There’s a reason why Parmigiano Reggiano is known as “the King of Cheeses”. Even the French, with their proud culture of amazing cheeses, admit it and serve Parmigiano Reggiano for Champagne tastings. It’s not only the world’s most complex cheese but also the healthiest. Professional Italian athletes insist on including it in their diets. There are not enough words (certainly not on Instagram) to do this cheese justice. You can argue that a whole cuisine, that of Emilia Romagna, was crafted around it ! Historically, the wheels of Parmigiano, weighing about 80 pounds each and selling for at least $1,000, have been and still are used as collateral for banks; these banks even have their own temperature controlled rooms for them ! Parmigiano belongs to a category of cheese called Grana, of which there are 2 types : Grana Padano and Parmigiano Reggiano. Grano means grain and refers to the wheat berry-sized curds that are formed during the fermentation and give the cheese its famous and characteristic granular and crunchy consistency. Though similar, Grana Padano is made from the previous evening’s skimmed milk, while Parmigiano Reggiano is a blend of the previous evening’s skimmed milk and the morning’s whole milk. Both are great but Parmigiano is regarded as the more “serious” cheese with more robust and aged flavors, while Grana is a more enjoyable one eaten out of hand or grated on Pastas. The wheels are cracked (not cut) open and, when serving the cheese, you break off pieces, instead of slicing. I love to party as much as anyone but when I take trips, it’s never a spring break type. It’s cultural and always a food pilgrimage. These experiences left indelible marks on me and it’s my Joy to share them with you. The list is endless of wines to match Parmigiano but start off with a Ripasso for red or a drier Riesling for white. Of course, you can drizzle the local Balsamic Vinegar on it, too. While the whole world turned to e-comm to survive Covid, Costco remained true to their roots. Costco’s ecommerce business barely budged from 5% to 8% of total revenue. The discount wholesaler pulled in a record $4B profit (on $163B revenue) for its full fiscal year. Costco’s membership-renewal rate hit 91% in its fiscal Q4. Did you know today is #NationalFoodBankDay? There’s no context in my feed over the past few months but I wanted to take a moment to at least recognize the occasion. I started volunteering with local food banks in April, thanks to one volunteer who had sought out new ways to serve when the pandemic shut everything else down (full disclosure: I’m shamelessly grabbing most of these photos from the album of @sabine7777, whose narrative captures capture both the action and feeling of any moment). It’s hard to innumerate completely the opportunities afforded by @unitedfoodbank and @stmarysfoodbank but it’s an honor to be able to help. The tasks are simple—usually assembling emergency food packages, placing the food into the recipients’ vehicles, or sorting donations from individuals and smaller organizations (a task I have yet to undertake, actually). But it’s important and, that there’s a direct benefit to those who need it makes the work all that much more fulfilling. On top of that, the volunteering has yielded a community comprised of old and new friends and community partners. The work is fun, characterized by shenanigans—funny face masks, super hero themes, goofy hats, potential awkward cameos on @goodmorningamerica, and a lot of inside jokes. I’m grateful that I’ve been able to help just as I’m grateful for all those who have lent a hand! I’ll try getting you all in the selection of photos and tagged but there sure are a lot of you! We said SAY NO MORE BABY, WE IN. The fridge is accessible 24/7, with bays that open daily to provide locals with fresh herbs (courtesy of @gardens_of_babylon) and pantry staples. The whole structure is wildly beautiful & intentionally made. We jigsawwed the letters out of MDO and hit them with some fancy pants @dayglocolor & @1shotpaints outlines. Briefly popped into Nams supplies during @letsgolive_sg live streaming. The shop is on 225 Smith Street, the food street with glass shelter. I walked past this street countless times and tbh, this is the first time I realised there was a Kim chua tiam there. For the uninitiated, these shops sell prayer offerings to be burnt (sent) to our dead relatives. They include paper money (hell money), paper shirts, paper beers, and I think the latest fad includes paper surgical masks. The store owners also showed us a life-sized paper wheelchair you can burn to your loved ones. My late grandma receives a standard packet each year, consisting of new clothes, new shoes, and money. When she passed away, we burned her a paper house during her funeral. It was the saddess ritual... My uncle said that when the items are completely burned and the flames dance in a spiral in its last seconds, it means the items have been received.
