The best example of a non-dedicated restaurant fully explaining cross contamination protocols was at Ffionas in Kensington, London. I gave my usual not celiac but not a preference spiel but the table next to us had someone who had celiac and a dairy issue. The friend I was with and myself sat in shock as the maitre d explained literally everything on the menu, allergens present, possible substitutions, and allergy protocols in their kitchen, from MEMORY. Ive had more than a few experiences where I felt confident that the restaurant I was at knew their stuff, but I dont think that level of knowledge and compassion can be topped.
