Como siempre arrancar con una autolisis de 1 hora, luego un buen amasado, lo ideal de a intervalos de 15 minutos, unas 3 veces si lo hacen a mano. Es fundamental lograr un buen desarrollo del gluten. Luego fermentar en bloque a 25°C promedio y hacer varios pliegues, para darle más tensión a la masa. También le viene bien un laminado antes de los pliegues si se animan. Después de unas 4-5 horas, formar las barras y llevarlas al frío para retardar la fermentación hasta el otro día. Finalmente hornear sobre piedra (la piedra pizzera va muy bien) precalentada a 220-240°C por 35 minutos con vapor inicial. - I made Ken Forkishs overnight countryloaf. Pleased how it turned out.

The humble humble bread. Not so humble in the process, consists of many intricate steps. This loaf consists of 80% red fife and 20% All purpose flour sourced from a local organic miller. We used Whey instead of water for the 85% hydration since we always have an abundance of leftover whey after making ricotta and yogurt in house. This helps add life to the dough and texture to the final product. This is a 36 hour loaf, It begins with autolysing overnight in the fridge. In the morning we add our 3 year old sourdough starter and salt. Over the next 3 hours we fold the dough every 30 minutes to add air and structure. It then ferments for the day and gets shaped in the evening. After retarding in the fridge overnight we score and bake the following morning. Served with a side of kimchi butter. - @elevatorbistro on Instagram

Is there anything better than the smell of freshly baked bread? 😍 Surprise someone you love this weekend with this 5 Minute Artisan Olive Oil Bread by @whatagirleats! 2 ¾ c lukewarm water 1 ½ T yeast (about 1 ½ packets) 1 ½ T kosher salt 1 T sugar ¼ c Olinda Olive Oil 6 ½ c unbleached all-purpose flour Mix the yeast, salt, sugar, and olive oil with the water into a big 5 or 6 qt. container. Mix in the flour, use a spoon or a food processor to incorporate all the flour. Cover (not airtight), and allow to rest at on your counter for around 2 hours. (it will rise and then collapse) Now, just stick it in the refrigerator,covered, until youre ready to use it. The dough will be pretty soft and sticky looking as this point. When youre ready to bake, grab a hunk of dough, (you determine how much, depending on what youre planning on making) add enough flour to the dough so that it s not sticky and form into a ball. I am making a basic boule or ball shaped loaf. Let it rest for about 45 min. on a pizza peel or baking sheet covered with cornmeal. The cornmeal helps the loaf slide easily off the peel and on to the stone in the oven. Dont worry if it hasnt risen as much as you think it should, it rises more in the oven. Heat pizza stone for 20 minute at 450*. Place an empty broiler tray on another shelf. Dust top of loaf with flour and slash a pattern into the top. Transfer loaf to pizza stone and add a cup of hot water to a pan on the rack below. This will make a lot of steam and give the loaf a crusty exterior. Bake for 30 minutes or until nicely browned and firm to the touch. It should sound hollow when you thump your finger on the bottom. - @olindachs on Instagram

Thought about my Dad quite a bit this week, so today I honor his memory with one of my fondest memories of time spent with him. At the bakery making bread in Puerto Rico. Hauling 100lb bags of flour at 14yrs old, and learning the craft. He was regarded as one of the most talented on the island and one of the few Maestro Panadero that knew everything about large brick oven baking. - With these times of social isolation, I really started picking up fermenting and especially sourdough baking again, finally time, I really missed it. I also had a liter of cream almost expiring so I made some amazing cultured butter with it. Stay strong everyone!
