though😬 . CRAZY EASY OAT MILK RECIPE: *~1 c oats *~2 c water *Splash of vanilla & pinch of salt *Optional: pitted date or maple syrup for sweetness *Blend together for a few minutes in a mixer (many recipes will tell you to soak & then rinse the oats before blending . I dont). *Many recipes will tell you to strain in a nut milk bag. I use a seive and funnel combo I had on hand and it works just fine. Dont buy anything if you dont need to! When I saw my friend @karen.t.ology make her delicious crispy Cantonese style noodles, I knew I had to also. Although I took a different route in my preparation, the result is the same. 😊 🍜This is my crispy Cantonese chow mein noodles topped with 3 meats in lobster sauce.😋 This dish is very special to me. In some bigger Chinese restaurants this dish is served tableside so that you can experience the drama that happens when the hot stirfry hits the hot crispy noodles and sizzles right in front of you♨️ The crispy noodles softens up as you mix and toss the stir fry to combine the two. 🍜Just like @karen.t.ology, I didnt want to deep fry my noodles to get it crispy. I was lucky enough to find fresh wonton noodles that are kept in the refrigerated section. In order to keep them from sticking together, these noodles are tossed with oil before packaging. My cast iron skillet was quite useful to me. All I did was put some of the noodles in the skillet, baked it for 10-15 minutes at 375°F or until crispy. 🍜While I was waiting for this, I stir fried my celery, tomatoes, onion, broccolini, fried tofu triangles, fish, roast duck, and beef for 1 minute. You want to keep the veggies nice and crispy still. I then added low sodium chicken stock to the pan with oyster sauce, white pepper, Chinese cooking wine, soy sauce, and a bit of sugar. Take it to a boil and thicken it with a cornstarch slurry. To make it a lobster sauce with out lobster, beat one egg and add it gently to the stir fry. Stir it around slowly to break up the egg. 🍜Take out the hot cast iron skillet from the oven and pour the stir fry over the noodles and listening to the sizzle 🎶🎶. Lag det! 🌟Ingredienser til en stor porsjon for hele uka🌟 4 rødløk i halvsirkler 1 dl 7 % eddik evt. eplesidereddik 2 dl sukker 3 dl vann 🌟Fremgangsmåte🌟 1. Kok opp eddik, sukker og vann, ta av platen når sukker har løst seg opp. Det tar bare et par minutter. 2. Del rødløken først i to gjennom roten. Lag deretter tynne skiver/halvsirkler. 3. Finn frem en tett beholder med lokk, og ha i all rødløken. Hell så eddiklaken over løken, og la avkjøle seg litt før du setter den i kjøleskapet. Den er ferdig etter en halvtimes tid om du har riktig tynne skiver, eller litt lengre om du ikke har kuttet så nøye. 4. Hier seht ihr die Vorbereitungen für einen Couscous Salat im Glas. Morgen wird auf unserer Arbeit gegrillt. Es wird jede Menge Bratwurst geben. Bis vor ein bis zwei Wochen wäre ich einfach nicht hingegangen. Weil es mich einfach so traurig macht und auch um zu zeigen, dass ich es falsch finde. Ich bin in den letzten Monaten durch die Beschäftigung mit dem ganzen Tier- und Menschenleid zu einem extrem traurigen Menschen geworden. Das versuche ich gerade zu ändern. Nicht nur für mich, sondern gerade weil es eins meiner Ziele im Leben ist, dazu beizutragen das Leid für die Tiere wenigstens etwas zu vermindern. Und das kann ich nicht als traurige Veganerin, die von allen Feiern fernbleibt. Vielmehr kann ich was dadurch ändern, in dem ich mich in die Mitte der Gesellschaft begebe und zeige wie lecker und entspannt eine vegane Ernährung sein kann. Da versuche ich gerade wieder hinzukommen. Deshalb mache ich mir grad einen extrem leckeren Couscous Salat und packe morgen meine veganen Burgerpatties mit auf den Grill. C‘est quoi ça ? Ça sert à quoi ? Ah les Mélets ! C’est de l’or. Presque introuvable. Produit encore par un planqué à Martigues que l’on tient au chaud et secret (s’il s’arrête cette fois on est morts...) le bocal contient des petits anchois étêtés conservés en saumure puis rincés et bien rangés avec poivre et grains de fenouil recouvert de leur jus. Ouvrez le pot, prenez-en une bonne cuillère à soupe et détendez la mixture avec une huile d’olive, une vraie. Trempez-y un morceau de pain de campagne et faites un vœu. C’est fort en goût ! C’est addictif ! On y revient cent fois ! Avec un pastis, vous aurez fait vos premiers pas dans la dégustation des mélets. Maintenant que vous y êtes vous pouvez pousser plus loin ! Mixés avec de l’huile d’olive ce sera votre anchoïade. Chauffés dans la poêle puis émulsionnés avec de la mie de pain blanc, huile d’olive et jus de citron, ça donnera une Bagna Cauda crémeuse, à servir sur les brocoletti et œuf mollet Toujours mixés avec plein d’herbes fraîches, du citron frais en brunoise, des câpres et voilà une acciugata extrêmement racée à servir avec un tartare de bœuf et bam ! en mayo pour des œufs mimosa ça marche à la folie ! FERMENTED TOMS These little fellas are a delight. I make them every summer. Tangy, sweet, sour, briny, tingling taste. Brine can be used in dressings with some good olive oil and extra herbs. Ragus, soups, sauces - add a splash of the brine for acidity and a few of the fermented 🍅 Easy peasy recipe below. Make sure your toms are firm not too ripe/soft. They will hold their texture better. 1 litre clean jar 500g tomatoes (small, firm) 4 garlic cloves sliced 3 sprigs worth of fresh oregano/basil leaves 1 x bay leaf 1 tsp black peppercorns Small pinch of chilli flakes Brine: 1l filtered water, 20g salt, 10g sugar Add the aromatics/spices to the jar. Gently prick each tomato with a toothpick. Add your tomatoes but don’t pack too tightly. Pour in the brine. Leave a little headspace. Form a lid on the top to keep the tomatoes submerged with a few celery leaves/stalks. Add a little weight to keep all under the brine. Close the lid. Keep at room temp for 3-5 days. Taste. If cooler temps (it’s like winter this week in Manchester) leave for a few more days. Tomate em Picles: bonito e gostoso! Os picles, do inglês pickles, são muito mais que pepinos em conserva. Na Open House preparamos picles de tomates, morangos e limões sicilianos. Sob encomenda, a terra é o limite: rabanetes, carambolas, maçãs, maxixe e peras... Picles resultam em conservas bonitas e gostosas, para se consumir puras e em drinks e saladas. Utilizamos vinagre de maçã verde 🍏 em alta temperatura no preparo para obtermos alta segurança alimentar e a preservação de cores e sabores. A produção de picles era uma forma de se conservar legumes para uso fora da estação, e para utilização em longas viagens, principalmente por mar. Embora o processo tenha sido inventado para preservar os alimentos, os picles são produzidos hoje devido aos deliciosos sabores resultantes, do kimchi ao chucrute, assim como beneficios à saúde. Algumas conservas tem grande apelo visual, e enfeitam salas e cozinhas. BANANA KETCHUP 🍌 Another thing borne out of isolation was a desire to revisit and learn more about some Filipino classics. Nothing is quintessentially more Filipino than banana ketchup. Invented by food technologist Maria Y. Orosa in the early 1900s (probably her most popular invention, but she invented many more important food products that got Filipino civilians thru WW2) due to a tomato shortage on the islands, it quickly became the condiment of choice in the Philippines. I personally didn’t enjoy the mass produced kind as a kid, I thought it was weird (“if it’s banana, how can it be red!?”) and tasted funny, but I’ve grown to appreciate their significance on the shelves. Quick broccoli kimchi makes a crunchy, gingery, fiery treat out of one of my favourite vegetables. Broccoli and ginger are already best friends in my opinion, but add some heat, garlic, umami and sour and it becomes something altogether sexier. Opening up a bottle of my kombucha that’s unflavored but sweetened with homemade pineapple syrup. 🍍 Check out my last post for more details too! Whenever I’m not adding fruit juice to flavor my kombucha, it’s always important to add a bit of sugar (in this batch, I used about a tbsp. of homemade pineapple syrup per 8 oz. bottle) to give the yeast something to feed on during the second fermentation process and create carbon dioxide — which is what makes the kombucha fizzy. This took about a week at room temp to get to this perfect level of carbonation that I like. No burping — I just had one “tester” bottle in the batch that I’d open along the way to estimate how the other bottles were carbonating. Honey Fermented Garlic with Lemondrop and Brain Strain Chillies. Ive been meaning to do this for ages since I saw @singularitysauceco post his. When my familys neighbours back in Surrey said they were getting beehives, I knew the day would soon come and here it is!! This fabulous flu busting remedy is super simple to do. Just place some garlic cloves (and a couple of chillies if you are that way inclined) into a clean jar and cover with raw honey. Screw lid on and invert every day to make sure everything stays covered in honey. You should start to see bubbles after a couple of days. Remember to burp it daily at this point as can get pretty active! Should pretty much keep indefinitely but I doubt it will last that long... 🤤 - @lazyferments on Instagram

Fine Feathers Kombucha closes storefront, might fully end operations ••• @finefeatherskombucha , Long Beach’s homegrown kombucha brand that had spread across the county, will be closing their brick-and-mortar storefront permanently with the possibility of shutting down all their operations. ••• “We don’t know the full extent of everything yet—we’re figuring that out concurrently,” said co-owner Jay Penev. “What we do know is that the Long Beach Boulevard storefront is closing.” ••• The store’s new retail hours are Wednesday through Sunday from noon to 4 p.m., with Sunday, Oct. 4 being the last day the retail shop will be physically open.
