How does one explain this crisis to Margarito, a young man supporting infant children as a dishwasher who grew up speaking an indigenous language in the hills of Chiapas, Mexico; Sanko, a devoutly religious man from west Africa who escaped political strife who now scrubs the ovens working from midnight to eight in the morning; Jenny a young single mother from Columbia supporting three small children; Elizabeth, from Mexico City, a grandmother who makes the most beautiful hand-pressed tortillas and Sebastian, from Puebla, Mexico with a brilliant teenage daughter in a Queens high school who hasnt seen his family in over twenty years---what do I say, what can I possibly do immediately that will help put food on their tables--to assist these wonderful individuals who have helped make my restaurants what they have become. This is a dark moment for me personally when all my compassion and concern only contributes to my sense of powerlessness. I cannot abandon these people. While we are working diligently through all of the various government agencies, it is important that I come to you individually to ask for some immediate assistance for these wonderful individuals who may potentially fall through any of the various governmental safety nets that may be provided. Dear Friends, Family, and Black Restaurant Patronizing Guest of The SBPF. Im a black man, not a front man that OWNS TSBPF. Unfortunately, I dont have time to sit in a restaurant waving as guest come in. My goal for the TSBPF from the beginning was to open one and many others as a franchise and thats exactly what Im doing. Many years ago, I had the honor of cooking with @ckostow and his team at @therestaurantmw for the 12 days of Xmas event they held annually. Despite our crude offerings, Chris and his team made us feel welcome and helped transform Northern Thai country cooking into an experience worthy of the venue. That venue is now in ashes but my memory and appreciation for that amazing hospitality feels very immediate and clear. My heart goes out and I hope for a Phoenix like rise from the ashes. In recognition of National Hispanic Heritage Month, @UCLAalpert is proud to spotlight Kim Mendez-McLeish who recently received their B.M. last spring and is currently a first year M.M. student in Voice Performance. Their abuelito (grandpa) came to the U.S. as an undocumented worker to provide their family with opportunities. Music has always been a way for their family to bond. “To this day, anytime we get together, my dad will pull out his guitar and we will gather around to sing in harmony,” said Kim. “We sometimes even play gigs when I visit. My abuelita was always singing as she cooked or tended to her incredible backyard garden. She is the reason why Ive always wanted to sing mariachi.” In addition to studying western classical singing, Kim serves on the Culture of Academia subcommittee as part of the school’s new Anti-Racism Action Committee. “Our focus is to address decolonizing the curriculum, and to create better and more abundant opportunities for BIPOC at The School of Music, in both faculty and student populations. I hope that we can change how and what we learn to incorporate the music and experience of BIPOC people and cultures.” For Kim, being part of the Anti-Racism Action Committee provides an opportunity to shape change. “I joined the Anti-Racism Action Committee because I was sick of feeling like I was doing nothing to combat the injustices built into our systems and institutions. My days consist of meeting with suppliers and retail partners, meticulously working through each detail on our packaging designs/branding with our design partner, planning new product launches, writing blog and social media posts, managing and updating our website, tasting and testing all new products to make sure they are up to my standards before sharing them with you, finding good eco-friendly packaging solutions, occasionally repairing machinery when needed, and finding fun and exciting collaborations with companies who share the same values. @faleiroalisha - My journey as a Pastry Chef! The board exams had just wound up. With nothing to do, I took a stroll to the kitchen. It was my favourite place at home to unwind and de-stress. I remember during study leave, I would find myself there much too often. It was the time for making decisions; decisions about the future. Growing up I’d always wanted to be a media journalist. Journalism interested me from the time I was in the eighth grade. With my mum’s encouragement I’d take part in various debates and elocution competition, winning quiet a many. But it looks like life had different things in store. I am the eldest of three siblings. For my parents, I was much the guinea pig, coz my experience was their first experience. However, I am extremely grateful I could make my own choices. I was never forced into doing science in spite of my good grades and so at this time too, I had my own choices. I remember this day very vividly. All of us family friends had gone to spend the evening by the pool and since I loved cooking I’d made the snacks for after the swim. One of my mum’s friends casually mentioned to me why I didn’t take up hotel management as a career choice. I mulched over the idea and it sat in quiet well. In the days to come Id told my parents that thats want to do . Being the supporting parents that they are, never once did they disapprove. They helped me figure of how to go about it and apply for the all India entrance exam for the institute of hotel management not sure about what I was getting into. This was a time much before cooking was a glorified profession and Sanjeev Kapoor was probably the only known chef that time. I did some coaching, cleared the exam and got enrolled into IHM Goa. The twist happened then. Three years whisked by in what seems now like the snap of a finger. Decisions again. Where to next! I had a few job offers and I chose to work with the Oberoi Hotels and resorts in maximum city, Mumbai. I joined Trident Bandra Kurla and it was probably the best thing that happened to me. Así quedaron los 4 hermanos encargados del negocio y la gente decía: vamos para donde los hermanos Moya. Hermanos Moya sonaba mejor que “Variedades” y así cambiaron el nombre a “Arepas Hermanos Moya”. Llegaron a tener 4 negocios atendidos por cada uno de los hermanos. Nos sigue contando Oscar: Elio, comenzó a estudiar contaduría y abandono, yo soy TSU en administración, mención contabilidad y finanzas y Sócrates es abogado y estudio para chef. In the late 1950’s and early 1960s, my maternal grandparents Luther and Mary Jane (Luke + Mae) were owners of the New Esquire Show Lounge on Chicago’s South Side. In 2020, their granddaughter (ME!) was featured in Esquire magazine! @Esquire There has to a connection here, am I right? Interviewed by @iamaudarshia, this was such an opening and therapeutic experience as I talked to her about the root of my own food issues and how trauma from food insecurity can indeed be generationally passed down. Devastating news for Chinas chef community, for diners, for many many many friends and for his family: Austin Hu, chef, has passed away. No words, really. He was hustling and helping others until his very last days, at last weekends Heritage Eats food festival. That was what the guy was about: a love of food to his core, and wanting to share that with everyone else. He was a big force in Shanghais restaurant industry, and not just for Western restaurants, as the hundreds of cooks who worked with him over the years can attest. He was a close friend — we bonded almost immediately after he arrived in Shanghai, and it was clear this guy was going to be something in Shanghai. And he was. He never lost that drive, that curiosity, that ability to overcome setbacks and shitty landlords, and just keep smiling. I dont need to write more. Im just lost for words as I thought this day would never be. In the last 10 years Ive been cooking no one as made a greater impact then Chef. I was fresh out of culinary school had more ego then any skill. Then Chef came and humbled me down. He thought me how to hold a knife, sear a piece of fish, create a spreadsheet, how to lead a kitchen, how to lead myself, how to push yourself to limits that you thought was impossible. Not all times were blue skies and sunshine. He thought me as well to overcome the rainy days and the icy nights. Some might say I do well in icy weather. As much as he thought me he made sure that I made the decision he gave advice never demands. He lead the way never walked behind. That hard. Work beats the popular vote. Now as I go on to the next phase Im nervous, scared, apprehensive of the unknown. But through the years with him I learned how to look scared right in the face and bitch slap it...Thank you for everything chef. Hello Everyone! I am @VeronicaGarnett the founder of @BlackAdventuristas. If you have been following for a while, you may have noticed that for much of the last 3 years things have been pretty quiet around here. Besides the occasional post and adventure meet-up, it’s mostly crickets. “Why?” You might ask. My answer is...LIFE. I have not been able to commit to building this brand and growing the community because life has been life-ing. At this time a year ago I was in the midst of a major depressive episode. My mind was playing tricks on me. I thought that my life didn’t matter. I was questioning everything. Career decisions. Financial decisions. Life decisions. You see just a few months earlier I quit my full-time, “good” government job. I walked away from a consistent paycheck and benefits because I was drowning. My spirit, my life force, was being sucked from me. Walking away was the best decision I could have made. The journey since has not been easy, but it’s been worth it. I have done a lot of really difficult healing and transformational work. I am walking in my purpose. I am creating the life I want. How so? Ever since I was a teenager I dreamt of going to culinary school and becoming a chef. I started culinary school just before I quit that job. Now I’m about to graduate! But first I must complete a culinary externship. I’ve found an amazing opportunity in Senegal to do just that. I need your support to make this a reality! I have been hesitant to reach out to the BA community. But with the encouragement of my adventure partner-in-crime @danidares AND after my therapist @greatjoycounseling lovingly and figuratively kicked my ass in our last session, I realize how ridiculous that hesitance was. My life is a testament to what this platform is all about...living adventurously, experiencing new things, stepping outside of one’s comfort zone, conquering fears, and taking risks. I hope my story is inspiring. And I hope that this experience will be just what is needed to take #BlackAdventuristas to the next level. I’ve got some things up my sleeve.
