OGGI RISOTTO AL BERGAMOTTO đ. INGREDIENTI PER 4 PERSONE 350 gr. di riso carnaroli o vialone nano 500 gr. di gamberi 1 bergamotto ½ bicchiere di vino bianco secco ½ bicchierino di Grecale moscato 1 scalogno 1 spicchio dâaglio 1 zucchina piccola 1 costa di sedano piccola 1 carota piccola Olio extravergine dâoliva Un pezzetto di burro Sale fino Per il fumetto di pesce 1 costa di sedano e qualche foglia 1 carota 1 pomodoro 1 spicchio dâaglio ½ bicchiere di vino bianco secco 1 bicchiere di acqua PROCEDIMENTO Lavare i gamberi in acqua corrente, eliminare il carapace e staccare le teste (tenere da parte per il fumetto di pesce). Eliminare il filo nero sulla schiena. Tritare lo scalogno e rosolarlo in 4 cucchiai di olio, salarlo, aggiungere il riso e far tostare. Bagnare con la spremuta di un quarto di bergamotto e con il vino bianco. Lasciar evaporare e portare a cottura il riso aggiungendo il fumetto di pesce filtrato (il procedimento è descritto in seguito). Nel caso in cui non fosse sufficiente aggiungere acqua calda. Regolare di sale. Nel frattempo cuocere i gamberi in un cucchiaio di olio per pochi minuti, salarli e bagnarli con il Grecale moscato, lasciar evaporare e tenere da parte. Conservare anche il liquido rilasciato durante la cottura. Tagliare zucchina, sedano e carota a piccoli cubetti (concasse) e cuocerli per qualche minuto nella stessa pentola dove sono stati cotti i gamberi, regolare di sale. Le verdure devono rimanere croccanti. Al termine della cottura del riso aggiungere i gamberi (tenerne da parte alcuni per la decorazione) con il sugo che hanno rilasciato in cottura, mantecare con il burro e lasciar riposare qualche minuto. Posizionare un coppa-pasta rotondo nel piatto, distribuirvi un poâ di risotto, schiacciare leggermente. Decorare con i gamberi e con qualche filetto ricavato dalla buccia del bergamotto. Distribuire intorno al riso le verdure croccanti. Servire subito. Per il fumetto di pesce In una pentola mettere le teste ben lavate con il sedano, la carota, il pomodoro e lâaglio diviso in due, il vino bianco e lâacqua, salare leggermente e cuocere il fumetto di pesce per circa 20 minuti. #bergamotto - @imbergamottorc on Instagram

Made this beauty again! There is just something about how everything works out so well and balanced in this salad! A complete meal with a lots of nutrition! . Serves : 2 ______________________________________ . Ingredients: . For the salad: 1 cup cooked quinoa 4 chopped cocktail cucumbers 10 cherry tomatoes 1 avocado chopped . . Dressing: 1 tbsp extra virgin olive oil 1/2 tsp minced garlic 1 tsp minced ginger 2 tsp lemon juice 3 mint leaves 1 tbsp chopped parsley Salt and pepper to taste . . Garnish: 1 tbsp chopped walnuts 1/2 tbsp dried raisins . . Method: 1ď¸âŁAdd all the veggies (except avocado) into a large mixing bowl. 2ď¸âŁInto another small bowl, add the dressing ingredients and give it a good mix. 3ď¸âŁ Add the dressing and the avocado into the vegetables and quinoa. Give it a good mix until weâll combined. 4ď¸âŁMake sure not to over-mix.
